TURKEY MEATLOAF CUPCAKES



Turkey Meatloaf Cupcakes image

Easy to make, these Turkey Meatloaf Cupcakes stay perfectly moist while cooking in half the time as a traditional meatloaf. Top with whipped mashed potatoes for a fun April Fool's joke. If you are looking for the perfect mini turkey meatloaf to make for dinner these are delicious!

2 tablespoons butter
1 large onion (chopped)
4 cloves garlic (minced)
1 1/4 lbs ground turkey
1/2 cup Italian breadcrumbs
1 egg
3/4 cup ketchup
2 teaspoons Worcestershire sauce
3/4 teaspoon salt
1/2 teaspoon black pepper
The zest of one lemon
4 cups cubed peeled potatoes (about 2 pounds)
1/4 cup milk
1/4 cup sour cream
3 tablespoons butter
1/2 teaspoon salt
1/4 teaspoon black pepper
3 tablespoons chopped scallions

Steps:

  • Melt butter in a skillet over medium heat. Add the onion and garlic into the melted butter for 5 minutes, stirring occasionally until the onions become translucent.
  • Place mixture in a large bowl to cool for 5 minutes.
  • Combine turkey, bread crumbs, egg, 1/4 cup of the ketchup, Worcestershire sauce, salt, pepper, and lemon zest with onion mixture. Press meatloaf into a cupcake pan filling each cupcake spot with meatloaf mixture.
  • Spread remaining ketchup on top of each "cupcake". Bake at 350° for 25 minutes or until a thermometer registers 160°. Let stand for 5 minutes.
  • While the meatloaf is cooking you can start making the mashed potatoes. Place potatoes in a saucepan and cover with water. Bring them to a boil, cover and reduce heat to a simmer for 10 minutes or until tender.
  • Drain and return potato to pan.
  • Using a hand masher or a mixer smash the potatoes. Add milk and remaining ingredients and mix until desired consistency.
  • Place the turkey loaf into a cupcake liner.
  • Put the potatoes into a pastry bag or a freezer bag with a corner cup off with a wide star tip and pipe the mashed potatoes on top of the meatloaf.

Nonstick cooking spray, for the pan
1 1/2 cups regular oats
1 cup whole milk
2 1/2 pounds ground turkey
4 slices bacon, cut into very small bits
3 tablespoons finely minced fresh parsley, plus more for serving
1/2 teaspoon seasoned salt, such as Lawry's
1/2 teaspoon freshly ground black pepper
1/2 teaspoon red pepper flakes
1 cup ketchup, plus more if needed

Steps:

  • Preheat the oven to 350 degrees F. Generously coat 18 standard muffin cups (from two 12-cup muffin pans) with cooking spray.
  • Put the oats in a small bowl and slowly pour the milk over them. Stir to make sure the oats are all coated and then let them sit for a few minutes.
  • Put the turkey and bacon in a separate large bowl and add the oats and any extra milk from the bowl to it. Add the parsley, seasoned salt, black pepper, red pepper flakes and 1/4 cup of the ketchup. Use your hands to mix it all together. Place a 1/4-cup scoop of the mixture in each greased muffin cup. Squirt about 1/2 teaspoon of the remaining ketchup on top of each meatloaf. Use a spoon to smear the ketchup evenly over the top, then use it to nudge the edges of the meatloaves away from the pan a bit (this just neatens them up a little).
  • Bake for 25 minutes, then carefully squirt another 1/2 teaspoon of ketchup on top of each, spreading it carefully with a spoon to cover as much of the surface as possible. Continue to bake until completely cooked through and sizzling around the edges, about another 30 minutes. If there are any large areas without ketchup, go ahead and squirt/spread more as needed.
  • Sprinkle the meatloaves with parsley, then let them sit in the pan for 5 to 7 minutes before serving. Run a sharp knife around the edges of the loaves to loosen them if they stick. Serve them warm with a veggie on the side

1 cup crushed saltine crackers
½ cup chopped onion
½ cup chopped green bell pepper
⅓ cup milk
1 egg
1 tablespoon Worcestershire sauce

½ cup ketchup
½ cup brown sugar
4 cups mashed potatoes
1 cup shredded Cheddar cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).

2 russet potatoes, peeled and cubed

Steps:

  • Preheat oven to 350°F (180°C).
  • In a bowl, mix together the meatloaf ingredients.
  • Line a muffin tin with cupcake liners.
  • Fill the muffin liners with the meatloaf mixture and pat down to form a dome.

  • Fill a ziplock bag with the mashed potatoes.

4 ounces tomato paste

1/2 cup parmesan cheese

Steps:

  • Dice the red pepper, onion and jalapeno finely. Mince the cloves of garlic into a fine paste.
  • In a nonstick pan coated with non stick spray saute the finely diced red pepper, onion and jalapeno until soft,
  • Add in thyme paprika, crushed garlic paste and tomato paste. Season with salt and pepper. Cook for about 5 minutes more.
  • Allow mixture to cool.

I found this recipe on the back of some generic-brand bread crumbs a long time ago, and with some generous tweaking (including replacing the breadcrumbs with healthier oatmeal) it has become my favorite meatloaf recipe. I've made this with ground beef and ground chicken, so you don't have to use ground turkey if you'd prefer not to. As you can tell from the ingredients, this is going to be spicy, so be warned!

1 egg, slightly beaten

1 serrano pepper, seeded & minced

1/8 cup sriracha sauce (or your favorite hot sauce)

Steps:
