CHOCOLATE BABKA RECIPE

3 3/4 cups (530g) all-purpose flour (, plus extra for dusting)
1/2 cup (100g) granulated sugar
1 tablespoon (10g) instant dry yeast
3 large eggs
1/2 cup (120 ml) water
1 teaspoon fine sea salt
2/3 cup (150g) unsalted butter (,cut into small cubes and softened to room temperature)
Neutral oil (sunflower, canola) for dressing
200 g (7 oz.) bittersweet chocolate
115 g (1 stick/4 oz.) unsalted butter
1/3 cup (80 ml) heavy cream
1/2 cup (60g) powdered sugar
1/3 cup (30g) unsweetened cocoa powder
pinch of salt
1/2 cup (120ml) water
1/2 cup (100g) granulated sugar

Steps:

  • Place flour, sugar, yeast, and salt in a standing mixer fitted with the dough hook and mix on low speed until combined. Add eggs and water, and mix on medium speed until dough comes together, 2-3 minutes. Add butter, adding a few cubes at a time, mixing on low-medium speed, until incorporated. Continue mixing for about 10 minutes on medium speed, until dough is completely smooth, elastic and shiny. It would look soft and might be sticky - that's ok. During mixing, you will need to scrape down the sides of the bowl.
  • With floured hands, transfer dough to a large bowl brushed with oil, cover with plastic wrap, and leave in the fridge for at least half a day or overnight. The dough may not look like it has risen much, that's ok. If placed a long time in the fridge the dough can become hard, that's ok, too; leave it at room temperature until it's easy to work with, 30-60 minutes.
  • Grease two loaf pans (I usually use 9×5 inch pans but a bit smaller or larger pans would work too) with oil and line the bottom and sides of each pan with parchment paper for easy release later on. Set aside.
  • In a medium saucepan place chocolate, butter, heavy cream, cocoa powder, sugar, and salt, and bring just to a boil over moderate heat. Reduce heat to low and mix until melted and completely smooth. Transfer to a bowl and set aside to cool. It would thicken and become spreadable as it cools. You can place it in the fridge for a short while until you get a spreadable consistency.
  • Divide dough in half. Roll out dough on a lightly floured surface and shape into a rectangle measuring 16x12 inches (40x30 cm). Position dough so that a long side is closest to you. Using an offset spatula, spread half of the chocolate mixture over the rectangle.
  • Use both hands to roll up the rectangle like a roulade, starting from the long side closest to you and ending at the other long end. Press to seal the dampened end onto the roulade, then use both hands to even out the roll into a perfect thick cigar. Rest the cigar on its seam.
  • Using a serrated knife, gently cut the roll in half lengthwise, starting at the top and finishing at the seam, essentially dividing the log into two long even halves, with the layers of dough and filling visible along the length of both halves. With the cut sides facing up, gently press together one end of each half, then lift the right half over the left half. Repeat this process, but this time lifting the left half over the right, to create a simple two-pronged plait. Gently squeeze together the other ends so that you are left with the two halves, intertwined, showing the filling on top. Carefully lift the cake into a loaf pan. Don't worry if there are gaps in the pan since the cake will rise and will eventually look fine, even if it looks messy at this point. Cover the pan loosely with plastic wrap and leave to rise at room temperature for 1 to 1½ hours until almost doubled in size. Repeat to make the second cake.
  • Preheat oven to 350°F/175°C, making sure to allow plenty of time for it to heat fully before the cakes have finished rising. Remove plastic wrap, and place cakes on middle rack of oven. Bake 30-35 minutes, until golden brown on top. If you have a thermometer, you are looking for an internal temperature of about 200ºF/93ºC degrees.
  • While the cakes are in the oven, make the syrup. In a small saucepan over medium heat, bring water and sugar to a boil. As soon as the sugar dissolves, remove from heat and set aside to cool. As soon as the cakes come out of the oven, brush the syrup over them. Use all of the syrup, even if it looks a lot. Let cakes cool until they are warm, then remove from pans and let cool completely before serving. Serve warm or at room temperature.
  • Babka will stay fresh for 24 hours in an airtight container at room temperature. Do not place it in the fridge. It also freezes well for up to 2 months. To thaw, leave at room temperature for 2 hours, or overnight in the fridge.

