ORIGINAL FRENCH CRêPES SUZETTE



Original French Crêpes Suzette image

This easy crêpes Suzette recipe features orange crêpes with a buttery Grand Marnier orange sauce. This can be eaten for dessert or breakfast.

For the Crêpes:
1 cup all-purpose flour
1/2 cup milk
1/2 cup less 1 tablespoon water
2 eggs
2 tablespoons butter ( melted )
2 teaspoons orange juice
1 1/2 teaspoons orange zest
1/4 teaspoon salt
1 tablespoon butter (for cooking)
For the Orange Syrup:
16 tablespoons butter (divided)
4 tablespoons granulated sugar (divided)
4 ounces Grand Marnier (divided)
Topping: vanilla ice cream

Steps:

  • Gather the ingredients.
  • In a big bowl, vigorously whisk the flour, milk, water, eggs, 2 tablespoons of melted butter, orange juice, orange zest, and salt until the batter is completely smooth. Allow the batter to rest in the refrigerator for at least 20 minutes before making the crêpes.
  • Use some of the remaining melted butter to grease a crêpe pan , large skillet, or nonstick skillet. Heat up over low-medium heat.
  • Add 3 tablespoons of batter to the pan and swirl it until the bottom of the pan is covered with batter.
  • Cook the crêpe for 1 minute, or until the crêpe is slightly moist on top and golden underneath.
  • Loosen the edges of the crêpe, slide a spatula under it, and then gently flip it. If you don't have a spatula, use your fingers, a fork, or carefully flip it in the air using just the pan.
  • Cook for 1 minute and transfer the cooked crêpe to a plate to keep warm. Repeat the process with the remaining batter, lightly greasing the pan with melted butter every time. Set aside.
  • In a large skillet set over medium heat, melt half of the butter until it foams.
  • Remove the skillet from the heat and sprinkle half of the sugar over the melted butter.
  • Carefully add half of the orange liqueur. The mixture will ignite.
  • When the flame goes out, add each crêpe to the pan to coat both sides in the orange syrup.
  • Fold the crêpes into quarters or roll them up.
  • Melt the remaining butter in the same skillet, remove it from the heat, and add the remaining sugar and Grand Marnier.
  • For serving, place 1 or 2 crêpes per person on a plate, top with a scoop of ice cream, and drizzle with orange syrup. Serve immediately.
  • Enjoy.

1 cup all-purpose flour
1 teaspoon white sugar
¼ teaspoon salt
3 eggs
2 cups milk
2 tablespoons butter, melted

Steps:

  • Sift together flour, sugar and salt; set aside. In a large bowl, beat eggs and milk together with an electric mixer. Beat in flour mixture until smooth; stir in melted butter.
  • Heat a lightly oiled griddle or frying pan over medium high heat. Pour or scoop the batter onto the griddle, using approximately 2 tablespoons for each crepe. Tip and rotate pan to spread batter as thinly as possible. Brown on both sides and serve hot.

1 1/2 cup milk
2 1/2 Tbsp. sugar
3 eggs
2 1/4 Tbsp butter
Whip Cream*
Favorite Fruit*
Syrup*
These are just toppings. They are optional...

Steps:

  • Place all dry ingredients in a medium sized bowl and sift well. Beat eggs well in small bowl, then reserve. Then, add wet ingredients starting with reserved beaten eggs. Let the batter rest for 15-30 min or longer. This will cause the butter to rise to the top. Next, 1 Tbsp. of softened butter into pan. Then pour into pan with a medium size ladle at 1/2 to 3/4 full. Tbsp. are optional with equal amount. Spread batter around using handle and shaking until batter forms a perfect circle. Then wait until edges are brown and crisp and using thin spatula, place onto plate and serve hot. Top with whip cream and preferred fruits. Syrup is optional.

Yield Makes 10 to 12 crepes 6 inches in diameter, or 16 to 18 crepes 4 to 5 inches in diameter

Number Of Ingredients 12

3/4 cup cold milk
3/4 cup cold water
3 egg yolks
1 tablespoon granulated sugar
3 tablespoon orange liqueur, rum, or brandy
1 cup flour (scooped and leveled)
5 tablespoon melted butter
An electric blender
A rubber scraper
An iron skillet or a crêpe pan with a 6 1/2- to 7-inch bottom diameter
2 to 3 tablespoon cooking oil and a pastry brush
A ladle or measure to hold 3 to 4 tablespoon or 1/4 cup

Steps:

  • Place the ingredients in the blender jar in the order in which they are listed. Cover and blend at top speed for 1 minute. If bits of flour adhere to sides of jar, dislodge with a rubber scraper and blend 3 seconds more. Cover and refrigerate for at least 2 hour or overnight.
  • Brush the skillet lightly with oil. Set over moderately high heat until the pan is just beginning to smoke.
  • Immediately remove from heat and, holding handle of pan in your right hand, pour with your left hand a scant 1/4 cup of batter into the middle of the pan. Quickly tilt the pan in all directions to run the batter all over the bottom of the pan in a thin film. (Pour any batter that does not adhere back into your bowl; judge the amount of your next crêpe accordingly.) This whole operation takes but 2 or 3 seconds.
  • Return the pan to heat for 60 to 80 seconds. Then jerk and toss the pan sharply back and forth and up and down to loosen the crêpe. Lift its edges with a spatula and if the under side is a nice light brown, the crêpe is ready for turning.
  • Turn the crêpe by using 2 spatulas; or grasp the edges nearest you in your fingers and sweep it up toward you and over again into the pan in a reverse circle; or toss it over by a flip of the pan.
  • Brown lightly for about 1/2 minute on the other side. This second side is rarely more than a spotty brown, and is always kept as the underneath or nonpublic aspect of the crêpe. As they are done, slide the crêpes onto a rack and let cool several minutes before stacking on a plate. Grease the skillet again, heat to just smoking, and proceed with the rest of the crêpes. Crêpea may be kept warm by covering them with a dish and setting them over simmering water or in a slow oven. Or they may be made several hours in advance and reheated when needed. Crêpea freeze perfectly.)
  • As soon as you are used to the procedure, you can keep 2 pans going at once, and make 24 crêpea in less than half an hour.

  • Heat a skillet over medium-high heat and brush with oil. Pour 1/4 cup of crepe batter into pan, tilting to completely coat the surface of the pan. Cook 2 to 5 minutes, turning once, until golden. Repeat with remaining batter.
