Steps:
- In 3-quart saucepan, heat broth and water to boiling. Add noodles; return to boiling. Reduce heat to medium-low; cook 8 to 10 minutes or until noodles are tender and most of liquid is absorbed, stirring occasionally (do not drain).
- Meanwhile, cook vegetables as directed on box.
- Gently stir vegetables in cheese sauce and ham into noodle mixture. Cook over medium-low heat 3 to 4 minutes or until hot, stirring occasionally.

Steps:
- Preheat an oven to 350 degrees F (175 degrees C). Grease a 2-quart casserole.
- Bring water to a full rolling boil in a pot.. Cook the egg noodles in the boiling water, stirring occasionally, for 3 minutes; remove from heat, cover, and let stand until the noodles are tender, about 10 minutes. Drain.
- Stir the noodles, onion, sour cream, chicken soup, ham, and Swiss cheese together in a large bowl. Season with salt and pepper. Spoon into the prepared casserole. Sprinkle the top with bread crumbs.
- Bake in the preheated oven until the casserole is bubbling and the bread crumbs have browned, about 40 minutes.

HAM AND NOODLE CASSEROLE
This comforting, quick-to-prepare casserole is just the thing to throw together when you have a full house of company or need something hearty and crowd-pleasing for a potluck or large gathering.The recipe, which was published in our March 2001 issue, comes from the kitchen of Laurabell J. Long of Peru, Indiana. Made with egg noodles, chopped ham, a tasty mix of vegetables (carrots, broccoli, asparagus), and a rich and creamy sauce, the casserole is made two at a time in two 8-inch square baking dishes to serve eight people (or more, if you are serving it with other dishes as part of a buffet). While the recipe includes an additional recipe for Glazed Baked Ham, you can also substitute any leftover chopped cooked ham, or buy a ham steak and chop it up. The secret ingredient in the sauce is the chive-and-onion flavored cream cheese, which adds a ton of flavor with little effort. Best of all, you can prepare this Ham and Noodle Casserole as directed or you can make one, and freeze one to eat later. (Thaw the frozen casserole in the refrigerator overnight, then bake at 400° for 35 to 40 minutes.)

- Cook pasta according to package directions; drain.

- Preheat oven to 350 degrees.
- In a large saucepan cook noodles according to package directions. Drain noodles and clean saucepan to make the sauce.
- In a large saucepan over medium heat, melt the butter until bubbly. Add the celery, carrot, and onion and cook for 3 minutes, until vegetables have softened.
- Whisk in the flour, salt, pepper, and thyme. Cook, whisking constantly, for 1 minute.
- Gradually add chicken broth and milk, whisking constantly. Bring to a boil, then reduce heat and simmer until the sauce begins to thicken.
- Stir in the cheese and ham and cook for 1 minute, or until cheese is melted.

- Place ham bone in a slow cooker.
- Fill with water.
- Sprinkle generously with salt, pepper and parsley.
- Heat overnight or on a low setting for 8 hours.
- Remove ham to a large platter.
- Remove fat, bones and gristle and discard.
- Dice ham in small pieces; set aside.
- Season ham broth with salt, pepper, parsley and thyme, as desired.
- In a small mixing bowl, whisk flour into cold water.

I make this almost everyday for an after college snack. It's soooo tasty. I cook the noodles a little different than most people so these noodles do have a strong flavor. Of course most any package of Ramen Noodles will work, but I prefer the texture of "Maruchan" Ramen Noodles.

- Pour 1 cup water in a pan.
- Put noodles in water.
- Set noodles and water to boiling.
- Once noodles have broken up rip the ham in little bite size pieces and place over the noodles.
- Just before too much water evaporates remove from stove. I like just about a tablespoon of water leftover.
- Add seasoning packet and stir around well.
- Top with cheese, let melt and enjoy!
- Important! Make sure you keep a close eye on this recipe as it cooks very fast.