¼ cup butter
2 cups bread flour
2 cups all-purpose flour
2 teaspoons active dry yeast
¼ cup white sugar

1 egg

1 ½ teaspoons ground cinnamon
⅓ cup white sugar
¼ cup butter, chilled
¼ cup confectioners' sugar

Steps:

  • Warm the milk and melt 1/4 cup butter in a glass or ceramic bowl in the microwave for 30 seconds, or on the stovetop in a saucepan. Combine the bread flour, 2 cups all-purpose flour, yeast, and 1/4 cup sugar. Add the water, the milk-butter mixture, the egg, and the salt to the dry ingredients and mix well.
  • Use the dough hook in a stand mixer on low speed or knead the dough by hand until the dough is smooth and elastic, about 15 minutes. If the dough is too wet, add more bread flour, about 2 tablespoonfuls at a time (up to 8 tablespoons) to make a workable dough; too much flour can make the dough dry. Cover the dough with a damp cloth and let rise until double in size, about 1 to 1 1/2 hours.
  • Make the chocolate filling and the streusel while the dough is rising. For the filling, stir together the finely chopped chocolate, the cinnamon, and 1/4 cup sugar. Cut in 1/4 cup chilled butter with a fork. To make the streusel, combine the confectioners' sugar and 1/4 cup all-purpose flour; cut in 1/4 cup chilled butter until the mixture resembles coarse crumbs.
  • When the dough has doubled, punch the dough down and cut it into two equal pieces. Loosely shape each piece into a ball. Cover the dough with a damp cloth and let it rest for 10 minutes.
  • Roll out one portion on a lightly floured surface to form a 15x4-inch rectangle. Sprinkle with half the chocolate filling, roll up to form a long log, and seal the seam. Attach the ends to form a circle and place the ring, seam-side down, on a parchment-lined baking sheet. Repeat with the second piece of dough. Use a serrated knife or kitchen shears to cut slits at 1-inch intervals around the rings. Cover the rings with damp kitchen towels and let rise until doubled in size, about 30 minutes.
  • Preheat an oven to 350 degrees F (175 degrees C).
  • Brush the loaves with the egg wash, if desired. Sprinkle streusel on top. Bake the loaves for about 25 minutes, rotating the baking sheets to promote even browning, until the bread is a deep golden brown.

10 oz semi-sweet chocolate (bar or chocolate chips)
1/2 cup sugar

Steps:

  • Add all-purpose flour, sugar, active dry yeast, and salt to the bowl of a stand mixer. Stir to combine.
  • Stir in the eggs and water. Knead until the ingredients are well-incorporated.
  • Cut the butter into small cubes. Add one cube in at a time as you knead the dough until it's shiny and elastic.
  • Place the dough into a large, oiled bowl. Cover the bowl with plastic wrap and let it refrigerate overnight or at least 6 hours. Remove the dough from the fridge and let it sit at room temperature for at least 40 minutes.
  • When using a whole chocolate bar, chop the chocolate into pieces and set it aside. If using chocolate chips, keep them as is. In a heavy saucepan over medium-low, combine the butter, sugar, chocolate, and cocoa powder.
  • Cook and stir until the chocolate sauce becomes creamy. Set in the fridge so it cools and thickens into a spreadable consistency.
  • Butter two 9-inch bread pans. Line them with parchment paper.
  • Divide the dough into two pieces. Roll each piece into a rectangle.

  • Starting from the long side, roll the dough rectangle into a roll and pinch the end to seal it.

