Cream Cheese Filled Carrot Muffins Recipe

  1. carrots
  2. all-purpose flour
  3. sugar
  4. baking soda
  5. salt
  6. ground cinnamon
  7. ground allspice
  8. ground nutmeg
  9. ground cloves
  10. egg
  11. vegetable oil
  12. cream cheese


  1. puree carrots in a food processor until smooth
  2. in a large bowl combine flour , sugar , baking soda , salt , and spices
  3. in a small bowl , whisk the pureed carrots , egg and oil
  4. stir into dry ingredients until moistened
  5. fill 12 greased muffin cups one-third full
  6. in a smal mixing bowl beat filling ingredients until smooth
  7. drop cream cheese mixture by tablespoonfuls into center of each muffin
  8. top with remaining batter
  9. bake at 350f for 20-25 minutes or until toothpick comes out clean
  10. cool for 5 minutes before removing from pan
