Hot cocoa that freezes your taste buds! A terrific snack for hot days, with a wintry twist. For variety, use chocolate ice cream instead of vanilla, and use chocolate chips as a garnish after blending.

HOMESTYLE HOT COCOA
Growing up in snowy Canadian winters, my mom would always make my brothers and me hot cocoa after a night of tobogganing. When I got older - and had long since abandoned real cocoa for the instant variety - I had a craving one night for a more wholesome treat. Here's my recipe for a creamier, homestyle cup of cocoa. Perfect for those snowy winter nights!

Steps:
- Whisk together sugar, cocoa powder, cinnamon, and salt in a saucepan; stir in boiling water. Whisk until sugar is dissolved.
- Bring cocoa mixture to a simmer over medium-high heat, stirring constantly, about 2 minutes; stir milk and 1/2 cup half-and-half into water mixture. Cook and stir just until hot, about 2 minutes. Remove saucepan from heat; stir in remaining half-and-half and vanilla extract.
- Divide cocoa into mugs, top with marshmallows, and serve.

COLD COCOA DRINK - HEALTHY!
Healthy alternative to chocolate milk. Think of it as a lactose-free chocolate milk! =) You can also heat up the drink (--40 sec in the microwave) and if you do, you can taste the soymilk a lot better. Very simple, very fast, and healthier than instant drink mixes. Keep in mind, you can adjust amount of each ingredient that goes into your drink. Because the recipe calls for baking cocoa, it's low in fat, but you still satisfy your chocolate craving. One evening at about 3AM I had this huge chocolate craving, made my way to the kitchen, and decided to throw random ingredients together. I was pleased to find that I could still satisfy chocolate cravings without indulging.

Steps:
- Scoop a tablespoon of baking cocoa into your cup/mug. (more than a tablespoon for richer taste. remember it's baking cocoa, so it's ok to indulge).
- Scoop two tablespoons of sugar into your cup/mug. Skip out on the sugar if you want a diabetic-safe drink.
- Add just enough hot water to dissolve the cocoa (and sugar; the 1 1/2 tbsp hot water is an estimate - you'll know if you need more or less). Some coffeemakers dispense hot water. I just use my electric water boiler for this.
- Stir well.
- Pour in 8 oz soymilk or milk. Stir some more.
- Healthy and chocolatey! After the first time mixing, you should be able to figure out how sweet/cocoa-rich you want to make it next time.

COLD ORANGE & CARDAMOM COCOA
I love cold and hot cocoas. I especially like the ones that are spicy. This certainly hits the spot. I hope that you will enjoy this lovely treat. Make ice cubes with your leftover coffee. It really adds extra flavour to your cold drinks.

Steps:
- In a pot add milk, cream, whole cardamon pods and orange peel.
- Gently heat the mixture until it is steaming hot but do not boil.
- Take off the heat and remove the cardamon pods and orange peel. Now add the vanilla extract to the milk mixture.
- Make a paste with the cocoa, honey and 2 tbsps of the hot milk mixture.
- Now add the cocoa paste to the remaining hot milk mixture and whisk vigorously, till well blended.
- Allow to cool, chill two hours in fridge until ready to serve.
- Whisk cocoa well and pour into a large glass with 3 coffee ice cubes.
- Garnish with whip cream and grated orange rind.
