Olive Puffs image

These puff pastry-wrapped olives are our family's favorite holiday appetizer. We make them with a variety of olives - pimento stuffed green, plump kalamata, Provencal - just make sure they are pitted. We like to use strongly flavored olives; the flavor of canned ripe olives disappears in the puff pastry. You can make these ahead, and freeze; allow 30 minutes for the pastry to thaw before baking. Another advantage: the kids like to make them and eat them.

24 each pimento-stuffed green olives
1 (17.25 ounce) package frozen puff pastry, thawed

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Cut pastry into strips about 6 inches long and 1/2 inch wide. Wrap a belt of pastry around each olive. Place on an ungreased baking sheet.
  • Bake for 20 minutes, or until golden brown.

1 cup shredded Cheddar cheese (4 ounces)
1/4 cup butter or margarine, softened
1/4 teaspoon Worcestershire sauce
1 cup Original Bisquick™ mix
1 jar (5 ounces) pimiento-stuffed olives

Steps:

  • Heat oven to 400°F.
  • Stir together cheese, butter and Worcestershire sauce; stir in Bisquick mix until dough forms (work with hands if necessary). Pat olives completely dry on paper towel. Shape 1 teaspoon dough around each olive. Place about 1 inch apart on ungreased cookie sheet.
  • Bake about 10 minutes or until light golden brown.

I based this recipe on one from a famous Virginia colonial tavern, but I've had much better success with this one than the one published in their cookbook. It's great for parties, picnics, or potlucks. It will also freeze well (uncooked) for quick prep anytime!

18 ½ ounces extra sharp Cheddar cheese, shredded
½ cup butter, softened
½ teaspoon paprika
1 ½ cups all-purpose flour
45 pitted green olives

Steps:

  • Allow cheese to sit out until it is at room temperature. In a large bowl, mix together the cheese, butter and paprika using a pastry blender. Gradually mix in flour, first using the pastry blender, then using your hands. Mix until the dough pulls together. It should form a solid ball with a smooth appearance, but have a crumbly texture when pulled apart. If dough appears too dry, add more shredded cheese.
  • Preheat the oven to 375 degrees F (190 degrees C). Pinch off a small piece of dough, and cover an olive with it. Roll gently between your palms to smooth and seal the olive inside the ball. Place onto an ungreased cookie sheet and repeat with remaining dough and olives. Place the tray of covered olives into the refrigerator for 10 minutes to firm up.
  • Bake for 20 to 25 minutes in the preheated oven, or until browned. Serve hot or at room temperature.

Steps:

  • Cream all the ingredients except olives, knead to form a dough. Wrap around the olives individually. At this point you can place them on a cookie sheet and freeze then put them in a gallon sized bag for later, or refrigerate for at least one hour.
  • Bake at 400 degrees for 16-18 mn. if refrigerated, if frozen 20-23 mn. No need to thaw.

2 large egg yolks
1 large egg
1/4 cup whole milk
20 pitted olives
Store-bought puff pastry, rolled into 1 (10 by 12-inch) rectangle

Steps:

  • Prepare the egg wash: Combine the yolks, whole egg, and milk in a small mixing bowl and whip with a hand whisk until well combined. Preheat the oven to 400 degrees. Set the puff pastry on a lightly floured work surface, with the long side facing you and cut in half from top to bottom. Use a pastry brush to coat one piece of the dough with egg wash. Lay the olives spaced about 1-inch apart from top to bottom on the egg-washed dough. Place the other rolled-out dough half on top of the olives and mark each olive by pressing the dough on either side of the olive. Use a sharp paring knife to cut between each puff pastry-covered olive. Place on a parchment paper-covered baking sheet and brush with more egg wash. Bake until well risen and golden brown, about 20 minutes. Cool completely on a wire rack before serving. There is no need to cut these in half. Just cut between the olives to make small packages. Baking and cooling is the same. These puff pastry items are best eaten the day they are made.

3/4 cup grated Parmesan
Zest of 1 lemon
1 tablespoon finely chopped fresh parsley
1 large egg
Flour, for dusting
1 sheet frozen puff pastry (from a 17.3-ounce package), thawed
About 40 pimento-stuffed green olives (two 3-ounce jars), drained

Steps:

  • Preheat the oven to 400 degrees F. Line a baking sheet with parchment paper.
  • In a mixing bowl, toss together the Parmesan, lemon zest and parsley until combined.
  • In a separate small bowl, whisk the egg with 2 teaspoons water to make an egg wash.
  • On a floured work surface, gently roll out the puff pastry sheet, removing any fold marks but keeping the same general size and shape. Using a sharp knife or a pizza wheel, cut forty 1-by-2-inch rectangles. Place an olive in the middle of a rectangle and gently wrap the pastry around the olive, pinching the seam and ends to seal. Coat the wrapped olive first in egg wash and then in cheese mixture. Transfer to the prepared baking sheet. Repeat with remaining pastry and olives.
  • Bake until golden brown and crispy, about 15 minutes. Remove the olives from the baking sheet and cool completely on a wire rack.

1 cup butter or margarine, at room temperature
3 cups Mishpacha All Purpose Flour
1 tablespoon baking powder
1/2 teaspoon salt
1 teaspoon paprika
4 ounces Gruyére or cheddar cheese, grated
about 1/2 cup lowfat yogurt
6 ounces pitted black olives, such as Gefen or green olives stuffed with pimiento (or a combination), well drained on paper towels
1 large egg mixed with 1 teaspoon water (egg wash)
1/4 cup Gefen Sesame Seeds (optional)

Steps:

  • Place the butter, flour, baking powder, salt, paprika, and cheese in a food processor and process until mixture becomes crumbly and just begins to bind together.
  • Add enough yogurt to combine with flour/cheese mixture and form a ball of dough. If the mixture is too dry, add more yogurt. If it is too sticky, add a little more flour.
  • Wrap the dough in plastic wrap and refrigerate for 30 minutes or more. Do not let it get so hard that you cannot roll it out.
  • Preheat oven to 375 degrees Fahrenheit.
  • Divide dough into two or three balls.
  • On a lightly floured board roll one ball at a time until dough is about 1/4-inch thick. Cut out circles with a two-inch round cookie cutter, and place one olive in the center of each circle.
  • Fold part of the dough over the olive, forming a crescent shape and pinch edges together. Continue until all the dough or olives are used.
  • Place crescents on a nonstick jelly roll pan and brush each crescent with the egg wash. Sprinkle sesame seeds on the crescents if desired, and bake 15 to 20 minutes or until golden brown.

2 packages (8 ounces each) cream cheese, softened
1 cup sour cream
1 teaspoon lemon-pepper seasoning
2 cups crumbled blue cheese
1 cup chopped pimiento-stuffed olives

Steps:

  • In a large saucepan, bring the water, butter and salt to a boil. Add flour all at once and stir until a smooth ball forms. Remove from the heat; let stand for 5 minutes. Add eggs, one at a time, beating well after each addition. Continue beating until mixture is smooth and shiny., Drop by rounded teaspoonfuls 3 in. apart onto parchment paper-lined baking sheets. Bake at 400° for 25-30 minutes or until golden brown., Remove to wire racks. Immediately split puffs open; remove tops and set aside. Discard soft dough from inside. Cool puffs., For filling, in a small bowl, beat cream cheese until fluffy. Beat in sour cream and lemon-pepper. Fold in blue cheese and olives. Fill the cream puffs just before serving.