2-1/2 teaspoons quick-rise yeast

  • In a large bowl, mix 2 cups flour, sugar, yeast and salt. Cut in butter until crumbly. In a small saucepan, heat water to 120°-130°; stir into dry ingredients. Stir in eggs and yolk, orange zest and enough remaining flour to form a soft dough (dough will be sticky)., Turn dough onto a floured surface; knead until smooth and elastic, 6-8 minutes. 2 1/2 cups all-purpose flour, plus more if needed for dusting
2 tablespoons sugar
1 1/2 teaspoons instant dry yeast
3/4 teaspoon kosher salt
1/4 teaspoon ground cinnamon
1/2 cup whole milk, warm (105 to 110 degrees F)
2 large eggs
6 tablespoons unsalted butter, at room temperature and cut into tablespoon-size pieces
Neutral oil, for the bowl
Nonstick cooking spray, for the pan
Heavy cream, for brushing
3/4 cup sugar
6 tablespoons unsalted butter, at room temperature
1/3 cup unsweetened cocoa powder
1 teaspoon ground cinnamon
3/4 teaspoon chili powder or cayenne, or more to taste

Steps:

  • For the Mexican chocolate babka dough: In a stand mixer fitted with a dough hook, whisk together the flour, sugar, yeast, salt and cinnamon. Add the milk and eggs and mix with the dough hook to combine. With the mixer running, add the butter 1 tablespoon at a time until it is incorporated into the dough. The butter should be soft and pliable but not melty. When all the butter is incorporated, knead/mix, stopping to scrape the hook, sides and bottom of the bowl every few minutes, until the dough is smooth and slightly sticky, another 10 to 15 minutes. Transfer the dough to an oiled bowl, flip over to coat and cover with plastic wrap. Let rest and rise until it's doubled in size, 1 to 2 hours.
  • For the Mexican chocolate babka filling: In a medium bowl with a stiff rubber spatula, mix together the sugar, butter, cocoa powder, cinnamon, chili powder and salt until combined. Add the oil to smooth it out to a spreadable consistency. Taste and add more chili powder if you like more heat. Reserve at room temperature.
  • Grease a pullman loaf pan or standard loaf pan with cooking spray and line with parchment so that it comes up 2 of the sides and overhangs by an inch. On a clean countertop, roll the dough out into a 10-by-22-inch rectangle. The dough should be slightly sticky, but if it's too sticky to work with, you can dust with a little flour. Spread a thin even layer of filling all over the dough, reserving about 2 tablespoons of it. Roll the dough the long way into a tight log and cut it in half so you have 2 shorter logs. Spread the top of one of the logs with the reserved filling and then twist the logs together. Transfer to the prepared loaf pan, cover with plastic, and let rise until puffy and risen by about half, another 30 to 40 minutes.
  • Preheat the oven to 350 degrees F.
  • Gently brush the top of the babka with heavy cream. Bake until the top is deep golden brown, about 50 minutes.
  • For the simple syrup: Meanwhile, combine the sugar and 1/4 cup water in a saucepan and warm until the sugar is completely dissolved.
  • When the babka comes out of the oven, brush the simple syrup over the top. Cool for 15 minutes in the pan, then transfer to a rack to continue cooling. Of course, you should try it while it's still warm!! To store, wrap tightly in plastic wrap and keep at room temperature. This is best within a day or two--after that, use it for French toast!

120 mL warm milk (½ cup)
9 g active dry yeast (about 2 ½ tsp)
10 mL honey (about 2 tsp)
5 large eggs
10 mL vanilla
100 g granulated white sugar (½ cup)
575 g AP flour (about 4 ⅔ cups (measured by spoon and level method))
10 g sea salt (finely ground, about 1 ½ tsp)
226 g unsalted butter
170 g dark chocolate (about 1 cup of chocolate chips. Can be semisweet or bittersweet.)
100 g white or brown sugar (½ cup)
30 g cocoa powder (I use cacao barry, ¼ cup (measured by spoon and level method))
115 g unsalted butter (softened, ½ cup)
120 ml heavy cream (½ cup)
½ tsp sea salt (finely ground)
150 g white sugar (¾ cup)
150 mL water (½ cup + 2 tbsp)
1 tsp vanilla (optional)

Steps:

