BERRY COBBLER WITH COCONUT WALNUT STREUSEL

Berry Cobbler with a delicious blend of fresh blackberries, raspberries, blueberries, boysenberries, and strawberries. Topped with a coconut walnut streusel!

Number Of Ingredients 13

Filling
4 cups mixed berries (i.e. blackberries, raspberries, blueberries, boysenberries, strawberries), fresh or frozen
1/4 cup plus 1 Tbsp sugar
2 Tbsp instant tapioca
1 Tbsp fresh lemon juice
Topping
1/2 cup flour
1/2 cup shredded coconut
1/4 cup sugar
1/4 cup chopped walnuts
1/4 teaspoon baking powder
Pinch of salt
4 Tbsp (1/4 cup) cold, unsalted butter, cut into cubes

Steps:

  • Preheat oven to 375°F. Butter a 9x9 inch baking dish.
  • In a large bowl, mix together the filling ingredients - berries, sugar, tapioca, and lemon juice. Pour into the baking dish.
  • In a medium sized bowl, stir together the flour, coconut, sugar, walnuts, baking powder and salt from the topping ingredients. Use your fingers to mix in the cubes of butter. Rub the butter into the other ingredients until the mixture looks like coarse crumbs.
  • Sprinkle the topping over the filling. Bake for 35-40 minutes, until the topping is golden brown and crispy, and the filling is bubbling.
  • Let cool for at least an hour. Serve with vanilla ice cream or whipped cream. Recipe adapted from Raley's grocery store magazine.

Oh the beauty and taste of fresh berries growing in my yard. How I love to serve these neat recipes. Add the cruchiness of delicious nuts and you have a fantastic ending to a great meal. Warm Cobbler with a big dip of vanilla ice cream and your guest will never forget. I am enjoying watching my berries grow. I have big plans for them on a warm Summer Day.

- filling:
4 cup(s) mixed berries ( black berries, raspberries, blue berries, strawberries)
1/4 cup(s) + 1 tbsp sugar
2 tablespoon(s) instant tapioca
1 tablespoon(s) fresh lemon juice
TOPPING:
1/2 cup(s) flour
1/2 cup(s) shredded coconut
1/4 teaspoon(s) baking powder
- pinch of salt
4 tablespoon(s) (1/4 cup) cold, unsalted butter cut into cubes

Steps:

  • Preheat oven to 375 degrees. Butter a 9x9 inch Oven Proof Pan.
  • In a large bowl mix all the FILLING ingredients (berries, sugar,tapicoa, fresh lemon juice). Pour into baking dish.
  • In medium size mixing bowl, stir together, flour, coconut, sugar, walnuts, baking powder, and salt. Use your fingers to mix in the cold, butter cubes. Rub butter with other ingredients until mixture looks like coarse bread crumbs.
  • Sprinkle TOPPING over FILLING. Bake in preheated 375 degree oven for 35-40 minutes until topping is golden brown and crisp and filling is bubbling.
  • Cool and serve with a scoop of vanilla ice cream. NOTE: If you choose you can pulse coconut in food processor before adding it to the other topping ingredients.

¼ teaspoon salt
¼ cup milk
¼ stick butter
¾ cup unsweetened flaked coconut
½ cup quick oats
½ cup old-fashioned oats
½ cup chopped walnuts
¼ cup smooth peanut butter
½ teaspoon vanilla extract

Steps:

  • Mix together sugar, cocoa powder, and salt in a saucepan. Stir in milk and butter. Turn heat to medium and bring to a boil. Cook for 1 1/2 minutes. Remove from heat.
  • Stir the hot mixture continuously while adding flaked coconut, quick oats, old-fashioned oats, walnuts, peanut butter, and vanilla extract. Mix well. Spoon onto waxed paper-lined cookie sheets and freeze for 3 hours.
