CORNMEAL-MOLASSES MUFFINS
These muffins are a nod to two traditional New England specialties, Anadama bread and Indian pudding, both of which are primarily made with cornmeal and molasses.

- Preheat the oven to 350 degrees F. Cut parchment paper into twelve 5-by-5-inch squares. Lightly grease the inside of a 12-cup muffin tin. Center a square of parchment paper over 1 of the cups and use your fingers to press the parchment into the cup, so that it sticks to the sides and bottom. Crease the paper as needed to fit and repeat with the remaining parchment (regular muffin liners work just as well but the parchment looks pretty).
- Combine the cornmeal, flour, sugar, baking powder, cinnamon, salt and baking soda in a large bowl.
- Whisk together the yogurt, applesauce, molasses, orange zest, eggs and butter in a separate small bowl.
- Fold the wet ingredients into the dry until just combined (don't fret if the batter is lumpy, this means your batter isn't over-mixed).
- Fill each liner almost to the top of the tin (an ice-cream scoop lightly greased with nonstick spray will help). Sprinkle each muffin with the toasted oats.
- Bake, rotating about halfway through, until a toothpick inserted in the muffins comes out clean and the tops are just slightly puffed and spring back when touched, 20 to 24 minutes. Let rest in the hot muffin pan 3 minutes, then transfer to a cooling rack and let cool 30 minutes. Store the cooled muffins in an airtight container for up to 3 days.

MOLASSES CORN BREAD
Steps:
- Preheat oven to 400° F. and butter a 9-by-5-by-3 inch loaf pan.
- Into a large bowl sift together flour, baking powder, salt, and baking soda and whisk in cornmeal and sugar until combined well. In a bowl whisk together milk, molasses, and egg until just combined. Add butter to flour mixture and with an electric mixer beat until mixture resembles fine crumbs. Beat in milk mixture until just combined.
- Pour batter into pan and bake in middle of oven 35 minutes, or until a tester comes out clean. Cool corn bread in pan on a rack 10 minutes and turn out onto rack to cool completely. Corn bread may be made 2 days ahead and kept, wrapped in plastic wrap, in a cool, dry place.
GRANDMA'S MOLASSES CORNBREAD
Sweet corn bread that my grandma used to make, then my father made, and now I make. I serve this with chili, although I do like traditional corn bread too. This just really complements chili.

- Place boiling water in small bowl. Slowly add cornmeal, stirring constantly, until well mixed. Add molasses, 3 tablespoons butter and salt. Stir until butter is melted. Stir in egg; mix well. Set aside.
- Combine warm water and yeast in another small bowl. Stir until yeast is dissolved.
- Place flour in large bowl. Add cornmeal and yeast mixtures; stir until soft dough forms. Turn dough onto well-floured surface. Knead with well-floured hands until ball forms (1 to 2 minutes). (Dough will be sticky.) Cut dough into 16 pieces with sharp knife.
- Shape each piece of dough into ball with well-floured hands. Place balls into well greased 10-inch cast iron skillet or 9-inch round baking pan. Cover; let rise in warm place until double in size (30 to 45 minutes).
- Heat oven to 375°F.
- Bake rolls for 30 to 35 minutes or until golden brown and rolls sound hollow when tapped. Remove from pan; cool on wire rack. Brush with 1 tablespoon melted butter. Serve warm.

- In a large bowl, mix 2 1/2 cups of the flour, the cornmeal, salt, and yeast. Add the butter and use a mixer to blend in the butter. Slowly add in the warm water and the molasses, stirring carefully. Add 1/2 cup additional flour, and then, using a mixer, beat at medium speed for two minutes. Stir in approximately four more cups of flour (you will need to work it in with your hands at this point) to make a stiff dough.
- Turn out the dough onto a floured board and knead until smooth and elastic for approximately 8 to 10 minutes. Grease a large bowl with butter and place the dough in the bowl. Turn the dough so that all sides are coated. Cover with a towel and let rise in a warm place for one hour, until doubled in bulk.
- Punch the dough down and divide it in half. Roll each half out on a floured board into an approximately 14x9" rectangle. Roll up the rectangle and place it in a greased 9x5x3" loaf pan. Repeat with the other half of dough. Cover with a towel and let rise again, until doubled in bulk, approximately 45 minutes. Melt the 1 tablespoon of butter and brush it over the top of the loaves.
- Bake the loaves at 375 for approximately 45 minutes. The bread should be medium brown and crispy on top, and should make a hollow sound when tapped. Cool on wire racks. Serve warm with butter. Makes two loaves

- In a bowl, mix cornmeal, sugar, and lard. Add the boiling water and mix thoroughly to eliminate any lumps. Let cool for about 45 minutes. The cornmeal will expand and look somewhat like porridge. Just make sure that the porridge is cool enough for the yeast to become active, rather than too hot, which can kill the yeast.
- In room-temperature water, thoroughly mix the yeast and baking soda. Add this to your cornmeal porridge, then add salt and molasses. Mix until well blended.
- Stir in flour 1 cup at a time, making sure flour is completely incorporated before you add more. By the time you have finished incorporating the third cup of flour, the dough should start to come together, pulling away from the sides of the bowl. Turn the dough out onto a floured surface, and dust it with more flour to start kneading.
- With flour-dusted hands, gather the dough into a large ball and begin to knead the dough. The dough will be slightly tacky at first; a good rule of thumb for this bread is to keep adding small amounts of flour as you knead it. Eventually the dough will become rather smooth and no longer tacky, and it will feel taut and less elastic as you knead it.
