- Dissolve cornstarch in water in heavy saucepan; stir in sweetened condensed milk and egg yolks. Cook and stir until thickened and bubbly. Remove from heat; add butter and vanilla. Cool slightly. Fold in coconut.

- In a small bowl, mash the banana very well, until it is the consistency of a think liquid and there are no chunks left. I used my hand mixer on the slowest setting to help with this process,
- In a separate bowl, whip the cream, sugar and vanilla until stiff peaks form. Fold in the mashed bananas to the whipped cream.
- Spoon or pipe over anything!

- Chill your coconut cream or coconut milk in the refrigerator overnight (see notes for top brands!), being sure not to shake or tip the can to encourage separation of the cream and liquid. See notes for more insight / troubleshooting.
- The next day, chill a large mixing bowl 10 minutes before whipping.
- Remove the coconut cream or milk from the fridge without tipping or shaking and remove the lid. Scrape out the top, thickened cream and leave the liquid behind (reserve for use in smoothies).
- Note: if your coconut milk didn't harden, you probably just got a dud can without the right fat content. In that case, you can try to salvage it with a bit of tapioca flour - 1 to 4 Tbsp (amount as original recipe is written // adjust if altering batch size)- during the whipping process. That has worked for me several times.
- Place hardened cream in your chilled mixing bowl. Beat for 30 seconds with a mixer until creamy. Then add vanilla (optional) and powdered sugar (or stevia) and mix until creamy and smooth - about 1 minute. Avoid overwhipping because it can cause separation. Taste and adjust sweetness as needed.
- Use immediately or refrigerate - it will harden and set in the fridge the longer it's chilled. Will keep for up to 1 - 2 weeks!
- Coconut whipped cream is perfect for topping desserts like pie, hot cocoa and ice cream. It's also ideal for french toast, pie fillings, mousse, and even no-churn ice cream!

- For the pudding, heat coconut milk and whole milk in a saucepan over medium until it steams.
- Whisk together 1 c cream of coconut, cornstarch, egg yolks, and salt until smooth. While whisking, gradually pour in half of the hot milk mixture. Pour egg-milk mixture back into pan and cook over medium heat until thick. Boil pudding 1 minute more, whisking constantly, to eliminate any starchy taste.
- Off heat, stir in butter and vanilla until butter melts. Transfer pudding to a bowl and cover with plastic wrap, pressing it on the surface. Chill pudding until cool.
- To assemble, layer banana slices on bottom of a 5 qt trifle dish (or glass bowl), Top banana with a third of the pudding and a layer of wafers. Repeat layering two times, top with final layer of bananas, cover and chill until cold.
- For the whipped cream, beat heavy cream and 1/2 c cream of coconut with a mixer on medium speed until soft peaks form. Top dessert with whipped cream and garnish with toasted coconut.

- Combine Sweetened Condensed Milk and water in large bowl.
- Add pudding mix and coconut;mix well.
- Fold in One and a Half cups of the whipped topping.
- Arrange single layer of the bananas on bottom of pie shell.
- Pour filling into crust.
- Top with remaining whipped topping.
- Refrigerate for four hours or until very set.
- Top with either tinted or toasted coconut.
- Note: To make two pies, divide filling between 2 prebaked 9-inch regular pie shells.
- Top with remaining whipped topping.
- Another Note: Please plan ahead as this pie has to chill.

- Just a heads up. If you are making the coconut milk whipped cream you need to refrigerate the coconut milk over night.
- Begin by making the waffles. Combine the dry ingredients in a small bowl. In a sperate medium size bowl whisk together the egg coconut milk and vanilla. Whisk in the mashed banana. Add the wet ingredients to the dry and stir until just combined. If the batter seems too thick add a little more coconut milk to thin it a bit.
- Preheat waffle iron. When ready scoop about 1/4 (or less if you have a small waffle iron) of the batter (you will need to spread the batter out using the back of a spoon) into the hot, greased waffle maker and cook to your preference.
- To make the coconut milk whipped cream. Flip your cold can of coconut milk upside down and open it. There should be around 1/2 cup of coconut water at the top. Pour this into a container and save for another use. Scoop out the coconut cream and place in a bowl. Whip the cream for 3 to 5 minutes, until soft peaks form. Beat in the powdered sugar and vanilla. Place in the fridge while you make the french toast.

- In a medium sized saucepan over medium high heat, heat the almond/coconut milk until bubbles start to form around the edge. In a medium sized bowl whisk together the sugar, cornstarch, salt, and egg until well combined. Slowly pour the hot milk into the dry mixture whisking the entire time.
