CHICKEN PIZZAIOLA



Chicken Pizzaiola image

Juicy meat simmered in rich tomato sauce and topped with fresh mozzarella cheese that melts over the cutlets.

Number Of Ingredients 10

1 pound chicken breast
8 oz fresh mozzarella (1 large ball)
2 cups tomato passata (tomato puree)
¼ cup dry white wine
¼ cup flour (more if needed)
2 tbsp butter
Extra virgin olive oil
A few fresh basil leaves
Dry oregano
Salt (pepper to taste)

Steps:

  • Slice chicken breast into cutlets or you can use already sliced store bought cutlets. Season with salt and pepper.
  • Dip each cutlet in flour and dredge both sides.
  • In a large skillet pan placed over medium heat add butter and a generous splash of extra virgin olive oil.
  • Brown chicken cutlets on each side. Remove from the pan and set aside.
  • In the same pan add white wine, stir well and simmer for a minute.Add tomato puree (if it looks too thick add some water), basil leaves and simmer on low heat for 5-7 minutes.
  • Place chicken cutlets you've previous set aside in tomato sauce, top with mozzarella slices, season oregano. Cover with a lid and simmer for another 5 minutes until cheese melts.
  • Serve hot topped with tomato sauce from the pan.

There are hundreds of ways to make pizzaiola, from versions featuring slowly braised tough cuts of beef to quickly seared tenderloin medallions, like I used here. The one thing most people agree on is that you should, if at all possible, use really fresh, very sweet, vine-ripened tomatoes. Serve on top of toasted bread with mozzarella cheese.

1 pound beef tenderloin steaks, cut into 4 medallions
salt and pepper to taste
1 tablespoon olive oil
1 cup sliced fresh mushrooms
2 teaspoons butter
1 pinch salt
1 cup sliced sweet and hot peppers
4 cloves garlic, crushed
½ cup white wine
¼ teaspoon dried oregano
1 cup tomato concasse (see footnote for recipe link)
2 tablespoons chopped fresh oregano
1 teaspoon balsamic vinegar
1 pinch red pepper flakes
1 pinch salt and ground black pepper to taste

Steps:

  • Season steak medallions with salt and black pepper on both sides.
  • Heat olive oil in a large skillet over high heat. Add steaks and cook until browned, about 2 minutes per side. Transfer to a plate. Reserve oil in skillet.
  • Place mushrooms and butter into the skillet and season with salt; cook and stir until mushrooms are softened and beginning to brown, 5 to 6 minutes. Reduce heat to medium; add peppers and cook and stir until softened, about 2 minutes. Stir in garlic and cook for 1 minute. Pour in wine and sprinkle in dried oregano. Increase heat to medium-high and cook until the wine is nearly evaporated, about 3 minutes.
  • Stir tomato concasse into the mushroom mixture and simmer until tomato is softened, 3 to 4 minutes. Add fresh oregano, balsamic vinegar, and red pepper flakes; stir to combine. Adjust salt and black pepper to taste.
  • Place steaks back into the skillet with the mushroom mixture and cook until warmed through and cooked to desired doneness, 4 to 10 minutes.

4 skinless, boneless chicken breast halves - pounded thin
¼ teaspoon salt
¼ teaspoon black pepper
3 potatoes, peeled and quartered
2 green bell peppers, cut into strips
2 teaspoons dried oregano
1 teaspoon onion powder
¼ teaspoon crushed red pepper flakes
1 (14.5 ounce) can diced tomatoes
3 tablespoons tomato paste
1 (14.5 ounce) can chicken broth

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C). Prepare a 9x13 inch baking dish with cooking spray.
  • Heat the oil in a large skillet over medium heat. Season the chicken breasts on both sides with the salt and pepper. Cook the chicken in the hot oil until completely browned, 2 to 3 minutes per side. Transfer the chicken to the prepared baking dish; cover tightly with aluminum foil.
  • Place the potatoes and bell peppers in the skillet. Season with oregano, onion powder, and red pepper flakes. Cook and stir until the vegetables soften, 10 to 15 minutes. Add the tomatoes, tomato paste, and chicken broth to the skillet; bring to a boil. Remove from heat and pour over the chicken breasts; tightly cover again with the aluminum foil.
  • Bake in the preheated oven until the chicken is no longer pink in the center and the juices run clear, about 45 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).

