- In a large nonstick skillet, saute the sauerkraut and onion in oil for 3-4 minutes or until sauerkraut is lightly browned. Stir in the apple, cranberries and 2 tablespoons broth. Cover and cook over low heat for 4-5 minutes, stirring occasionally. , Stir in the remaining broth; cover and cook 3-4 minutes longer or until heated through, stirring occasionally.

ORANGE APPLE CRANBERRY SAUERKRAUT

- Pull 3 outer leaves off the head of cabbage and set aside. Shred the remaining cabbage in a food processor, mandolin or chop with a knife. Add the remaining cabbage, shredded apples, ginger and sea salt to a big bowl.
- Massage the cabbage mixture with your hands until it breaks down and becomes soft (about 10 min).
- Place the cranberries and chopped up orange into a food processor and pulse into small chunks. Add this to the bowl with the cabbage and mix and squeeze the mixture together. The cabbage and fruit will have released all its juices at this point and become very wet.
- Pack the cabbage in the mason jar tightly, pushing it all the way down until it submerges in its own juices (this is the brine). Leave about 1½ inches of space from the top of the jar. If there is not enough brine to cover the cabbage, add more brine by combining a teaspoon of sea salt with 1 cup of water.
- Roll up the leaves and place them in the jar to push the cabbage under the brine. Screw on the jar loosely so gas can escape as fermentation takes place. Set on the counter for 7 days in a cool, shaded place. During fermentation the sauerkraut will bubble a little and become cloudy. If scum appears, remove it with a spoon.
- Remove the rolled up cabbage leaves and toss in the garbage before eating.
CRAN-APPLE CRISP

- For the filling: Preheat the oven to 375 degrees F. Coat a 9-inch pie dish with the softened butter. Set aside.
- In a large mixing bowl, stir together the cranberry sauce, granulated sugar and flour. Add the apples to the cranberry mixture, tossing to coat, and pour the mixture into the prepared pie dish.
- For the crumb topping: In the same mixing bowl, stir together the oats, flour, brown sugar, melted butter, pecans and cinnamon. Sprinkle the mixture over the apples in the dish.
- Bake until golden brown, 35 to 40 minutes. Serve warm or at room temperature.
AMISH CRAN-APPLE PIE
My mother made this one Thanksgiving and I ended up snatching most of it. One of the best tasting pies out there, in my opinion. The crust was taught to me by my Amish grandmother and easy to make.

- Preheat the oven to 375 degrees F (190 degrees C).
- Combine oil and milk in a liquid measuring cup; stir to combine.
- Combine flour, sugar, and salt in a medium bowl; mix together with a fork. Add oil mixture and mix until well combined. Press a little more than 1/2 of the crust mixture into the bottom and sides of a pie plate, using a spatula if necessary, as mixture will crumble easily.
- Combine cranberries and apples in a large mixing bowl. Add sugar, flour, and lemon juice; mix until fruit is evenly coated. Pour filling into the pie plate and crumble remaining crust mixture over the top.

- In a large bowl, gently combine apples, lemon juice, cranberries, cornstarch, sugar, syrup, and cinnamon.

- Grease 9-inch cake pan or springform pan with butter.
- In large bowl, mix 1 1/2 cups flour, 1/3 cup granulated sugar and the baking powder with whisk. Add cold cubed butter; cut in with pastry blender or 2 knives until coarse crumbs are formed.
- In small bowl, beat 1 egg, the water and vanilla. Pour over flour mixture, and stir until just moistened; mixture will be dry. Knead mixture until flour is incorporated and consistent dough forms. Press dough in bottom and 1 1/2 inches up side of pan. Refrigerate 15 minutes.
- Place pecans, 1/2 cup granulated sugar, 3 tablespoons flour and the orange peel in food processor fitted with steel blade attachment. Cover; process until nuts are finely ground. Add egg and softened butter; process again until blended. Spread mixture over chilled crust.
- Heat oven to 350°F.
- In medium bowl, mix cranberry sauce and orange juice until well combined and cranberry sauce is loosened. Spread over nut mixture, leaving 1 inch border.
- Cut apples into quarters, and place them cored side down on cutting board. Cut thin lengthwise slits in each quarter cutting to, but not through the cored side. Arrange apple quarters around outside edge of dough crust so they are just touching. Bake about 1 hour or until crust is lightly browned. Cool 10 minutes. Sprinkle with powdered sugar before serving. Store covered in refrigerator.

- Make the tart dough: Combine the flour, sugar, and salt in a food processor and pulse to blend. Add the butter and pulse until the mixture forms coarse crumbs. Add vanilla and water to processor, then slowly add flour and cinnamon sugar. Pulse just until a dough forms, adding a little extra ice water if necessary. Divide the dough in half, and shape each half into a 1-inch-thick round. Wrap 1 disk tightly in plastic wrap and refrigerate for at least 1 hour; freeze the other for future use.
- Put a pizza stone or cookie sheet in the oven and preheat the oven to 425 degrees F for 45 minutes. Remove the dough from the refrigerator about 15 minutes before rolling to soften it slightly.
- Place the dough round between 2 sheets of parchment paper and roll into a 13-inch round (about a 1/4-inch thickness), flouring the round lightly as needed to keep the dough from sticking. Remove the top sheet of parchment. Use the rim of a small round bowl to make 6 individual crostatas. Cut around the edge of the bowl, in the dough, with a sharp knife. Slide a pizza peel or rimless baking sheet under the bottom sheet of parchment, and remove excess dough from crostatas.
- To make the filling, combine the apples, sugar, flour, and cinnamon in a bowl and toss well. Add cranberry sauce and salt and toss again, briefly. Paint the edges of the crostatas with egg yolk wash. Fill the center of the dough rounds with the apples (about 1/2 cup each) in an even layer, leaving a border of about 1 1/2 inches. Fold the border up and over the apples to make a rim. Brush the rim with egg wash, then sprinkle with coarse sugar. Trim the excess parchment with scissors, and press sides together.
- Use the pizza peel or baking sheet to transfer the crostatas, still with parchment underneath, to the oven, sliding it, with the paper, directly onto the pizza stone. Bake until the crust is nicely browned and the apples are bubbling, about 40 minutes. Remove from the oven with the peel or baking sheet and let cool on a rack for 15 minutes before serving. Serve warm. Note: This can be made hours ahead and reheated before serving.
