16 ounces cavatappi pasta
1 cup butter
1 cup heavy cream
2 1/2 cup whole milk
Salt (to taste)
Pepper (to taste)
Garlic Powder (to taste)
3/4 cup romano cheese
1/4 cup parmesan cheese
1 cup white cheddar cheese
1/2-1 cup sharp cheddar cheese

Steps:

  • Bring a pot of water to a boil - add cavatapi and cook according to directions on package. Drain water and set aside.
  • Add butter to a large skillet and melt over low heat. Add heavy cream and milk and stir until combined.
  • Slowly mix in cheeses over medium-low heat until it thickens. If it doesn't thicken, you can add in a mixture of 1 teaspoon cornstarch and 2 teaspoons cold water.
  • Add seasonings to taste.
  • Combine the pasta with the sauce and pour into a large baking dish.
  • Top with shredded cheddar cheese
  • Bake at 400 for 25-30 minutes or until heated through. Broil to caramelize cheese.

Costco Mac and Cheese-- quick, easy and just as good (or better) than the deli version. You can go ahead and throw that membership card out. :)

8 ounces Cavatapi Pasta
15 ounces Jarred Prepared Alfredo Sauce
1 teaspoon dijon mustard
8 ounces Sharp Cheddar (shredded and divided)
4 ounces Jarlsberg Cheese (shredded)
1/2 cup parmesan cheese (shredded)

Steps:

  • Preheat oven to 400 degrees.
  • Cook pasta according to package directions to "Al Dente" doneness. Drain and place in a large bowl.
  • Pour alfredo sauce and dijon mustard over the cooked pasta and stir. Add in 3/4 of the sharp cheddar and all of the Jarlsberg and parmesan cheese. Stir until well combined.
  • Spray an 8"x 8" baking pan with non-stick cooking spray and spoon pasta into the dish.
  • Sprinkle remaining sharp cheddar over the pasta. Bake for about 20 minutes, or until the cheese is melted and the sauce is bubbly.

2 Tbsp butter, unsalted
3 1/2 Tbsp all purpose flour
1 1/2 c whole milk
7 oz about 1 3/4 cups of flagship cheese
1 oz about 1/4 cup just jack cheese
1/2 tsp coarse salt
1/4 -1/2 tsp chipotle chili powder
1/8 tsp garlic powder
PASTA
6 oz penne pasta
1 oz flagship cheese grated
1 oz just jack cheese grated
1/4-1/2 tsp chipotle chili powder instructions

Steps:

  • 1. To prepare sauce, melt butter in a heavy-bottomed saucepan over medium heat and whisk in the flour.
  • 2. Continue whisking and cook for 2 minutes. Slowly add milk, whisking constantly. Cook until sauce thickens, about 10 minutes, stirring frequently. Remove from heat.
  • 3. Add cheeses, salt, chili powder and garlic powder. Stir until cheese is melted and all ingredients are incorporated, about 3 minutes. Set aside.
  • 4. Preheat oven to 350F. Butter or oil an 8-inch baking dish. Cook penne 2 minutes less than package directions. (It will finish cooking in the oven.) Rinse pasta in cold water and drain well.
  • 5. Combine pasta and sauce in a medium bowl; mix carefully but thoroughly. Scrape the pasta into the prepared baking dish. Sprinkle top with cheeses and then the chili powder.
  • 6. Bake, uncovered, 20 minutes. Let stand 5 minutes before serving.

On a recent trip to Seattle we were lucky enough to visit Beecher's Handmade Cheese at Pike Place Market. They made the BEST mac and cheese I have ever had... and believe me I've had a LOT of mac and cheese! Imagine my delight when I found that they published their recipe on their website! So, here it is... of course you have to substitute locally found cheeses for their cheeses but I'm sure it will be just as delicious.

Copycat Costco Mac and Cheese image

Super creamy, cheesy, and delicious, this Copycat Costco Mac and Cheese is the ultimate comfort food made with five different kinds of cheese.

1 lb. cavatappi pasta
1 Tablespoon olive oil
1/2 cup butter
1/2 cup all-purpose flour
1 cup cream
3 cups milk
3 1/2 cups grated white cheddar cheese (divided)
2 cups grated Gruyere cheese (divided)
3/4 cup grated Romano cheese (divded)
1/2 cup grated Parmesan cheese (divided)
1/2 cup grated medium cheddar cheese
1/2 Tablespoon salt
1/2 teaspoon pepper
1/4 teaspoon paprika
1/4 teaspoon garlic powder

Steps:

  • Preheat oven to 325 degrees.
  • Fill a large pot with salted water and bring to a boil. Cook your pasta according to package directions until just 1 minute shy of al dente (mine was 5 minutes). Drain well, then return to the pot and toss with 1 tablespoon olive oil so it doesn't stick together in a clump while making the sauce.
  • While the pasta is cooking, grate the cheeses. You are going to add the cheese in 4 stages, so it might be helpful to divide them into fourths now.
  • In a large saucepan, melt the butter over medium heat. Once the butter is melted, add the flour and whisk well, cooking for one minute until completely combined and the roux begins to look a bit like wet sand.
  • Slowly add the cream and 1 cup of the milk, whisking continuously, until smooth and completely combined. Add the remaining 2 cups of milk, whisking and cooking over medium heat until the sauce thickens a bit, about 3 to 4 minutes.
  • Stir in the salt, pepper, paprika and garlic powder, then add 1/4 of each of the grated cheeses except the medium cheddar, which you will save just for topping the mac & cheese. Once the cheese has melted, add another 1/4 of the grated cheeses and stir until it also melts and incorporated into the sauce.
  • Pour the sauce over the cooked pasta and stir to combine. Pour half of the pasta & sauce into a large 9x13" baking dish, then sprinkle another 1/4 of the grated cheeses over that layer, then repeat with the remaining pasta and sauce, the remaining cheese and finally sprinkle the grated medium cheddar over the top.
  • Transfer the macaroni & cheese to the oven and bake, uncovered, for 15 minutes, until the cheese is completely melted and bubbly. Serve immediately.