Fork-tender and served in a spicy sauce, this is a perfect dish for those who've never cooked rabbit before. The tomato-based sauce is fantastic over everything from egg noodles to roasted potatoes or creamy polenta.

Number Of Ingredients 10

1 2 1/2-3-pound rabbit, quartered
Kosher salt and freshly ground black pepper
4 tablespoons olive oil, divided
1 small onion, thinly sliced
1 small red onion, thinly sliced
4 garlic cloves, minced
3 sprigs oregano
2 sprigs basil
1 cup white wine
1 14-ounce can whole, peeled tomatoes, preferably San Marzano

Steps:

  • Preheat oven to 350°F. Season rabbit with salt and pepper. Heat 2 tablespoons olive oil in a large ovenproof pot over medium-high heat. Working in batches, cook rabbit until golden brown, 2-3 minutes per side. Transfer rabbit to a plate. Add remaining 2 tablespoons oil to pot. Add onions; sauté until beginning to soften, about 4 minutes. Add garlic, oregano, and basil; reduce heat to medium and cook, stirring often, until soft, about 3 minutes. Add wine; simmer until slightly reduced, about 2 minutes. Crush tomatoes by hand; add to pot with juices from can. Add 1/2 cup water; bring to a boil. Season lightly with salt and pepper. Return rabbit to pot; cover.
  • Transfer pot to oven and braise until meat is tender and almost falling off the bone, about 1 1/4 hours. Transfer meat to a platter. Reduce sauce in pot over medium-high heat until thickened, about 10 minutes. Season with salt and pepper. Pour sauce over rabbit.

Not sure where this comes from. May be from a book, may be my own, who knows anymore. I do know that we love it. Please try to use fresh oregano, I have had good results with dried but nothing beats the fresh, small leaves. It really does make a big difference. Be sure to serve with some good bread to sop up the gravy. You can use your favorite tomato sauce recipe if you wish, or, dare I say, your favorite jar. As always, the time to make it is just a guess.

2 beef t-bone steaks (3/4 inch)
salt and pepper
2 tablespoons extra virgin olive oil
3 garlic cloves, peeled, crushed
1 (24 ounce) can tomatoes
1/4 teaspoon red pepper flakes (to taste)
3 sprigs fresh oregano, leaves only, chopped
1/2 cup white wine

Steps:

  • To prepare tomato sauce place about a tbsp of oil and a crushed clove of garlic in a medium size pot.
  • Let garlic turn slightly golden but remove from pot before it becomes too brown.
  • Add tomatoes with their liquid and simmer until there is little to no more liquid on top of the sauce.
  • Set aside.
  • Season steaks on both sides with salt and pepper.
  • Heat remaining oil in a large skillet (it should be able to hold both steaks without overcrowding) over medium-high heat until hot.
  • Add garlic and saute for 1 minute then add steaks.
  • Quickly brown 1 minute on both sides then transfer to a plate.
  • Add the red pepper flakes and oregano to the pan the steaks were cooked in, then add the wine and cook stirring until the liquid is slightly reduced.
  • Add tomato sauce, stir then return steak to pan.
  • Reduce heat to medium and cook 6-8 minutes turning once (or to your desired doneness).
  • Put steak on a serving dish and pour sauce over top.

1 cup dry white wine
4 teaspoons fresh parsley, minced
2 teaspoons fresh basil, chopped
2 teaspoons fresh oregano, chopped
1 bay leaf
1 pepperoncini pepper, chopped
2 tablespoons olive oil
1 yellow onion, diced
2 cloves garlic, minced
1 1/2 cups canned crushed tomatoes

Steps:

  • Simmer the wine in a small saucepan over medium-high heat until reduced by half, 4 to 5 minutes.
  • Remove from the heat and add the herbs and pepperoncini.
  • Set aside to steep for 30 minutes before preparing the rest of the sauce.
  • Heat the oil in a saucepan over medium-high heat.
  • Add the onion and garlic and saute, stirring often, until light golden, about 5 minutes.
  • Add the crushed tomatoes and simmer for 5 minutes more.
  • Remove the bay leaf from the wine mixture and discard it.
  • Add the wie mixture to the pan with the tomatoes and contine to summer for 5 minutes.
  • Remove from the heat, set aside.
  • Either cook your meat in a pan, or put in oven with sauce.
  • Enjoy!