  • Make the dough the day before.
  • Measure out all the ingredients first.
  • Add the milk, yeast and honey into the mixing bowl, and gently whisk to combine. Set aside for 10 minutes to allow the yeast to activate.
  • Add the eggs, vanilla, sugar, flour and sea salt, and mix to form a scraggly dough.
  • With the dough hook attachment, knead the dough on speed 3 for about 5 minutes. The dough should start to look smooth.
  • Roughly divide the butter into 4 portions. Add the first portion of butter, in increments, after the first 5 minutes of kneading. Each butter portion should be mixed in for at least 2 minutes at a time.
  • Repeat with the other 3 portions of butter, kneading the dough for about 2 -3 minutes after each addition. Make sure to stop the mixer to scrape down the sides of the bowl (and the bottom if needed) between kneading as well. You will have incorporated all the butter in about 12 - 15 minutes of kneading time.
  • Once all the butter is incorporated, scrape down the sides of the bowl (and bottom if needed), and knead the dough for a further 5 - 15 minutes on speed 5 or 6. If you lower the speed, this can take longer, so it's best to knead until the dough has reached the correct consistency.
  • The dough will have been kneaded enough when it can be lifted fairly cleanly off the bottom of the bowl when picked up with the dough hook. It will be very soft and tacky to the touch, but shouldn't stick to your fingertips. Please note that the dough will still be very soft.
  • You can also do the window pane test with the dough to check if enough gluten has developed.
  • Flour your work surface lightly, and turn the dough out onto the floured surface. Lightly flour your hands to prevent the dough from sticking to your palms.
  • Fold in the edges of the dough towards the middle, and gently press them into the dough to form a smooth ball. Flip the dough over, and then with the heel of your palms, shape the dough to form a tight ball.
  • Carefully pick up the dough ball and place it back in the mixer bowl (or another large bowl).
  • Let it rise until it has almost doubled in size, in a warm place (72°F), for about 1 hour. It can take longer if your kitchen is colder.
  • Turn the dough out onto a lightly floured surface, and press down gently to deflate the dough with your hands. Fold in the edges again as before towards the middle and press them in. Carefully flip the dough over (seam side down now), and tighten the ball of dough to get a smooth taut surface. Transfer the dough into the mixer bowl again.
  • Cover and let it chill in the fridge for at least 8 hours, or up to 24 hours. The dough WILL RISE in the fridge, so make sure the bowl is large enough to contain the dough properly.
  • The following day, the dough is ready to be used. You will be using the dough while it's chilled, so do not let it come to room temperature before working with it.
  • This chocolate filling can be made the same day you make the dough, and then chilled overnight. OR it can also be made the day you assemble the babka, but make sure you give the filling enough time to cool down before rolling out the chilled dough. If you chill the filling overnight, then heat it in the microwave in small increments (10 - 30 sec intervals) until you have a thick paste that is spreadable.
  • In a saucepan, place the cream, cocoa powder, sugar and salt.
  • Heat over medium / medium high heat, while whisking. Whisk to dissolve the cocoa powder and sugar, until the cream just starts to simmer.
  • Remove from the heat, and add the butter and chocolate. Whisk very well until the butter and chocolate have dissolved.
  • Place the chocolate mixture in a shallow container and let it cool down until it's thick and spreadable. You can also let it cool in the fridge, but check on it to make sure the chocolate has not hardened.
  • Butter and flour TWO 9 x 4 x 4 inch loaf pans. I prefer to butter and line them with parchment paper, but you can do whichever is easier for you. Set aside.
  • When the filling is at the correct consistency, remove the chilled dough from the fridge.
  • Slightly flatten the dough to remove excess air in the dough.
  • Measure the weight of the dough. Evenly divide the dough into TWO portions by weight (to make 2 loaves).
  • Return one of the portions back into the bowl, cover, and let it chill in the fridge until you've assembled the first portion.
  • Place the first portion of the dough on a floured, smooth surface.
  • Roll out the dough until it's a rectangle that is about 10 x 15 inches.
  • Spread a layer of the chocolate filling (about ⅓ - ½ of the filling) over the surface of the dough. Make sure to leave a 1 inch border along one of the long edges.
  • Roll the dough along the 10 inch side, towards the 1 inch border (so that you end up with a 14+ inch long bread roll).
  • Once rolled up, pinch the end into the dough roll to create a seal (see pictures in the post).
  • At this stage, the dough can be very soft and sticky and hard to manage. So carefully place the bread roll on a parchment paper-lined baking tray and cover with plastic wrap and freeze for about 20 minutes until the dough is firm. While the dough is firming up in the freezer, you can repeat the whole process with the second dough portion.
  • When the dough is firm enough to handle again, remove it from the freezer.
  • Trim the two ends of the roll (optional), then slice the roll in half lengthwise.
  • Twist the two halves to form a twisted braid (see pictures in the post).
  • Carefully place the twisted loaf in the prepared loaf pan, making sure to tuck in the ends.
  • Cover the loaf pan with plastic wrap, and let it proof at room temperature for about 1 hour or until it's about doubled in size. The time for proofing will depend on the ambient temperature in your kitchen. In a cooler place, it could take as long as 3 hours to proof.
  • Repeat the cutting and twisting of the babka loaf with the second portion of dough, and let it proof in the second loaf pan.
  • While the chocolate babka is proofing, preheat the oven to 325°F / 163°C (conventional oven).
  • When the babka has proofed, bake in the preheated oven for about 50 minutes. If the surface is caramelizing too fast, you can tent a foil on the surface to prevent further browning.
  • The internal temperature of the dough should reach about 190 - 200°F when it's done baking.
  • Remove the pan from the oven, and carefully use a skewer to poke several holes through the loaf from the top.
  • While hot, generously brush the babka with the sugar syrup (recipe below) to glaze the top and to allow some of the syrup to be absorbed by the babka as well (optional).
  • Let the babka cool down in the loaf pan. Once at room temperature, or only slightly warm, remove the babka loaf from the pan.
  • Slice and serve while warm or at room temperature.
  • Make the sugar syrup while proofing the loaf, or while baking the babka loaf. The syrup can be used warm or hot.
  • Add all the ingredients in a saucepan and heat over medium high heat.
  • Stir to dissolve the sugar and bring it to a boil.
  • Lower the heat to simmer the sugar syrup for about 5 minutes. Set aside until you're ready to use it.

