For the Fried Steak Fingers
1 c. all-purpose flour
1 tsp. garlic powder
1 tsp. onion powder
1/4 tsp. paprika
1/2 tsp. cayenne pepper
Kosher salt
Freshly ground black pepper
3/4 c. milk (preferably whole or 2%)
2 large eggs
1 1/2 lb. cube steak, sliced into 1/2-inch-thick strips
Vegetable oil, for frying
For the gravy
4 tbsp. butter
1 1/4 c. milk (preferably whole or 2%)
1 tbsp. freshly chopped chives
Kosher salt
Freshly ground black pepper

Steps:

  • In a shallow bowl, whisk together flour and spices and season with salt and pepper. (Set aside 3 tablespoons for gravy.) In another shallow bowl, whisk together milk and eggs. Season steak generously with salt and pepper. Working in batches, dredge steak thoroughly in flour mixture to coat, then dip in egg mixture. Return steak to flour mixture and dredge once more.
  • In a large deep-sided skillet over medium heat, heat 1/2 inch oil until shimmering (about 350°). Using tongs, add steak strips, one by one, and cook, in batches, until completely golden, about 2 minutes per side. Drain on a paper towel-lined plate.
  • In a small skillet over medium heat, melt butter. Whisk in reserved flour mixture and cook until golden, 1 minute. Gradually whisk in milk and bring mixture to a boil. Reduce heat to low and simmer until gravy is thick. Stir in chives and season with salt and pepper.
  • Serve steak "fingers" with gravy for dipping.

1 1/2 lbs cube steaks
1 cup all-purpose flour, plus
3 tablespoons all-purpose flour, divided
1 1/2 teaspoons salt, divided
1 1/4 teaspoons pepper, divided
1 teaspoon paprika
2 1/2 cups milk, divided
3 eggs, beaten
4 tablespoons oil
butter

Steps:

  • Place 1 cup flour, 1/2 cup milk, and eggs in 3 separate shallow bowls in the working area.
  • Mix 1 tsp salt, 1 tsp pepper, and the paprika into the flour and mix well.
  • Season both sides of cube steaks with additional salt and pepper, if desired.
  • Dip cube steaks in milk, then dredge in seasoned flour.
  • Dip floured steaks in egg wash, then again in the seasoned flour.
  • Heat 2 tbsp oil in a large skillet on medium heat and do half the cube steaks at a time, or work with two skillets, if you desire.
  • Brown the cube steaks on each side, about 8-10 minutes total cooking time; remove from heat and set the steaks aside.
  • Drain all but 1 tbsp oil (if any- I don't usually have any, but the steaks are less greasy with less oil) from the pans.
  • Add enough butter to the pan to equal 3 tbsp along with the oil.
  • Melt the butter and add 3 tbsp flour and stir with a whisk to make a roux, deglazing the bottom of the pan, and cook for a few minutes on LOW heat; do not burn.
  • Slowly add the remaining 2 cups milk, and stir or whisk constantly until mixture comes to a boil and thickens; cook for another minute or so and remove from heat.
  • Serve Country Fried Steaks (Chicken Fried Steak, as we call it) with plenty of gravy on top, and mashed potatoes on the side (double gravy recipe if you use a LOT of gravy on your potatoes, etc).

¼ cup milk
1 cup all-purpose flour
1 (4 ounce) packet saltine crackers, crushed
1 ½ teaspoons seasoned salt
1 ½ teaspoons onion powder

4 (4 ounce) cube steaks

  • Whisk together the egg and milk in a shallow bowl; set aside.

Steak Fingers with Country Gravy: Crispy chicken fried steak strips, with ultra creamy white gravy for dipping. A dish that no one can resist!

2 pounds tenderized cube steak
1 1/2 cups all-purpose flour
3 tablespoons Cajun seasoning
2 teaspoons baking powder
3 1/4 cups milk, (divided)
3 large eggs
2 tablespoons Worcestershire sauce
5 tablespoons butter
Salt (and pepper)
Oil (for frying)

Steps:

