Blue Ribbon Fudge (Cook's Country) Recipe - (4.1/5) image

Number Of Ingredients 9

Stir the fudge constantly to prevent scorching. This fudge can be made in either a glass or metal baking dish.
4 cups sugar
1 (12 oz.) can evaporated milk
16 tablespoons (2 sticks) unsalted butter
2 cups walnuts or pecans, toasted and chopped coarse
1 (8 oz.) jar Marshmallow Fluff
2 teaspoons vanilla extract
12 ounces bittersweet chocolate, chopped
8 ounces unsweetened chocolate, chopped

Steps:

  • 1. Line 12 by 9-inch baking dish with 2 pieces of foil, placed perpendicular to each other, let edges of foil overhang pan. 2. Bring sugar, evaporated milk, and butter to boil in large, heavy-bottomed Dutch oven over medium heat, stirring constantly. Reduce to simmer and cook, stirring constantly, until mixture is light tan in color and registers 234 degrees on instant-read or candy thermometer, 7-12 minutes. 3. Take pan off heat, stir in walnuts, Marshmallow Fluff, and vanilla until uniformly combined. Let mixture cool to 200 degrees, about 7 minutes. 4. Stir in chocolates until smooth. Pour mixture into prepared pan and refrigerate, uncovered, until firm, about 4 hours. Using foil overhang, remove fudge from pan and cut into squares. (Fudge can be refrigerated in airtight container for up to 1 month.)

2 1/2 cups sugar
1 can (5 ounce size) evaporated milk
6 ounces semisweet chocolate bits
1 teaspoon vanilla extract
2 tablespoons butter
1 cup chopped walnuts

Steps:

  • Mix sugar and evaporated milk together in heavy pan. Mixture will be very thick. Cook on low heat and watch closely until it begins to boil. Let come to full rolling boil. Then boil exactly for 5 minutes. Remove from heat. Then add chocolate, beating until melted and smooth. Mix in butter and vanilla by hand. Last, mix in chopped nuts. Pour into buttered glass dish. Firms rapidly.

This is so easy and yet it is probably the best fudge I've ever had. I usually omit the pecans. My niece used this recipe, substituting 3-4 drops peppermint extract for the orange zest, and earned a blue ribbon at the county fair. Even my 12-16 year old 4H girls had no problems making it. Note: make sure you use fresh orange zest. Dried will make the fudge bitter. Also make sure you don't get any of the bitter white part of the rind when you are zesting your orange.

2 1/2 cups semi-sweet chocolate chips
1 (14 ounce) can sweetened condensed milk
1/2 cup chopped pecans (optional)
2 teaspoons orange zest (see notes above)

Steps:

  • Line a 8x8x2-inch baking pan with lightly buttered waxed paper or aluminum foil.
  • Set aside.
  • Melt chocolate chips with condensed milk in the top of a double boiler or in a bowl in the microwave.
  • Stir until smooth.
  • Remove from heat and stir in pecans and grated orange peel.
  • Spread in prepared dish and chill until firm.
  • Carefully remove fudge from pan using the edges of the foil.
  • Cut into squares.
  • Store covered in refrigerator.

cooking spray
¾ cup sifted all-purpose flour
1 tablespoon unsweetened cocoa powder
¼ teaspoon salt
1 pinch salt
6 tablespoons salted butter
5 ounces semisweet chocolate
1 ounce bittersweet chocolate
1 cup packed light brown sugar
2 eggs, lightly beaten
½ large banana, mashed
½ cup chopped toasted walnuts
½ cup semisweet chocolate chips

Steps:

  • Preheat the oven to 325 degrees F (165 degrees C). Spray the bottom of an 8x8-inch metal baking pan with cooking spray.
  • Mix flour, cocoa, and 1/4 teaspoon plus a pinch of salt together in a bowl and set aside.
  • Melt butter in a medium saucepan over low heat. Add semisweet and bittersweet chocolate to melted butter and stir until smooth. Remove from heat; set aside for 2 to 3 minutes.
  • Meanwhile, mix brown sugar, eggs, and banana by hand until combined, about 1 minute. Add melted chocolate mixture to banana mixture and stir well, about 1 minute more. Mix flour mixture slowly into chocolate, stirring just enough to combine. Fold in walnuts and chocolate chips. Spread batter into the prepared pan.
  • Bake in the preheated oven until a toothpick inserted into the center comes out with moist crumbs, 35 to 40 minutes. Remove from the oven and let cool in the pan on a wire rack for at least 2 hours before cutting.