1/2 cup whole milk, at room temperature
1/3 cup sugar, plus a pinch

Steps:

  • Make the dough: Sprinkle the yeast over the milk in a liquid measuring cup; add a pinch of sugar and set aside until bubbly, about 7 minutes. Combine the flour, the remaining 1/3 cup sugar, the eggs, yeast mixture, salt, vanilla, nutmeg and lemon zest in a large bowl. Stir with a wooden spoon to combine. Turn the dough out onto a work surface and knead until soft and smooth, about 5 minutes. Knead in the butter in three additions, dusting the dough with flour if it's too sticky. Transfer the dough to a large bowl; cover with plastic wrap and let rise at room temperature, about 1 1/2 hours. Punch down the dough, re-cover with plastic wrap and let rise in the fridge overnight.
  • Make the filling: Heat the sugar, heavy cream and salt in a saucepan until scalding. Pour over the bittersweet chocolate chips, butter and vanilla in a bowl. Whisk until smooth and shiny. Let cool to room temperature.
  • Make the topping: Whisk the flour, sugar, cocoa powder and salt in a separate bowl; work in the butter with your fingers until the mixture is sandy and chunky. Stir in the mini chocolate chips; set the topping aside.
  • Form the loaves: Cut the dough in half with a bench scraper or chef's knife. Using a rolling pin, roll each half into a 12-by-16-inch rectangle. Using an offset spatula, spread the filling on both dough rectangles, all the way to the edges. Starting from a long side, tightly roll each rectangle into a log. Wrap each log in plastic wrap and refrigerate 15 minutes. Unwrap the logs; cut each in half lengthwise with a bench scraper or chef's knife. Twist the halves together a few times, starting from the middle. Coat two 9-by-5-inch loaf pans with cooking spray and line with parchment, then spray the parchment. Place a dough twist snugly in each pan. Cover with plastic wrap and let rise 1 1/2 hours.
  • Finish and bake the babka: Preheat the oven to 350 degrees F. Brush each loaf with butter and sprinkle with the topping. Bake until browned, about 45 minutes. Meanwhile, make some simple syrup: Combine the sugar and water in a saucepan; simmer, stirring, until the sugar dissolves. Let cool. Pull the loaves out of the oven and immediately poke a bunch of holes in each with a wooden skewer. Pour 1 1/4 cups simple syrup evenly over the loaves.
  • Let sit 10 minutes, then remove the babka from the pans, remove the parchment and let cool completely on a rack.