  • Preheat the oven to 200 degrees F. Pat the cube steak thoroughly dry with paper towels. Then cut the steaks into strips approximately 1 to 1 1/2 inches wide and 3 to 4 inches long.
  • In a small bowl mix the flour, Cajun seasoning, and baking powder together. In another bowl, whisk together 3/4 cup milk, 3 eggs, and Worcestershire sauce. Place a large skillet over medium-high heat. Add enough oil to fill the skillet 1/4 inch deep.
  • Once the oil is between 350-375 degrees F, dip 6-8 steak strips in the flour mixture. Shake them off, then dunk the strips in the egg mixture. Shake off the drippings, then dunk back in the flour mixture. Shake off all excess flour. (Flour that falls off into the oil will burn and turn the oil dark.)
  • Gently place the strips in the hot oil and fry for 1-2 minutes per side. Use tongs to move the steak fingers to a paper towel lined plate. Add additional oil to the skillet if needed, and repeat with the remaining steak strips. Place the finished strips in the oven to keep warm.
  • Once all the steak fingers are fried, carefully wipe the skillet out with a paper towel. Place it back over medium heat and add the butter. Once melted, whisk in 1/4 cup of the remaining seasoned flour. Whisk until bubbling, then whisk in 2 cups of milk. Continue to whisk the gravy until it is thick. Taste, then season with salt and pepper as needed. Remove the gravy from heat. If the gravy starts to thicken too much, whisk in an additional 1/2 cup of milk.
  • Serve the steak fingers and warm country gravy together for dipping.

8 oz cube steak, 4 steaks, 8 oz (225 g) each
1 ½ teaspoons kosher salt, plus more to taste
1 teaspoon black pepper, plus more to taste
2 large eggs
2 ¾ cups whole milk, divided
1 ½ cups all-purpose flour, divided, plus 3 tablespoons
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon paprika
1 cup vegetable oil
3 tablespoons unsalted butter
½ cup heavy cream

Steps:

  • Preheat the oven to 225˚F (110˚C).
  • Set a steak in the center of a cutting board and cover with a piece of plastic wrap. Using a meat mallet, pound the steak evenly to ¼-inch (½ cm) thick. Season with salt and pepper on both sides. Repeat with the remaining meat.
  • In a wide, shallow dish, whisk together the eggs and 1 cup (240 ml) of milk. In a separate shallow dish, mix together the 1 ½ cups (190 g) of flour, pepper, salt, garlic powder, onion powder, and paprika.
  • Dredge the steaks in the flour mixture, then dip in the egg mixture, letting any excess egg drip off. Coat again in the flour mixture. Set aside for 10-15 minutes, until the coating has dried out a bit.
  • Meanwhile, heat the oil in a 10-inch (25.5 cm) pan over medium-high heat until it reaches 375˚F (190˚C).
  • Fry the steaks, 2 at a time, for 3 minutes, until golden brown and crispy. Flip and cook on the other side for 3 minutes more, until golden brown and cooked through when the internal temperature reaches 155˚-165˚F (170˚-175˚C). Transfer the steaks to a paper towel-lined plate or baking sheet and immediately season with salt. Once all of the steaks are done frying, transfer to the oven while you prepare the gravy.
  • Pour the hot oil into a heatproof bowl and let cool before discarding. 9. Leave any browned bits in the pan.
  • In the same pan, without wiping it out, melt the butter over medium heat. Add the remaining 3 tablespoons of flour, whisking to incorporate. Cook for 2-3 minutes, until the roux is a light brown color. Add the heavy cream and remaining milk. Bring to a simmer and cook, whisking constantly, until thickened, 5-7 minutes. Season with salt and pepper.
  • Ladle the gravy over the steaks and serve with your favorite side dishes.

2 pounds boneless round steak
Salt
Pepper
Spices (what ever you have available)
Beef tallow or grease
1 quart buttermilk
1 cup flour

Steps:

  • Cut steaks 3/4-inch thick. Pound the steaks with meat tenderizing hammer until about 1/4-inch thick. Season with salt and pepper, to taste, and rub on other spices if you have them.
  • Start heating beef tallow or grease in Dutch oven. Be sure you have enough grease in the pan to cover the steaks (at least 1-inch.) Put the buttermilk in bowl and put the flour on a plate. Wet the steaks in buttermilk and then drag through flour making sure both sides have flour on them. If a thicker crust is wanted, then repeat this procedure again. When grease just begins to smoke, then you are ready to drop in a steak and cook. Cook steak until golden brown on both sides turning steak in grease, if needed. Repeat until all steaks are cooked.

