SAUSAGE, PEPPERS, ONIONS, AND POTATO BAKE
This is an Italian comfort food classic! The smell of this cooking in my kitchen transports me back to playing on the street in front of my Papa and Gigi's house in Brooklyn. I make 2 trays of this for every family get-together, and it's gone in a flash!

Steps:
- Preheat oven to 400 degrees F (200 degrees C).
- Heat 2 teaspoons olive oil in a large skillet over medium heat, and cook and stir the sausage until browned. Transfer the cooked sausage to a large baking dish.
- Pour 1/4 cup of olive oil into the skillet, and cook the potatoes, stirring occasionally, until browned, about 10 minutes. Place the potatoes into the baking dish, leaving some oil in the skillet.
- Cook and stir the green and red peppers and onions in the hot skillet until they are beginning to soften, about 5 minutes. Add the vegetables to the baking dish.
- Pour wine and chicken stock over the vegetables and sausage, and sprinkle with Italian seasoning, salt, and pepper. Gently stir the sausage, potatoes, and vegetables together.
- Bake in the preheated oven until hot and bubbling, 20 to 25 minutes. Serve hot.

ROASTED ITALIAN SAUSAGE AND POTATOES WITH MUSHROOMS AND PEPPERS
This is loosely adapted from Judith M. Fertig's recipe in Prairie Home Cooking. The original did not have any cheese or herbs. Either sweet or hot sausages will do; I've also made it with bratwurst. This is a very easy dinner, very nice for cold weather.

Steps:
- Preheat oven to 400°F.
- Combine herbs, olive oil, salt,pepper and potatoes and toss to mix.
- Place sausages and potatoes in large baking or roasting pan.
- Roast at 400° for 30 minutes, or until just beginning to brown, turning several times.
- Add a little more oil if the potatoes appear to be drying out.
- Add remaining vegetables and roast 45 minutes more, turning occasionally, until potatoes are brown on the outside and tender on the inside.
- Sprinkle with mozzarella and return to oven just until cheese is melted.

JACQUES PEPIN'S POTATOES FONDANTES
The credit for this recipe goes to Chef Jacques Pepin, thus the name of this dish and is a little tast of heaven. A nonstick skillet is crucial so the potatoes don't stick to the pan as the liquid evaporates.

Steps:
- Trim the potatoes of any eyes or damaged areas and wash well in cold water.
- Arrange as many potatoes as will fit in one layer in a 10-inch nonstick skillet (there should be a little room to spare; save any extra potatoes for another use).
- Add the rosemary, broth, oil, butter and salt. Bring to a boil over high heat. Reduce the heat to medium, cover the pan but leave the lid a tad ajar, and boil until the potatoes are tender when pierced with a fork, about 20 minutes. The liquid should still halfway surround the potatoes; if it doesn't, add more broth or water until it does.
- Remove the pan from the heat and press on each potato with a fork or 1/4-cup measure just until it cracks open. (do not press too hard) Set the pan over medium-high heat and cook, uncovered, until all the liquid has evaporated and the potatoes have browned on one side, about 10 minutes.
- Gently turn the potatoes and brown the other side, another 4 to 5 minutes.
- Remove the pan from the heat and let the potatoes rest for 5 minutes before transferring them to a serving platter.
- Sprinkle with the chives and serve immediately, passing the fleur de sel so diners can sprinkle some on if they want.

- Preheat the oven to 400°F. Cut a piece of non-stick aluminum foil to measure 32 inches long by 12 inches wide and place the foil on a regular cookie sheet with half of it extended beyond the sheet.
- Place all the sausages, vegetables, seasonings and oil on the foil on the sheet, reserving the parsley and mustard for later use. Fold the extended foil over the ingredients and secure the three open sides of the foil by rolling the edges of it twice on itself. Do not wrap it so the foil is tight around the ingredients; the food should be loose inside.
- Place the cookie sheet with the papillote in the oven for one hour. Remove from the oven and let rest for 10 minutes. Open the foil; the food should be steaming hot inside. Pour the ingredients and juice onto a large platter, sprinkle with the parsley, and serve immediately, with mustard, if desired.