This is a fabulous (Jewish-style) babka recipe with a sweet, slight chewy surrounding loads of chocolate. This tastes very rich and decadent; you won't miss the many eggs and loads of oil/butter in most babka recipes. It is delicious warm or room temperature. You can also make 2 mini loaves, bake for 20-25 minutes at 350 F. You can also add some chopped walnuts to the filling. You can also make a cinnamon version by substituting about 2 tbsp. cinnamon for the cocoa, and cinnamon chips for the chocolate. Dough requires at least 2 hours and 15 minutes rising time. Baking a chocolate babka is no casual undertaking. The Eastern European yeast-risen coffee cake has 14 steps and takes all day to make. But the results are worth every sugarcoated second - with a moist, deeply flavored brioche-like cake wrapped around a dark fudge filling, then topped with cocoa streusel crumbs. If you want to save yourself a little work and love Nutella, you can substitute 1 1/2 cup (420 grams) of it for the homemade fudge filling. Also note that you can make this over a few days instead of all at once. Babka freezes well for up to 3 months, so if you need only one loaf now, freeze the other for later.

  • Prepare the dough: In a small saucepan or a bowl in the microwave, warm the milk until it's lukewarm but not hot (about 110 degrees). Add yeast and a pinch of sugar and let sit for 5 to 10 minutes, until slightly foamy.
  • In an electric mixer fitted with the dough hook, or in a food processor, mix together flour, 1/3 cup sugar, the salt, the vanilla, the lemon zest (if using) and the nutmeg. (If you don't have a mixer or processor, use a large bowl and a wooden spoon.) Beat or process in the yeast mixture and eggs until the dough comes together in a soft mass, about 2 minutes. If the dough sticks to the side of the bowl and doesn't come together, add a tablespoon more flour at a time until it does, beating very well in between additions.
  • Add half the butter and beat or pulse until the dough is smooth and elastic, 3 to 5 minutes, scraping down the sides of the bowl with a spatula as needed. Beat in the rest of the butter and continue to beat or pulse until the dough is smooth and stretchy, another 5 to 7 minutes. Again, if the dough sticks to the sides of the bowl, add additional flour, 1 tablespoon at a time.
  • Butter a clean bowl, form the dough into a ball and roll it around in the bowl so all sides are buttered. Cover the bowl with a clean towel and let it rise in a warm, draft-free place (inside of a turned-off oven with the oven light on is good) until it puffs and rises, about 1 to 2 hours. It may not double in bulk but it should rise.
  • Press the dough down with your hands, re-cover the bowl and refrigerate overnight (or, in a pinch, for at least 4 hours, but the flavor won't be as developed).
  • Prepare the filling: In a medium saucepan over medium heat, combine sugar, cream and salt. Simmer, stirring occasionally, until sugar completely dissolves, about 5 minutes. Scrape mixture into a bowl. Stir in chocolate, butter and vanilla until smooth. Let cool to room temperature. Filling can be made up to a week ahead and stored, covered, in the fridge. Let come to room temperature before using.
  • Prepare the streusel: In a bowl, stir together flour, sugar, cocoa powder and salt. Stir in melted butter until it is evenly distributed and forms large, moist crumbs. Stir in the chocolate chips. Streusel can be prepared up to 3 days ahead and stored, covered, in the fridge.
  • Prepare the syrup: In a small saucepan, combine sugar and 2/3 cup/158 milliliters water. Bring to a simmer over medium heat, then simmer for 2 minutes, stirring occasionally until the sugar dissolves.
  • Butter two 9-inch loaf pans, then line with parchment paper, leaving 2 inches of paper hanging over on the sides to use as handles later.
  • Remove dough from refrigerator and divide in half. On a floured surface, roll one piece into a 9-by-17-inch rectangle. Spread with half the filling (there's no need to leave a border). Starting with a long side, roll into a tight coil. Transfer the coil onto a dish towel or piece of plastic wrap and stick it in the freezer for 10 minutes. Repeat with the other piece of dough.
  • Slice one of the dough coils in half lengthwise to expose the filling. Twist the halves together as if you were braiding them, then fold the braid in half so it's about 9 inches long. Place into a prepared pan, letting it curl around itself if it's a little too long for the pan. Cover loosely with a clean kitchen towel and let rise in a warm place for 1 to 1 1/2 hours, until puffy (it won't quite double). Alternatively, you can cover the pans with plastic wrap and let them rise in the refrigerator overnight; bring them back to room temperature for an hour before baking.
  • When you're ready to bake, heat the oven to 350 degrees. Use your fingers to clump streusel together and scatter all over the tops of the cakes. Transfer to oven and bake until a tester goes into the cakes without any rubbery resistance and comes out clean, 40 to 50 minutes. The cakes will also sound hollow if you unmold them and tap on the bottom. An instant-read thermometer will read between 185 and 210 degrees.
  • As soon as the cakes come out of the oven, use a skewer or paring knife to pierce them all over going all the way to the bottom of the cakes, and then pour the syrup on top of the cakes, making sure to use half the syrup for each cake.
  • Transfer to a wire rack to cool completely before serving.

