1 cup Gold Medal™ all-purpose flour
1 cup Gold Medal™ whole wheat flour
1/4 cup ground flaxseeds or wheat germ
1/4 cup unsweetened cocoa powder
2 teaspoons baking powder
1/2 teaspoon salt
1/2 cup refrigerated or frozen egg product, thawed
3/4 cup sugar
1/2 cup canola oil
1/3 cup fat-free milk
1 cup peeled (if desired) and shredded zucchini
1 medium-size ripe banana, mashed (1/2 cup)
1/2 cup miniature semisweet chocolate pieces

Steps:

  • Preheat oven to 350°F. Lightly coat a 13x9x2-inch baking pan with nonstick cooking spray; set aside. In a large bowl, combine all-purpose flour, whole wheat flour, flaxseeds or wheat germ, cocoa powder, baking powder, and salt. Make a well in center of flour mixture; set aside.
  • In a medium bowl, whisk together egg product, sugar, oil, and milk until well mixed. Stir in zucchini and banana. Add zucchini mixture all at once to flour mixture. Stir just until moistened. Fold in chocolate pieces. Pour batter into prepared pan, spreading evenly.
  • Bake about 25 minutes or until top springs back when lightly touched. Cool completely on a wire rack. Cut into squares.

1 cup dates, pitted and chopped
1 cup boiling water
1 cup white sugar
1 cup shortening
2 eggs
1 ⅓ cups all-purpose flour
1 teaspoon salt
1 teaspoon baking soda
2 tablespoons unsweetened cocoa powder
1 teaspoon vanilla extract
1 cup semisweet chocolate chips
1 cup chopped walnuts

Steps:

  • Preheat oven to 350 degrees F (180 degrees C).
  • Cook chopped dates and water over low heat until soft. Set aside.
  • Cream together sugar and shortening. Add eggs and beat well. Stir in flour, salt, baking soda, cocoa and vanilla and mix well. Stir in date mixture.
  • Pour in 9 x 11 inch pan and top with chocolate chips and chopped nuts. Bake until toothpick comes out clean. (10 - 15 minutes)

2 cups all-purpose flour

1 teaspoon baking soda

2 large eggs, room temperature, beaten
1 teaspoon vanilla extract
3 to 4 drops red food coloring, optional
FROSTING:
1/2 cup butter, cubed
1/4 cup baking cocoa
1/4 cup buttermilk
3-3/4 cups confectioners' sugar
1 teaspoon vanilla extract
Dash salt
3/4 cup chopped almonds, optional

Steps:

  • In a large saucepan, bring butter, cocoa and water just to a boil. Cool. , Meanwhile, preheat oven to 350°. In a large bowl, combine the flour, sugar, baking soda and salt. Add cocoa mixture and buttermilk; mix well. Beat in the eggs, vanilla and, if desired, food coloring. Pour into a greased and floured 15x10x1-in. baking pan. , Bake until set, 20 minutes. 1 (14 ounce) can sweetened condensed milk
1 cup coconut
2 cups powdered sugar
2 tablespoons cocoa
4 tablespoons half-and-half
2 tablespoons butter
1 teaspoon vanilla

Steps:

  • Cream butter and sugar; add eggs and vanilla.
  • Mix flour, cocoa, and nuts.
  • Add to sugar mixture.
  • Spread into 9x13 pan.
  • Bake at 350* for 30 minutes.
  • Combine condensed milk and coconut.
  • Spread over cake, bake 15 minutes more.
  • Mix frosting ingredients until smooth.
  • Spread over the coconut while still warm.
  • Chill.
  • Cut into bars.
