How to Cook Couscous image

Learn how to cook couscous perfectly every time! It takes just 15 minutes and a handful of ingredients. This quick couscous recipe is a great side next to your favorite protein, or use it as a bed to a tasty stew.

1 cup low-sodium broth or water
Extra virgin olive oil
Kosher Salt
1 cup dry instant couscous (I used this couscous)
To Flavor (optional)
Pinch of cumin (or spice of your choice)
1 to 2 garlic clove (minced and sauteed in extra virgin olive oil)
2 green onions (chopped)
Fresh herbs to your liking (I used parsley and dill)

Steps:

  • In a saucepan, add broth or water. Add a drizzle of extra virgin olive oil and a pinch of kosher salt. Bring to a boil.
  • Now, toast the couscous. In a non-stick skillet or pan, heat about 1 to 2 tbsp extra virgin olive oil. Add the couscous and toss around with a wooden spoon until golden brown. This is an optional step but can really adds a great nutty flavor.
  • Stir couscous in the boiled liquid quickly and immediately turn the heat off. Cover and let sit for 10 minutes or until couscous has completely absorbed the broth or water.
  • Uncover and fluff with a fork.
  • You can serve couscous plain, or mix in spices and herbs to give it more flavor. If you like, add in a pinch of cumin, sautéed garlic, chopped green onions, and fresh herbs or your choice. Enjoy!

Yield Makes 4 to 36, depending on cookie-cutter size

Number Of Ingredients 5

6 tablespoons Israeli (pearl) couscous
1 tablespoon unsalted butter
Flaky sea salt, such as Maldon
8 ounces melted bittersweet chocolate (61 percent cacao)
Vegetable-oil cooking spray

Steps:

  • In a skillet over medium-high, toast couscous in butter, stirring constantly, until golden, 2 minutes. Transfer to a paper towel-lined plate. Sprinkle with salt; let cool.
  • Stir couscous into melted chocolate. Lightly coat 1 1/2-to-4 1/2-inch heart-shaped cookie cutters with cooking spray.
  • Place cutters on a baking sheet lined with parchment. Fill with chocolate. Refrigerate until set, at least 30 minutes. Gently press chocolates out of cutters. Enjoy immediately, or store in refrigerator, covered, up to 3 days.

How to Cook Pearl Couscous (Israeli Couscous) image

Tender, chewy, and slightly nutty, pearl couscous (Israeli couscous) is an irresistible side dish that comes together in just a few minutes, with very little effort. Simply toast it in some good extra virgin olive oil and boil it in water or broth on the stove until tender. It's as easy as that! You can enjoy pearled couscous at room temperature in a salad, or hot, tossed with some pesto or other sauces of your choice.

Extra virgin olive oil
1 cup pearl couscous
1 ½ cups water
Kosher salt
¼ cup chopped fresh parsley, (optional)
Zest of 1 lemon, (optional)

Steps:

  • Toast the couscous: In a medium saucepan, heat about 2 tablespoons extra virgin olive oil over medium-high until just shimmering. Add the pearl couscous and toss around to toast (the couscous pearls should turn a nice golden brown).
  • Boil the couscous: Boil 1 ½ cups of water and add it to the toasted pearl couscous. Season with kosher salt. Bring to a boil, then turn the heat to low. Cover and cook for about 14 minutes or until the pearl couscous is tender. Remove from the heat.
  • Season and enjoy! Taste and adjust salt to your liking. To finish, add the parsley and lemon zest (optional), toss and serve.
