CREAM CHEESE DANISH WITH FRUIT RECIPE
This cream cheese danish is a flaky puff pastry with a luscious cream cheese filling and fruit topping- perfect for both breakfast and dessert!

Steps:
- Preheat the oven to 400 degrees F.
- Place the puff pastry sheets on a non-stick surface such as parchment paper or a baking mat.
- Use a 4-inch round cookie cutter or drinking glass rim to cut 4 circles out of each sheet of pastry.
- Using a small knife or a smaller cookie cutter, score a circle about ½ inch in from the edges of the pastry rounds.
- Use a fork to prick all over inside the smaller circle.
- Place the cream cheese, sugar and vanilla extract in the bowl of a mixer. Beat until smooth and creamy.
- Gently spread the cream cheese filling inside the smaller circle of each pastry round.
- Brush the edges of the pastries with beaten egg and sprinkle with coarse sugar.
- Bake for 17 to 20 minutes or until edges are golden brown.
- Cool, then spoon 1 tablespoon of pie filling into the center of each pastry. Serve.

- Preheat the oven to 400 degrees F. Line a sheet pan with parchment paper.
- Place the cream cheese and sugar in the bowl of an electric mixer fitted with a paddle attachment and cream them together on low speed until smooth. With the mixer still on low, add the egg yolks, ricotta, vanilla, salt, and lemon zest and mix until just combined. Don't whip!
- Unfold 1 sheet of puff pastry onto a lightly floured board and roll it slightly with a floured rolling pin until it's a 10 by 10-inch square. Cut the sheet into quarters with a sharp knife. Place a heaping tablespoon of cheese filling into the middle of each of the 4 squares. Brush the border of each pastry with egg wash and fold 2 opposite corners to the center, brushing and overlapping the corners of each pastry so they firmly stick together. Brush the top of the pastries with egg wash. Place the pastries on the prepared sheet pan. Repeat with the second sheet of puff pastry and refrigerate the filled Danish for 15 minutes.
- Bake the pastries for about 20 minutes, rotating the pan once during baking, until puffed and brown. Serve warm.

- Preheat the oven to 400 degrees F. Line 2 baking pans with parchment paper.
- Beat the whole egg with 1 teaspoon of water in a small bowl; set aside.
- Beat the egg yolk, cream cheese, sugar, lemon juice and vanilla in a medium bowl with an electric mixer on medium-high speed until smooth.
- Lay out the 2 sheets of puff pastry and cut each into 4 squares. Fold the corners of the squares over by about 1 inch to make octagon shapes. Spoon the cream cheese mixture evenly into the center of each (about 2 tablespoons per); do not spread the cream cheese. Brush all of the exposed pastry with the egg wash, then dust generously with sugar.
- Bake until puffed and golden brown all over, about 18 minutes. Cool slightly before serving.

- Flatten each roll into a 3-inch circle. Place on a large sprayed baking sheet. Cover with sprayed plastic wrap and let rise until double in size. While rolls are rising, combine cream cheese, sugar and lemon juice until smooth. Remove wrap from rolls. With fingertips press indentations in the center of each roll. Fill with about 1 tablespoon of cream cheese mixture. Bake at 350°F for 15-20 minutes or until light golden brown.Combine glaze ingredients and brush over rolls while warm. Drizzle more glaze on top, if desired.

- Place the pastry sheets on work surface; cut each sheet into fourths.
- Have 2 baking sheets lined with parchment or Silpat ready.
- In a bowl, beat the cream cheese, half & half, egg, powdered sugar, and lemon zest.
- Divide the mixture among the 8 squares of pastry, placing the cheese in the center of each square.
- Top each with a tablespoon of fruit choice. Cut a small slit in the corners of each pastry square, then fold the pastry over the cheese so that the center is exposed. Sprinkle with sliced almonds.
- Bake in a 425* oven for 20 minutes or until golden.

- Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x13 inch baking pan.
- Line bottom of baking pan with 1 can of crescent rolls. Pinch all seams together to seal.
- In a large bowl, mix together cream cheese, white sugar, lemon juice, vanilla extract and sour cream. Spread filling on top of rolls. Place second can of rolls on top of filling.
- Bake in preheated oven for 20 to 30 minutes.