Steps:

  • Combine the yeast and warm milk and let sit until foamy, about 5 minutes.
  • In large mixing bowl, add the egg, egg yolks, vanilla, sugar, and honey and whisk to combine.
  • Add in the milk and yeast mixture and whisk until fully incorporated.
  • Gradually add in the flour and mix until fully incorporated.
  • Gradually add in the butter and mix until fully incorporated.
  • Cover with a towel and let rest for 30 minutes.
  • Bring out the dough onto floured work surface and knead until smooth.
  • Divide the dough into two equal parts and place in bowls and cover each with plastic wrap. Let the dough sit at room temperature for at least two hours, or when it has doubled in size.
  • Preheat oven to 375˚F (190˚C).
  • For the chocolate sauce, combine bittersweet chocolate, butter, sugar, cocoa powder, cinnamon, espresso powder, and turbinado sugar in a medium sized mixing bowl and microwave for 1-2 minutes. Stir to combine and set aside.
  • Once the dough has doubled in size, transfer to a floured work surface and roll both pieces of dough into a rectangle roughly 10x15-inches.
  • Cover the dough with half of the chocolate sauce leaving an ½ inch - 1 inch of room on all sides.
  • Gently roll the dough up and repeat with second piece of dough and remaining chocolate sauce.
  • Using a bench scraper or a knife, carefully cut each log vertically in half making sure the seam is side down.
  • Lay one piece of dough horizontally and lay another piece over it vertically so you have a rough 'plus sign'.
  • Lay another piece horizontally over the vertical piece and above the other horizontal piece.
  • Lay the final piece vertically on the right of the other vertical piece having it go over the top horizontal piece but weaving it under the lower horizontal piece.
  • Starting with the bottom vertical piece on the right side, bring it to the left layering it over the other vertical lower piece.
  • Follow this method around the dough clockwise.
  • Once returned to the bottom lower vertical pieces. Take the original piece you crossed over (the lower left vertical piece) and cross that over to the right layering it over the last piece you used. Continue this counterclockwise until back at the bottom or you are unable to layer the dough anymore.
  • Tuck in the excess pieces of dough under the bread.
  • Transfer the bread into a parchment paper-lined baking sheet and brush with egg wash.
  • Bake for 35-45 minutes, until lightly browned and cooked through.

Babka is a Jewish yeasted cake that originated in eastern Europe. The dough is twisted with a chocolate, cinnamon, nut, or fruit filling into a beautiful braid. It has become one of the most popular desserts in the US and the rest of the world over the last two decades, with many filling and topping variations. This version from Chef Shimi Aaron features a chocolate hazelnut filling and a colorful garnish of orange peel, dried rose petals, and chopped pistachios.

