Here's what you need: coconut milk, blueberry, strawberry, raspberry, honey

1 can coconut milk
1 cup blueberry
½ cup strawberry
½ cup raspberry
3 tablespoons honey

Steps:

  • Place the coconut milk, blueberries, strawberries, raspberries, and honey in a blender and blend until the mixture is smooth.
  • Pour the coconut mixture into popsicle molds filled almost to the brim.
  • Freeze the popsicles for at least 4 hours.
  • Unmold the popsicles.
  • Enjoy!

2/3 cup thinly sliced ripe strawberries
2/3 cup ripe blueberries
2/3 cup ripe blackberries
1/3 cup plus 1 tablespoon natural cane sugar
1/2 teaspoon ground cardamom
1 13.5-ounce can full-fat coconut milk
Special equipment:
Ten 3-ounce ice pop molds and sticks

Steps:

  • Combine strawberries, blueberries, and blackberries with sugar and cardamom in a small saucepan. Cook over low heat, stirring regularly, for 5-7 minutes, until berries are soft but not falling apart. Remove from heat and stir in coconut milk. Carefully pour warm berry mixture into a pitcher. Pour mix into molds, helping some of the berries along with a spoon so they're evenly distributed. Freeze at least 4 hours (insert sticks when partially frozen) and up to 1 month.

  • Whisk together the coconut milk, vanilla and 2 Tbsp of the honey, until smooth and creamy. Set aside.
  • Blend together the berries and remaining honey, until smooth and combined. Add more honey, to taste, as necessary.
  • For a creamy pop: Stir together the coconut milk and berry puree, and divide evenly between the popsicle molds. Freeze for 30 minutes, then insert the popsicle sticks, and continue freezing for 4 hours, or until firm.
  • For a layered pop: Divide the coconut milk equally between the popsicle molds. Place in the freezer for 10 minutes, or so, then top with the berry puree. Freeze again for 30 minutes, then insert the popsicle sticks and continue freezing for 4 hours, or until firm.