1 c. Flour
1 tsp. Seasoned Salt

Canola Oil And Butter For Frying
2 c. Milk (additional)

Steps:

  • Combine flour, seasoned salt, pepper, and cayenne in a dish. Whisk together milk and eggs in a separate dish. To bread the meat, first dredge in flour, then dip quickly in egg mixture, then put back into the flour to coat on both sides. Continue until all the meat is breaded. Heat canola oil with 2 tablespoons butter in a large skillet over medium to medium-high heat. Fry steak strips 4 or 5 at a time, turning midway through. When golden brown, remove from the pan to a paper towel-lined plate. Continue until all the meat is done. Cover loosely with foil to keep warm.To make the gravy, pour off all the grease from the pan. Add 1/4 cup of the grease back in, then sprinkle on 2 to 4 tablespoons of the flour mixture (or you can use fresh flour.) Whisk mixture till it becomes a paste (add more flour if you need to) and cook the paste over medium-low heat until it's deep golden brown. Pour in milk, whisking constantly. Allow the gravy to cook and thicken, whisking regularly and adding more milk if it seems too thick right off the bat. Season gravy with salt and pepper. Serve steak fingers with gravy and a salad. 1 egg, lightly beaten
1/3 cup milk

These golden and crispy deep-fried steak strips are what happens when chicken-fried steak meets chicken fingers. We like them dipped in a homemade "fry sauce" or bottled cocktail sauce, but ranch dressing would be great too.

1 pound boneless beef sirloin or cube steak (about 1/2-inch thick)
2 cups buttermilk
1 teaspoon Worcestershire sauce
Kosher salt and freshly ground black pepper
2 teaspoons granulated garlic
2 teaspoons dry mustard
2 teaspoons sweet paprika
Vegetable oil, for frying
2 cups all-purpose flour
Cocktail sauce, for serving, optional
French fries, for serving, optional
1/3 cup mayonnaise
1/3 cup ketchup
1 teaspoon Worcestershire sauce
1 teaspoon apple cider vinegar
1/2 teaspoon sweet paprika

Steps:

  • For the finger steaks: Trim the excess fat and silver skin from the steak and cut into strips about 1/2 inch wide and 2 to 3 inches long.
  • Whisk together the buttermilk, Worcestershire, 2 teaspoons salt and 1 teaspoon each pepper, granulated garlic, dry mustard and paprika in a large bowl. Add the steak strips to the buttermilk mixture, toss to coat, then cover and refrigerate for 2 hours.
  • For the fry sauce: Meanwhile, whisk together the mayonnaise, ketchup, Worcestershire, vinegar, paprika, a good pinch of salt and several grinds of pepper in a medium bowl until smooth and combined. Cover with plastic wrap and refrigerate until ready to serve, up to 2 days.
  • Fill a large Dutch oven with about 3 inches of oil. Attach a deep-fry thermometer and heat to 350 degrees F.
  • Whisk together the flour, 2 teaspoons salt and the remaining 1 teaspoon each pepper, granulated garlic, dry mustard and paprika in a shallow dish. Line a plate with paper towels.
  • Remove the meat from the marinade to a plate using a slotted spoon. Reserve the buttermilk mixture in the bowl. In batches, dredge the steak strips in the seasoned flour, then into the buttermilk mixture, and back again into the seasoned flour until well coated.
  • Place a few battered steak strips in the hot oil. Fry, stirring occasionally, until golden brown and crispy, about 4 minutes. Remove with a clean slotted spoon onto the prepared plate. Repeat with the remaining steak strips.
  • Serve the steak fingers with fry sauce, cocktail sauce and French fries if desired.

2 cups Canola oil for frying

Steps:

  • In a small baking dish, whisk together 1-teaspoon salt, 1/2-teaspoon pepper, buttermilk and egg. Marinate beef strips in mixture for 30 minutes.
  • Combine mustard and honey in a small bowl; set aside.
  • In a second small baking dish or loaf pan combine flour with remaining 1-teaspoon salt, remaining 1/2-teaspoon pepper, paprika, garlic powder and onion powder.
  • Remove beef from marinade one piece at a time, dredge in seasoned flour, place on a wire rack fitted over a sheet pan.
  • Heat oil in a deep fryer or Dutch oven filled 2-inches high to 350°F. Prepare a large plate topped with several paper towels. Fry in two batches 3 to 4 minutes or until breading is golden brown. Place steak fingers on prepared plate.
  • Serve steak fingers with honey Dijon dipping sauce.
