¼ cup extra-virgin olive oil, divided
1 (14.5 ounce) can Hunt's® Petite Diced Tomatoes, drained
⅓ cup chopped fresh basil
2 teaspoons minced garlic
¼ teaspoon kosher salt
⅛ teaspoon ground black pepper

Steps:

  • Preheat oven to 350 degrees F.
  • Place bread slices on a baking sheet. Brush tops with 2 tablespoons olive oil. Bake 12 to 15 minutes or until lightly toasted.
  • Combine remaining 2 tablespoons olive oil, drained tomatoes, basil, garlic, salt, and pepper in a small bowl.
  • Divide tomato mixture evenly over toasted bread. Serve immediately.

1/2 cup finely chopped shallots
2 tablespoons plus 1/4 cup olive oil, divided
2 garlic cloves, minced
2 cans (6 ounces each) lump crabmeat, drained
1 cup chopped seeded plum tomatoes
1-1/2 teaspoons minced fresh basil or 1/2 teaspoon dried basil
3/4 teaspoon minced fresh oregano or 1/4 teaspoon dried oregano
8 slices Italian bread (1/2 inch thick)

Steps:

  • In a large skillet, saute shallots 2 tablespoons oil until tender. Add garlic; cook 1 minute longer. Add the crab, tomatoes, basil and oregano; cook and stir for 5-6 minutes or until heated through. Remove from the heat., Brush both sides of each slice of bread with remaining oil. In another large skillet, toast bread for 1-2 minutes on each side. Cut each slice in half; top with crab mixture.

1 tablespoon olive oil
½ cup onion, chopped
½ teaspoon ground cumin
½ teaspoon chili powder
¼ teaspoon salt
2 chipotle peppers in adobo sauce, chopped
1 tablespoon adobo sauce from chipotle peppers
1 (14.5 ounce) can Hunt's® Fire Roasted Diced Tomatoes with Garlic
3 cups chicken broth
¾ cup heavy cream

Steps:

  • Heat olive oil in a saucepan over medium heat. Add onion and cook until soft and translucent, approximately 6-7 minutes. Add cumin, chili powder and salt. Stir to combine. Add chipotle peppers and Adobo sauce and stir.
  • Stir in tomatoes and chicken broth; bring to a simmer over low heat. Cover, and simmer 5 to 6 minutes. Remove from heat.
  • Cool mixture slightly. Process with an immersion blender until smooth. Stir in heavy cream. Adjust salt if necessary. Slowly heat bisque but do not boil. Serve immediately.

4 ounces dry pasta (I like fettucini)
8 ounces lump crabmeat, diced
10 grape tomatoes, halved
1/4 cup parmesan cheese (or more to taste)
1/2 cup mild salsa
1/3 cup tomato sauce
1 -3 canned chipotle chile in adobo (depending on how hot you like it...)
2 teaspoons adobo sauce
1 garlic clove, minced
1/4 teaspoon salt (optional)

Steps:

  • Cook pasta according to package directions. Drain and set aside.
  • Combine sauce ingredients in a small processor and process until smooth.
  • Spray a non-stick skillet with cooking spray and gently heat crab. Add noodles, tomatoes, and sauce. Stir and cook until heated through.
  • Top with parmesan cheese.

7 plum tomatoes, seeded and finely chopped
1 small red onion, finely chopped
2 tablespoons John Sierp's Garlic Oil
1 bunch fresh parsley leaves, chopped
10 fresh basil leaves, julienned
Sea salt
Freshly cracked black pepper
1 loaf Italian bread, sliced diagonally 1/4-inch thick
1/2 pound jumbo lump crab meat, picked over
Old Bay seasoning, for garnish

Steps:

  • In a medium bowl, stir together tomatoes, onion, garlic oil, parsley, basil, salt, and pepper. Refrigerate, covered, for at least 2 hours.
  • Preheat oven to 375 degrees. Lay bread slices in a single layer on a baking sheet; brush with olive oil. Bake until golden brown.
  • Spoon 1 tablespoon of tomato mixture onto bread; top with a piece of crab. Repeat with remaining bread slices. Season with Old Bay; serve immediately.

A friend recently made a batchof Mague's Chipotle Chutney and I thought how wonderful it would be on a bruschetta with tomato & Monteray Jack cheese. This is the result. The recipe for Mague's Chutney is recipe #117377 but you may substitute Chipoltle in Adobo sauce. Watch how much chipotle you use it can be very hot. I sometimes cut the cheese in little stick instead of grating it Serve as an appetizer.

12 slices French baguettes (1/2 inch slices)
2 tablespoons olive oil
6 tablespoons chipotle chutney or 6 tablespoons chipotle chiles in adobo
4 roma tomatoes, chopped
1 1/2 cups monterey jack cheese or 1 1/2 cups mozzarella cheese, grated
salt & pepper

Steps:

  • Paint one side of the baguette slices with olive oil , place oil side up on a cookie sheet and toast in a 300F oven until lightly browned, flip & just dry the bottom side.
  • A head of time chop your tomatoes, finely chop the chipotle peppers and grate your cheese.
  • Preheat oven to 350f.
  • 20 minutes before serving assemble the Bruschettas.
  • Evenly distribute the tomatoes on the 12 slices, top with apprx 1 tsp chpotlr and cheese.
  • Place in 350f oven for apprx 15 minutes or until the cheese has melted. I like to turn on the broiler for the last minute or two.

6 large slices sourdough
3 tbsp olive oil , plus extra for drizzling
200g mixed white and brown crabmeat (we used Cornish Fifty Fifty)
2 lemons , 1 zested and juiced, 1 cut into wedges to serve
½ tsp chilli flakes
50g Greek yogurt
150g bag mixed radishes , roughly chopped
handful parsley , leaves picked

Steps:

  • Heat oven to 200C/180C fan/gas 6. Brush the bread on both sides with oil, then roast on the top shelf of the oven for 10 mins until golden and crisp.
  • Mix together the crabmeat, lemon juice and 1/2 the zest, the chilli, yogurt and most of the radishes with some seasoning. Spoon the mixture onto the toasts, then top each with the leftover radishes, parsley and scatter over the remaining lemon zest. Season with pepper, drizzle with olive oil and serve with lemon wedges.

1 cup imitation crabmeat, chopped (or real crab)
2 chipotle chiles in adobo, Minced
3/4 cup tomatoes, chopped
6 teaspoons parmesan cheese
12 slices baguette, 1/2 inch thick toasted on one side

Steps:

  • Mix together the crab, chipotle & tomato.
  • Put a heaping tsp on each toasted baguette slice, toasted side down.
  • Shake 1/2 tsp of parmesan on top of each.
  • Bake in 375F oven for 10 minutes.
  • Brown under broiler for 2 minutes if necessary.
