OVEN-FRIED SWEET POTATOES

Steps:
- Preheat oven to 450 degrees. Rearrange the racks in the oven, and place one rack in the middle of the oven.
- On a large baking pan, drizzle one tablespoon of extra virgin olive oil, and use your fingers to spread it evenly on the bottom of the pan. Set it aside.
- Wash and scrub each sweet potato and dry them with a paper towel.
- Leaving the skins on, cut the potatoes into 6 lengthwise to make long wedges, about 1-inch wide.
- Arrange the potatoes on the prepared baking pan in a single layer.
- Sprinkle over them with all the seasonings. Then drizzle with extra virgin olive oil over them, about 2 tablespoons.
- Bake for 15 minutes. Carefully remove them from the oven, and use kitchen tongs or slip a spatula under the potatoes to turn them over. Return them back to the oven and continue to bake for 5 minutes more.
- Remove and transfer to a serving platter and serve immediately.
SWEET POTATOES FOR TWO
I like this recipe because it can be prepared for two, or easily increased to accommodate a large gathering. The color and taste of sweet potatoes make them a must for any holiday dinner!

- Cut potatoes into chunks; transfer to a 1-qt. baking dish. Set aside. In a small saucepan, combine the brown sugar, butter, water and salt; bring to a boil. Pour over potatoes., Bake, uncovered, at 350° for 25-30 minutes or until syrup thickens, basting occasionally. Sprinkle with nutmeg.

SWEET POTATO SALAD
DH and I enjoyed a similar salad at the Court of Two Sisters in New Orleans several years ago. After many years of searching, this recipe from Southeran Living's America's Best Recipes comes closest. (Chilling time included in prep time).

Steps:
- Wash and dry sweet potates. Bake at 400F (skins on) for 30 minutes or until cooked.
- Cool sweet potatoes.
- Peel and cut potatoes in one inch cubes.
- In a serving bowl, combine green peppers and parsley with potates.
- In a separte bowl, whisk together the tarragon vinegar, honey, water, vegetable oil, salt, pepper and oregano.
- Pour over potate mixture. Toss gently to coat potatoes.
- Chill at least 3 hours.

TWO SISTERS' POTATO SALAD
My late sister and I concocted this recipe the summer of 1969. It has been a family favorite ever since. Whenever I serve this yummy salad I receive requests for the recipe. The different, but mild flavor and creamy texture is also liked by children who shy away from stronger potato salads.

Steps:
- Place whole potatoes with skins on in large pot of cold water. Cook on high heat until a knike inserted into potato comes out easily. Drain water and set potatoes aside to cool. While potatoes are cooling hard boil eggs. Dice onion and saute in olive oil. Dice celery. Mix mayonnaise, milk, and mustard together until smooth and creamy. Add salt, pepper, onion, celery, sweet pickle relish, and olives. Mix well.
- When potatoes are just warm to the touch, quarter and place in large bowl. Peel and finely chop eggs and add to potatoes. Add mayonnaise mixture and incorporate all ingredients. Refrigerate.
- I think this tastes better if it sets overnight, but however you serve it , it is delicious!

COURT OF TWO SISTERS SWEET POTATOES
Steps:
- Method: Combine butter, sugar, eggs, vanilla and milk in a mixing bowl and stir well. Fold in sweet potatoes. Place in a 2-quart casserole dish and top with the topping. Bake at 350 degrees for 20-25 minutes. Topping: Mix all together well. NOTE: This is the original recipe. Reduce sugar by half.
