4 skinless cod fillets, (6 to 8 ounces each)
3 tablespoons rice vinegar
2 tablespoons soy sauce
2 tablespoons finely grated, peeled fresh ginger
Coarse salt and ground pepper
6 scallions, green parts cut into 3-inch lengths

Steps:

  • In a large skillet, combine 3 tablespoons rice vinegar, 2 tablespoons soy sauce, and 2 tablespoons finely grated peeled fresh ginger.
  • Season both sides of 4 skinless cod fillets (6 to 8 ounces each) with coarse salt and ground pepper; place in skillet with vinegar mixture. Bring to a boil; reduce heat to a gentle simmer. Cover; cook until fish is almost opaque throughout, 6 to 8 minutes.
  • Meanwhile, cut green parts of 6 scallions into 3-inch lengths; thinly slice lengthwise. Scatter over fish; cook (covered) until fish is opaque throughout and scallions are just wilted, about 2 minutes more.

2 cups salt cod
2 large baking potatoes
1 egg
2 teaspoons ground ginger
1/2 teaspoon black pepper
1/4 teaspoon salt
1 tablespoon butter
1 cup toasted bread crumbs, lightly seasoned with additional salt and pepper

Steps:

  • Soak the salt cod in three changes of cold water for one hour. Remove skin and use a sharp knife to chop the fish. Rinse again, drain, pat dry and set the fish aside.
  • Peel the potatoes and boil them until tender, about 25 minutes. Remove, drain and cool under cold running water until the potatoes are cool enough to handle. Using a ricer or a fork, gently flake the potatoes.
  • Place the potatoes, fish, egg, ginger and black pepper in a bowl and use a fork to thoroughly combine the ingredients. Add salt to taste and set aside.
  • Melt half the butter in a large nonstick skillet over medium-high heat. Form the mixture into 8 4-inch patties and press them into the bread crumbs, completely coating each patty. Fry over medium heat until golden on each side, about 4 minutes per side. Remove from pan, drain well on paper towels and serve.

1 baking potato (about 1/2 pound)
Salt and freshly ground black pepper
1 1/2 pounds cod or other mild, delicate white-fleshed fish fillet
1 tablespoon minced peeled fresh ginger
1/2 cup minced fresh cilantro, plus more for garnish
1 small fresh or dried hot red chile, minced, or 1/4 teaspoon cayenne, or to taste
2 teaspoons peanut or vegetable oil
Lime wedges for serving

Steps:

  • Boil the potato in salted water to cover until it is tender but not mushy, 30 to 40 minutes.
  • Meanwhile, put the fish in a skillet that can later be covered. Add water to cover, salt the water, and bring to a boil over high heat. Cover, turn off the heat, and set a timer for 10 minutes. Use a slotted spoon to transfer the fish to a bowl.
  • When the potato is done, peel it and mash it with the fish. Add the ginger, cilantro, and chile along with some salt and pepper to taste and work the mixture with your hands until it is well blended. Shape into 8 equal burger-shaped patties.
  • Preheat the broiler and set the rack about 4 inches from the heat source. Brush the patties on both sides with the oil, then place on a nonstick baking sheet. Broil carefully until nicely browned on top, then turn and brown on the other side. Sprinkle with more cilantro and serve hot, with lime wedges.
  • Variations
  • Panfried Fish Cakes: Increase the oil to 1/3 cup, or more if necessary. Heat about 1/16 inch oil in a large skillet over medium-high heat. When it is hot (a pinch of the fish mixture will sizzle immediately), add the cakes. Cook, turning once, until brown on both sides, about 10 minutes total.
  • Substitute minced garlic, shallot, scallion, or onion for the ginger and parsley for the cilantro.
  • Season with a grating of nutmeg or a teaspoon or more of curry powder (in place of the seasonings in the original recipe).
  • Add 1/4 cup or more sour cream and a little butter to the potato as you mash it.
  • Add minced yellow or red bell pepper to the mix.
  • Serve with Mayonnaise (page 305) or tartar sauce (page 306), Worcestershire sauce, or any other condiment

1/4 pound salt cod (see note)
3 medium-size potatoes, unpeeled if desired
3/4 pound fresh cod or scrod
3 eggs
1 teaspoon baking powder
2 medium-size onions, chopped
Salt and freshly ground black pepper to taste
4 to 6 drops Tabasco sauce, or to taste
Vegetable oil or lard for frying, sufficient to make a 1/2-inch layer in a frying pan

Steps:

  • Rinse salt cod under running water for 5 to 10 minutes to remove salt. Put in a pan, cover with cold water and heat to just below boiling. Drain immediately and cover with fresh cold water. Repeat the heating and draining procedure two or three times, until cod is pleasantly but not overpoweringly salty.
  • Cut potatoes in half and put in a pan with salt cod and fresh cod. Cover with cold water. Place over medium heat, bring to a boil, cover and simmer for 20 minutes, or until potatoes are tender and easily pierced with a fork. Remove from heat, let cool slightly and drain.
  • Using a potato masher, roughly break up the cod and the potatoes. Continue mixing together until the mixture is cohesive. Lightly beat the eggs and add to the mixture, together with the baking powder. Add the chopped onions and mix well.
  • Taste the mixture and add salt, pepper and Tabasco. When seasoning is correct, form mixture into flattened balls that will fit comfortably in your palm.
  • Put an inch of lard or vegetable oil in the bottom of a heavy-duty saute pan. Set over medium heat and heat oil until a bread cube dropped into the oil turns golden quickly. Ease cod cakes into the hot fat and cook about 15 minutes to a side, turning once. Adjust heat so cod cakes do not burn, but become golden all over. Drain on paper towels, if desired.