1 packet active dry yeast
½ cup granulated sugar
1 teaspoon kosher salt
1 ¼ cups water, between 95-100°F (35-38°C), plus more as needed
1 teaspoon vanilla extract
1 large egg
¼ cup vegetable oil
vegetable oil spray, for greasing
1 cup unsalted hazelnuts, roasted and finely chopped
⅔ cup unsalted butter, room temperature
1 ½ cups dark chocolate, chopped
½ cup cocoa powder
½ cup powdered sugar
2 cups water
1 cup granulated sugar
1 whole cinnamon stick
2 orange peels, sliced into strips
1 whole star anise
1 large egg
1 tablespoon water
dried rose petal, optional
pistachio, optional, chopped

Steps:

  • Make the dough: Add the flour, yeast, sugar, and salt to the bowl of a stand mixer fitted with the dough hook attachment and mix on low speed. With the mixer running, add the water, vanilla, egg, and vegetable oil. Increase the mixer speed to medium and continue mixing until the dough is smooth and pulls away cleanly from the sides of the bowl, 7-10 minutes. If the dough is too dry, add more water, about 1 tablespoon at a time, if necessary. If it is too wet, add more flour, 1 tablespoon at a time.
  • Transfer the dough to a clean surface and knead by hand until the dough is completely smooth, elastic, and shiny, 2-3 minutes. Shape into a ball. Grease a large bowl with vegetable oil spray, then transfer the dough to the bowl, cover with plastic wrap, and let rise in a warm place for 45-60 minutes, until doubled in size.
  • Make the filling: Preheat the oven to 300°F (150°C). Line a small baking sheet with parchment paper.
  • Spread the hazelnuts in an even layer on the prepared baking sheet. Roast for about 8 minutes, until golden brown and fragrant. Let cool for 5 minutes then transfer the hazelnuts to a food processor and process until finely chopped, but still with some texture.
  • Melt the butter in a medium saucepan over medium heat. Add the dark chocolate and cook, whisking frequently, until melted and evenly combined. Whisk in the cocoa powder and powdered sugar until completely smooth. The ganache should be spreadable.
  • Make the syrup: Use a paring knife to remove the peel from the orange, then thinly slice the peel.
  • Bring the water to a boil in a medium saucepan over medium-high heat. Add the sugar and stir until dissolved, about 3 minutes. Add the cinnamon and star anise and continue cooking for about 1 minute, then add the orange peel and stir to combine. Reduce the heat to low and cook for 20-25 minutes, until the syrup thickens and the orange peel is tender. Remove the pot from the heat and cover to keep warm.
  • Assemble the babka: Punch down the dough, then transfer to a clean surface and slice in half. On a lightly floured surface, roll out one portion of dough into a 21 x 15-inch (53 x 30-cm) rectangle.
  • Using a silicone spatula, spread half of the chocolate ganache evenly over the dough, all the way to the edges. Sprinkle half of the ground hazelnuts on top. Starting from a long end, roll the dough up into a tight log. Repeat with the remaining dough, then let the logs rest for 15 minutes.
  • Preheat the oven to 365°F (185°C). Line 2 9-inch round cake pans with parchment paper.
  • Using a serrated knife, slice a log in half lengthwise. Cross one side of the log over the other in an X shape with the cut sides facing up. Starting from the center, braid the two halves together to the bottom and top. You can leave as is, or bring the ends together to form a wreath. Transfer to a prepared pan. Repeat with the remaining babka.
  • Make the egg wash: In a small bowl, whisk together the egg and water until smooth.
  • Brush the egg wash lightly over the babka wreaths.
  • Bake the babkas for 25-30 minutes, until golden brown.
  • Meanwhile, heat the syrup to low heat until hot.
  • Remove the babkas from the oven and slowly ladle the hot syrup on top, letting it soak into the babkas. Garnish with dried rose petals and pistachios, if desired.
  • Transfer the babkas to a wire rack and let cool for about 30 minutes.
  • To serve, gently slice the babkas with a serrated bread knife.
