  • Mix all ingredients in a bowl. Use a fork to crush any clumps of seasonings. Store in an airtight container for up to a month.

This fantastic Coffee Dry Rub is incredibly flavorful and perfect for beef, particularly steaks, brisket, roasts, and other types of meats like venison and pork.

1/4 cup dark brown sugar (packed)
2 tablespoons ground medium-dark roast coffee ((not instant coffee))
2 tablespoons paprika (not smoked)
2 tablespoons ancho chili powder
2 tablespoons black pepper
2 tablespoons granulated garlic
1 tablespoon granulated onion

Steps:

  • Combine ingredients in a small bowl. Rub the mixture through a spice grinder or food processor for a finer spice blend.
  • If making ahead of time, follow the recipe instruction above and store spice rub in an airtight container in the cupboard for up to 6 months.
  • This rub does not contain salt. Brisket: We recommend pre salting brisket and beef roasts at least 1 hour and up to 8 hours before applying the rub. Use 1 teaspoon kosher salt per pound of meat. for an 10 pound brisket, you'll need 10 teaspoons or 3 tablespoons plus 1 teaspoon kosher salt. Wrap the brisket in plastic wrap, and store it in the refrigerator. Remove it one hour before it goes in the smoker, and apply Use 1 tablespoon of rub per pound of meat. Beef Roasts, Ribs and Steaks: Use the same method for rib roasts and thick cut steaks like Tomahawks, keep the salting time shorter for steaks (1-2 hours)Pork Roasts, Ribs, and Chops: Use 1 tablespoon of rub, plus 1/2 teaspoon kosher salt per pound of meat.

1/4 cup ancho chili powder
1/4 cup finely ground espresso
2 tablespoons Spanish paprika
2 tablespoons dark brown sugar
1 tablespoon dry mustard
1 tablespoon kosher salt
1 tablespoon ground black pepper
1 tablespoon ground coriander
1 tablespoon dried oregano
2 teaspoons ground ginger
2 teaspoons chili de arbol powder
2 bone-in or boneless rib-eye steaks, 2-inches thick, approximately 1 1/2 pounds each
Canola or olive oil
Salt and coarsely ground black pepper

Steps:

  • Combine all spices in a bowl.
  • Preheat oven to 425 degrees F.
  • Preheat a cast iron pan over high heat. Brush each side of the steak with oil and then season each side liberally with salt and pepper. Rub 2 tablespoons of the coffee rub onto 1 side of each steak. Cook the steak, rub side down until golden brown, about 3 to 4 minutes. Flip the steak over, cook for 2 minutes and then transfer to a baking sheet and cook in the oven to medium-rare doneness, about 8 to 10 minutes. Remove and let rest 5 minutes before slicing.

2 steaks (your favorite rib eye, T-Bone, New York Strip)
4 teaspoons your favorite ground dark roast coffee, Fine or 4 teaspoons espresso
2 teaspoons oil
salt and pepper
add your favorite other spices

Steps:

  • Select your favorite cut of steak - Ribeye, T-Bone, or New York works well. Make sure the cut is 2" or better. The grade should be choice or above.
  • Select your favorite dark roast coffee. Fine, Espresso, or Turkish grind will suffice.
  • Select an Olive or Canola Oil.
  • Preheat a cast iron skillet. Brush the oil on both sides of the steak. Apply salt and pepper liberally. Any other favorite spices can be applied, such as mustard, ginger, oregano, etc.
  • Hand rub 2 tablespoons of coffee onto one side of the steak. Cook approximately 3-4 minutes or until golden brown.
  • Flip each steak and repeat the coffee rub.
  • Finish each steak off on the grill.
  • Enjoy!
