Chewy Chocolate Chip Cookies with Cornstarch image

1 1/4 cups all-purpose flour
1 1/4 cups bread flour
2 1/2 teaspoons cornstarch
2 teaspoons kosher salt
1 teaspoon baking soda
3/4 cup semi-sweet chocolate chips
1 cup unsalted butter (melted)
1/4 cup granulated sugar
1 1/4 cups light brown sugar
1 large egg
1 yolk
1 tablespoon heavy cream
1 tablespoon vanilla extract

Steps:

  • In a large mixing bowl, whisk together the flours, cornstarch, baking soda, salt and chocolate chips.
  • In another large bowl, whisk together the melted butter and sugars until thick and glossy and slightly lighter in color, about 30 seconds or so.
  • Add the egg and yolk, one at a time, whisking after each addition. Add the heavy cream and vanilla and whisk again.
  • Add the dry ingredients to the wet and using a flexible spatula or wooden spoon mix just until combined. Do not over mix.
  • Scoop the dough with a 1/4 cup ice cream scoop or measuring cup onto a parchment-lined cookie sheet. Place in the freezer for 30 minutes, just to firm up and prevent spreading.
  • When ready to bake off the cookies, heat the oven to 375 F and place 12 balls of dough on to a second cookie sheet lined with parchment. Bake for 10 to 12 minutes or until the cookies are browned around the edges and are just this side of done in the middle.
  • Let cookies cool briefly before serving with tall glasses of icycold milk.

Scrape down the sides of the bowl then add the egg and vanilla and beat until well combined. Add half of the flour mixture and mix for 15 seconds. Add the remaining flour mixture and beat until just incorporated. Fold in chocolate chips. Drop by rounded tablespoons onto prepared baking sheet, leaving about 2 inches between them. Bake for 8-10 minutes or until barely golden brown around the edges. Let cookies cool on sheets for 5 minutes before transferring cookies to wire racks to cool completely.

Steps:

  • Preheat the oven to 325 degrees F (165 degrees C). Grease cookie sheets or line with parchment paper.
  • Sift together the flour, baking soda and salt; set aside.
  • In a medium bowl, cream together the melted butter, brown sugar and white sugar until well blended. Beat in the vanilla, egg, and egg yolk until light and creamy. 1 cup coarsely chopped nuts, if desired

Steps:

  • Heat oven to 375°F. In small bowl, mix flour, baking soda and salt; set aside.
  • In large bowl, beat softened butter and sugars with electric mixer on medium speed, or mix with spoon about 1 minute or until fluffy, scraping side of bowl occasionally.

On low speed, beat the chocolate chips. Cover dough tightly with aluminum foil or plastic wrap and chill for at least 1 hour and up to 2 days. Chilling is mandatory for this cookie dough.
  • Remove cookie dough from the refrigerator and allow to sit at room temperature for 10 minutes. Preheat oven to 350°F (177°C). Line 2 large baking sheets with parchment paper or silicone baking mats. (Always recommended for cookies.) Set aside.
  • Once chilled, the dough will be slightly crumbly, but will come together when you work the dough with your hands. Roll balls of dough, about 1.5 Tablespoons of dough each, into balls.
