2 cans (one 20 ounces, one 8 ounces) crushed pineapple, drained
1 package (10 ounces) miniature marshmallows
1 cup green maraschino cherries, quartered
1 cup red maraschino cherries, quartered
1 teaspoon lemon juice
3 cups heavy whipping cream, whipped

Steps:

  • In a large bowl, combine the cranberry sauce, pineapple, marshmallows, cherries and lemon juice. Fold in whipped cream. , Spoon into an ungreased 13-in. x 9-in. dish. Cover and freeze overnight. Remove from the freezer 10 minutes before serving.

1 tablespoon mayonnaise

In South GA, it gets HOT! As a diabetic, my DH's mother (Nana) eats a little of this to cool down and to raise the blood sugar a bit. I don't know about that...I just think it's an interesting combo of ingredients (unlike others posted on Zaar) that I can't get enough of....but she's right about one thing. Little squares of this is great to pop on a really hot day! Cut into little squares and put into a airtight container..it stays soft enough in my freezer to eat right away. This is easy to double and/or freeze in individual serving cups for the Holidays. Put the individual cups in freezer bags. Cook time is freeze time

4 cups fresh cranberries
2 ½ cups white sugar
½ cup orange juice
¼ cup lemon juice
2 cups frozen whipped topping (such as Cool Whip®), thawed

Steps:

  • Bring water to a boil in a saucepan over high heat and add cranberries and sugar. Reduce heat and let simmer until berries pop open, about 15 minutes. Pour into a colander set over a freezer-proof bowl. Mash or press out cranberry juices and discard skins, unless you want to use them for something else.
  • Stir orange juice and lemon juice into the cranberry juice. Freeze until mushy, about 1 hour.
  • Stir in whipped topping and mix well. Freeze, stirring occasionally, for 24 hours.
