Steps:

  • In an airtight container or jar, mix together all ingredients.
  • Place in the refrigerator overnight (at least 5 hours).
  • If desired, warm and top with extra nuts and fruit before serving.

This copycat Starbucks oatmeal is super easy to make at home. This stove-top version is a heart healthy and delicious way to start your day!

1 cup old fashioned oats
1 cup milk (almond milk or regular milk will work best)
1/2 tsp pure vanilla extract
1/4 tsp salt
1 tsp cinnamon
1/2 tsp nutmeg
2 tbsp light brown sugar (heaping)
2 tbsp sliced almonds
1 tbsp chopped walnuts
1 tbsp dried cranberries
1 tbsp golden raisins

Steps:

  • In a medium sized pot add the oatmeal and milk.
  • Next, add in the salt, cinnamon, nutmeg, vanilla extract, and brown sugar.
  • Stir well and bring to a boil and then reduce to a simmer for five minutes or until the oatmeal is a creamy consistency.
  • Top with the almonds, walnuts, cranberries, and golden raisins.

3 ¾ cups quick oats
1 teaspoon salt
½ cup unsalted butter
½ cup light brown sugar (packed)
¼ cup maple syrup
¼ cup unsweetened almond milk
1 teaspoon vanilla extract

Steps:

  • Preheat oven to 325°F and line an 8x8 inch pan with parchment paper.
  • In the bowl of a food processor, grind 2 cups of oats until super fine and flour-like. Add to a large bowl and stir in the remaining 1¾ cups oats and salt. Mix to combine.
  • Melt the butter, brown sugar, and maple over medium heat in a small saucepan until the butter is completely melted and the sugar is dissolved. Remove from heat and whisk in the almond milk and vanilla extract. Let cool slightly.
  • Pour the butter mixture into the oat mixture and stir with a wooden spoon until combined. Spoon the mixture into the prepared pan and press the oats into the pan evenly.
  • Bake until slightly golden brown, rotating halfway through, 20 minutes. Let cool and then slice into bars.

1 cup butter or 1 cup margarine
2 cups packed brown sugar
2 large eggs
2 teaspoons real vanilla
3 cups all-purpose flour
1 teaspoon baking soda
3 cups quick-cooking rolled oats
1 (14 ounce) can sweetened condensed milk
2 cups semi-sweet chocolate chips

Steps:

  • Set aside 2 tablespoons of the butter. Beat the remaining butter with a mixer on medium speed for 30 seconds. Add brown sugar; beat until well mixed. Beat in eggs and vanilla. In another large bowl stir together flour and baking soda; stir in oats. Gradually stir dry mixture into beaten mixture. Set aside.
  • In a medium saucepan combine the 2 tablespoons butter, the sweetened condensed milk, and chocolate . Cook over low heat until chocolate melts, stirring occasionally. Remove from heat. Stir in vanilla.
  • Press two-thirds (about 3-1/3 cups) of the oat mixture into the bottom of an ungreased 15×10x1-inch baking pan. Spread chocolate mixture over the oat mixture. Using your fingers, dot remaining oat mixture over the chocolate.
  • Bake in a 350°F oven about 25 minutes or until top is lightly browned (chocolate mixture will still look moist). Cool on a wire rack. Cut into 2×2 inch inch bars.

1/4 cup golden raisin
1/4 cup dried cranberries
1/4 teaspoon baking powder
1/4 teaspoon baking soda
1/2 teaspoon salt
6 tablespoons butter, at room temperature
1/2 cup dark brown sugar, packed
1/4 cup granulated sugar
1 large egg
1/2 teaspoon ground cinnamon
1 teaspoon vanilla
4 tablespoons dark raisins, for topping
4 tablespoons golden raisins, for topping

Steps:

  • Preheat oven to 350°F.
  • Blend oats, flour raisins, cranberries, baking powder, baking soda, and salt; set aside.
  • Beat butter and sugars until light and fluffy. Add egg, cinnamon, and vanilla; beat until combined.
  • Gradually add oat mixture to butter mixture; beat until combined.
  • Combine raisins for topping in separate bowl and set aside.
  • Drop dough by rounded tablespoons, 2 inches apart onto two lightly greased baking sheets.
  • Place 1 mounded tsp of raisins on top of dough.
