CRAB AND RICOTTA CANNELLONI

1 box (8 ounces) cannelloni or manicotti pasta (about 12 shells)
1 cup whole milk ricotta cheese
3/4 cup grated Parmesan, plus 1/4 cup for sprinkling
1 egg yolk
1/2 cup chopped fresh basil leaves
1 pound lump crabmeat
1/4 teaspoon salt
1/4 teaspoon freshly ground white pepper
Bechamel Sauce, recipe follows
5 tablespoons unsalted butter
1/2 cup all-purpose flour
4 cups whole milk, warmed
1/2 teaspoon salt
1/4 teaspoon freshly ground white pepper
Pinch freshly grated nutmeg

Steps:

  • Bring a large pot of salted water to a boil over high heat. Add the pasta and cook until tender but still firm to the bite, stirring occasionally, about 8 to 10 minutes. Drain pasta.
  • In a large bowl, mix together ricotta, 3/4 cup Parmesan, egg yolk, basil, crab, salt, and pepper.
  • Preheat oven to 350 degrees F.
  • Fill the cannelloni with the crab mixture and place in a buttered baking dish. Top the filled cannelloni with the Bechamel Sauce and sprinkle with the remaining Parmesan cheese. Bake until bubbly and the top is golden brown, about 15 to 20 minutes. Serve immediately.
  • In a medium saucepan, melt the butter over medium heat. Add the flour and whisk until smooth, about 2 minutes. Gradually add the warm milk, whisking constantly, until the sauce is thick, smooth, and creamy, about 10 minutes (do not allow the sauce to boil). Remove from the heat and stir in the salt, pepper, and nutmeg. (The sauce can be made up to 3 days ahead. Cool and then cover and refrigerate.)

1 cup ricotta cheese (8 ounces)
1 cup lump crabmeat, such as peekytoe (8 ounces)
Coarse salt and freshly ground pepper
1/8 teaspoon red-pepper flakes
For the ravioli:
All-purpose flour, for baking sheet
90 wonton wrappers (two 12-ounce packages)
1 large egg, lightly beaten, for egg wash
Coarse salt
For the sauce:
1 stick unsalted butter
2 teaspoons lemon peel, very finely chopped, plus 2 teaspoons fresh lemon juice
Garnish: fresh chervil

Steps:

  • Make the filling: Mix together ricotta, crabmeat, 1/2 teaspoon salt, 1/8 teaspoon pepper, and the red-pepper flakes.
  • Make the ravioli: Lightly flour a baking sheet. Working in batches, arrange 45 wonton wrappers on a work surface; keep remaining wrappers covered with a damp paper towel. Mound 1 teaspoon crab filling in the center of each. Brush edges of wrappers with egg wash, and top each with another wrapper. Press edges to seal. Cut out circles using a 2 1/4-inch cookie cutter; transfer to baking sheet.
  • Bring a large pot of salted water to a boil. Working in 2 batches, cook ravioli until they rise to the top, 2 to 3 minutes.
  • Meanwhile, make the sauce: Heat a large skillet over medium heat. Melt 4 tablespoons butter, and heat until just bubbling and frothy. Transfer first batch of ravioli to skillet using a slotted spoon, along with about 2 tablespoons cooking liquid. Add 1 teaspoon chopped lemon peel and 1 teaspoon juice, and swirl to combine. Transfer to plates.
  • Repeat with second batch of ravioli. Garnish with chervil.

2 tbsp olive oil
2 courgettes , thinly sliced
250g tub ricotta
2 large eggs
small handful basil , chopped
pinch nutmeg
1 tbsp grated parmesan (or vegetarian alternative)
1 garlic clove , crushed
320g pack ready-rolled puff pastry
flour , for dusting

Steps:

  • Heat oven to 200C/180C fan/gas 6. Heat half the olive oil in a frying pan. Cook the courgettes for 5 mins until golden around the edges, then remove from the pan and set aside. Mix the ricotta with the eggs, most of the basil, the nutmeg, Parmesan and garlic. Set aside.
  • Unroll the pastry on a lightly floured surface - roll it out lightly to give an even surface. Line a baking tray with baking parchment and lay the pastry on top.
  • Spread the pastry with the ricotta mix, leaving a border of 1cm around the edge, then press the courgette slices into the ricotta. Bring the pastry sides up over the edge of the filling and pinch so that none seeps out the sides.
  • Bake for 30 mins until the tart is puffed up and golden. Serve warm, scattered with the remaining basil.

