RACH'S CAST-IRON COWBOY PAN PIZZA IS BBQ WITH A DEEP-DISH CRUST
Pulled chicken or brisket get tossed with BBQ pizza sauce and blanketed by 2 kinds of cheese in Rach's "Cowboy" Pizza made in a cast-iron pan.

Steps:
- Make Easy Pizza Dough (or use store-bought)
- Preheat oven to 525˚F to 550˚F (as high as it goes) with rack at center
- For sauce and meat, heat a large skillet over medium-high heat with oil, 2 turns of the pan, add onions, season with salt, and soften a few minutes, add ½ cup water and let it absorb, add garlic and stir, add 1 tablespoon pepper, chili powder, smoked paprika, oregano, cumin, coriander, brown sugar, vinegar, ketchup, Worcestershire, soy sauce, and stock, thicken at a simmer 10-15 minutes, then add meat to combine
- Preheat the cast-iron skillet (10-12 inches) over medium-high heat
- Stretch dough into an even round that will cover pan, using a bit of flour to keep it from sticking to a work surface
- Sprinkle cornmeal across the skillet and press dough into skillet and up sides as much as possible
- (Reminder: The pan is hot
- ) Spray the dough with EVOO and season with a little salt, pepper, and red pepper flakes
- Top the dough with meat sauce, cheeses and roasted red peppers, then place in oven
- Bake the pizza 14 to 15 minutes to deep golden, brown and bubbly
- While the pizza bakes, stir all the ingredients for Ranch Dressing in a bowl and funnel them into a squeeze bottle with the top trimmed to widen spout for thick dressing
- Drizzle the pizza with the ranch dressing and top with pickled jalapeño peppers or hot cherry pepper rings
COWBOY BBQ CHICKEN PIZZA
Whoa, cowboy! Here's a pizza you can take your hat off for. Its easy crust folds up over a meaty filling.

- Heat oven to 400°F. In medium bowl, stir Bisquick mix, sour cream and hot water with fork until soft dough forms. Place on surface dusted with Bisquick mix. Shape into a ball; knead 5 times. Roll dough into 14-inch circle; fold circle in half. Place on ungreased large cookie sheet and unfold.
- Spread chicken mixture over dough to within 2 inches of edge. Fold edge just to chicken mixture. Top with half of the bacon. Sprinkle with cheese and remaining bacon.
- Bake 20 to 25 minutes or until crust is light golden brown and cheese is melted.

- Preheat oven to 400 degrees F.
- Heat a 10-inch oven-safe skillet over medium-high heat and add smoked sausage, cook until browned. Add garlic, onion and bell pepper and cook until vegetables are soft, about 6 minutes.
- Stir in chili powder, cumin, salt, tomatoes with their juice and beans. Cook for 3 - 5 minutes, until mixture starts to bubble. Turn off heat and stir in cheese.
- Mix jalapeno into the prepared corn muffin mix. Spread corn muffin batter over the mixture and bake until golden brown and cooked through, 20 - 25 minutes.

COWBOY'S CLASSIC PIZZA
This pizza was created by myself and my Big Guy. We put it together a few times and every time we add alil more or alil less of something. This Cowboy Classic is very simple and quickly made. Ingredients are based on a medium size pizza and are estimated. Use more or less, depending on your taste.

Steps:
- Season chicken with creole seasoning and garlic powder. Pan fry cubes of chicken until fully cooked, set aside.
- Prep your pizza pan by spraying it with cooking oil.
- Stretch the uncooked pizza dough into a circle big enough to cover most of the pizza pan (best you can).
- Spread the dough onto the cookie sheet and press the edges to create a crust, score the dough with a fork for ventilation.
- Spread the tbsp of olive oil on the dough, especially the crust.
- Layer in this order:
- Tomato sauce, cubed chicken, diced green pepper, diced onion, mozzarella cheese. Sprinkle with oregano.
- Bake in preheated oven at 350F for 20 mins or until crust is golden and cheese is melted.

SERIOUSLY AMAZING COWBOY PIZZA
The idea of a meatloaf patty baked directly on top of bread and covered with cheese, spawned the idea for what I am calling Cowboy Pizza.

- 1. Preheat the oven to 450°F. 2. In a large skillet over medium-high heat, cook the bacon, flipping occasionally, until golden brown and crispy, about 10 minutes. Remove the bacon and let drain on paper towels. Pour off the grease from the pan and return it to the stove. 3. Cook the ground beef until mostly cooked through with very little pink, stirring frequently to break it into little pieces, 5-7 minutes. If necessary, drain off the grease and return the pan to the heat. Add salt and pepper to the cooked beef, then pour in the tomatoes with chiles and ½ cup of the BBQ sauce. Stir well. 4. Cook, stirring frequently, until the sauce has thickened and the beef has cooked all the way through, 3-5 minutes. Crumble and stir in the bacon. 5. Place the Italian bread halves cut side up on a baking sheet. Spoon 2 tablespoons of the remaining BBQ sauce over each bread half (using ¼ cup total). Top each bread half with half of the BBQ beef mixture, then spoon the last remaining ¼ cup of sauce over the meat mixture. 6. Sprinkle each with half of the shredded cheddar and bake for 10-15 minutes until the cheese is melted and bubbly. Notes: To save time, you could also cook the bacon in a separate pan at the same time you are cooking the meat. That would save you about 10 minutes.

- Heat oven to 425℉ (220℃). Place potatoes in shallow 1½- to 2- quart microwave-safe dish. Cover with plastic wrap, venting one corner. Microwave on HIGH 8 to 10 minutes until just tender; set aside. Coat 12-inch round pizza pan with vegetable cooking spray; press dough evenly into pan; prick all over with fork. Bake for 10 minutes; set aside.