1 cup all-purpose flour, plus extra, for dusting
1/2 cup almond flour
1/4 teaspoon fine sea salt
1/2 cup (1 stick) unsalted butter, at room temperature
1/2 cup sugar
1 tablespoon honey
1 teaspoon pure vanilla extract
4 medium strawberries, chopped into 1/4 to 1/2-inch pieces to yield 1/2 cup
1/2 cup blackberries or raspberries, halved
1/2 cup blueberries
1 tablespoon lemon juice
1 tablespoon powdered sugar
1 1/2 cups whole milk ricotta
1/4 cup powdered sugar
2 teaspoons lemon zest
Special equipment: a 2 1/2-inch round cookie cutter

Steps:

  • For the crust: In a medium bowl, whisk together the all-purpose flour, almond flour, and salt. Set aside. In a stand mixer fitted with the paddle attachment, beat the butter and sugar on high speed until light and fluffy, 2 to 3 minutes. Beat in the honey and vanilla. With the machine running, gradually add the dry ingredients and blend until incorporated. Transfer the mixture to a work surface and knead into a dough. Wrap the dough in plastic wrap and refrigerate for 30 minutes.
  • Place an oven rack in the center of the oven. Preheat the oven to 350 degrees F. Line a baking sheet with parchment paper or a silicone liner. Set aside.
  • On a lightly floured work surface, roll the dough into a 12-inch diameter circle, about 1/4-inch thick. Using a 2 1/2-inch round cookie cutter, cut out circles of the dough and arrange on the prepared baking sheet. Gather any scraps of dough and gently knead together. Roll out until 1/4-inch thick. Cut out additional circles of dough and place on the baking sheet (there should be a total of 15 to 18 circles). Bake until slightly golden around the edges, 10 to 12 minutes.   • For the berries: In a medium bowl toss together the strawberries, blackberries, blueberries, lemon juice, and sugar. Let the mixture stand for 30 minutes.

  • To assemble the tartlets: Spoon 1 1/2 tablespoons of the ricotta topping in the center of each crust. Using a small spoon, make a shallow well in the ricotta topping and fill with a little of the berry mixture. Arrange on a platter and serve.

  • Cut roughly cherry tomatoes, put on paper towels and let drain. In the meantime, in a bowl, mix mayonnaise, vinegar, terragon and tabasco. Add crabmeat and mix. Sponge up the tomatoes and add to crab mixture. (You can prepare this step in advance, cover it, and put it in the fridge until next day).

8 tablespoons butter, diced (1 stick)
1/4 cup ice water
1 1/2 cups ricotta cheese
1 tablespoon grated onion
2 tablespoons grated parmesan cheese
1/2 teaspoon mustard powder
2 eggs
1 egg yolk
8 ounces crabmeat
2 tablespoons fresh parsley, chopped
1/2 teaspoon anchovy paste
2 teaspoons lemon juice
salt and cayenne pepper

Steps:

  • Sift the flour and a good pinch of salt into a mixing bowl, add the diced butter and rub it in with your fingertips, until the mixture resembles coarse breadcrumbs. Gradually stir in enough ice water to make a firm dough.
  • Turn the dough onto a floured surface and knead lightly. Roll out the pastry and use to line four, 4-inch tart-let tins. Prick the bases with a fork, then chill in the refrigerator for 30 minute.
  • Line the pastry shells with waxed paper and fill with baking beans. Bake in a preheated oven at 400* for 10 min, then remove the paper and the beans. Return to the oven and bake for another 10 minute.
