Good things come in little packages with these melt-in-your-mouth holiday appetizers. Besides crabmeat, I've used whipped cream or pudding as the filling to create bite-sized desserts. They're perfect Christmas finger foods!

1 cup water
1/2 cup butter, cubed
1/2 teaspoon salt
1 cup all-purpose flour
4 eggs
FILLING:
1 package (8 ounces) cream cheese, softened
1/4 cup mayonnaise
1 can (6 ounces) crabmeat, drained and cartilage removed
1/2 cup shredded Swiss cheese
1 tablespoon minced chives
1 teaspoon garlic salt
1 teaspoon Worcestershire sauce
1/4 teaspoon pepper

Steps:

  • In a small saucepan, bring the water, butter and salt to a boil. Add flour all at once and stir until a smooth ball forms. Remove from the heat; let stand for 5 minutes. Add eggs, one at a time, beating well after each addition. Continue beating until mixture is smooth and shiny. , Drop by rounded teaspoonfuls 2 in. apart onto greased baking sheets. Bake at 400° for 25-30 minutes or until golden brown. Remove to wire racks. Immediately cut a slit in puffs to allow steam to escape. When cool, split puffs open; remove tops and set aside. Discard soft dough from inside. , In a small bowl, beat cream cheese and mayonnaise until smooth. Stir in the remaining filling ingredients. Just before serving, spoon filling into puffs; replace tops.

2 1/2 cups whole milk
1 tablespoon pure vanilla extract
1 cup sugar
2/3 cup cake flour
sifted
5 extra-large egg yolks
2 teaspoons salted butter
1 cup water
6 tablespoons unsalted butter
1/8 teaspoon salt
1 cup all-purpose flour
4 extra-large eggs

Steps:

  • For the Italian custard cream: Put the milk and the vanilla in a saucepan and bring to a simmer over medium heat
  • In a bowl, whip together the sugar, flour, and egg yolks with a hand mixer
  • Ladle a cup of the milk-vanilla mixture into the bowl and beat to temper the yolks
  • Add the yolk mixture to the pot and beat over medium heat with the hand mixer until thick and creamy, about 1 minute
  • As you are beating, move the pot on and off the flame so that you don't scramble the eggs
  • (Buddy's Tip: The longer you cook this cream, the thicker it will become, so you can -- and should -- adjust the texture to suit your taste
  • ) Remove the pot from the heat, add the butter, and whip for 2 minutes to thicken the cream
  • Transfer to a bowl
  • Let cool, cover with plastic wrap, and refrigerate at least 6 hours or up to 1 week
  • (To make chocolate custard cream, add 1½ ounces melted, cooled unsweetened chocolate along with the butter
  • For a richer chocolate flavor, add a little more
  • ) For the choux pastry: Put the water, butter, and salt in a heavy saucepan and bring to a boil over high heat

  • Transfer the mixture to the bowl of a stand mixer fitted with the paddle attachment

  • ) Bake the cream puff shells in the oven, in batches if necessary, until they are golden brown and they have set enough that you can pick them up (test by gently pinching one with your thumb and forefinger to see if it can be lifted), 15 to 20 minutes
  • Remove the tray from the oven and let the shells cool on the tray for 20 minutes

1 7 1/2-ounce can refrigerator biscuits
1 cup shredded monterey jack cheese
1 scallion, white part and some green, chopped
1/2 cup mayonnaise
1/2 pound baby shrimp, cooked and peeled
1/2 teaspoon chopped fresh dill

Steps:

  • Preheat the oven to 350 degrees F. Coat a miniature-muffin tin with cooking spray.
  • Split each biscuit in half and place each half in a muffin cup, pressing it into the bottom and up the sides.
  • In a medium-size bowl, mix the cheese, scallion, mayonnaise, shrimp and dill. Place 1 tablespoon of the shrimp mixture on top of each biscuit. Bake for 20 minutes, or until the puffs are golden and bubbling.

3/4 pound fresh shrimp, shelled and deveined
1 tablespoon butter
3 tablespoons finely chopped onion
1 tablespoon curry powder
1 cup heavy cream
3 tablespoons finely chopped chutney
Salt, if desired
Freshly ground pepper
24 cream puffs (see recipe)

Steps:

  • Cut the shrimp into half-inch or slightly smaller pieces. There should be about one and one-quarter cups. Set aside.
  • Melt the butter in a saucepan and add the onion. Cook, stirring, until wilted. Add the curry powder and stir to blend.
  • Add the cream and chutney and cook down to about half a cup. Add salt and pepper to taste. Add the shrimp and cook, stirring, one or two minutes or until the shrimp lose their raw look throughout.
  • Slice off the tops of all the cream puffs. Spoon an equal portion of the mixture into each cream-puff bottom. Replace the tops and serve.

1/4 cup butter
1/2 cup water
1/2 cup all-purpose flour
1/4 teaspoon salt
2 large eggs
12 ounces canned tiny shrimp or 12 ounces canned tiny fresh shrimp
1 celery, , finely chopped
3 tablespoons finely chopped green onions
3 large hardboiled egg, chopped
2/3 cup mayonnaise
1/4 teaspoon salt
2 tablespoons fresh lemon juice

Steps:

  • TO MAKE PUFFS------------.
  • Preheat oven to 400 F degrees.
  • In a medium size saucepan, combine butter and water; heat to boiling.
  • Stir in flour and salt using a wooden spoon.
  • Stir until butter/flour mixture forms a thick, smooth base that follows the back of the spoon around the pan.
  • Remove from heat; cool slightly.
  • Using a wooden spoon, mix in eggs one at a time until mixture is thick and smooth.
  • (This is very important to make sure that the mixture is smooth.) Drop by teaspoons onto a lightly greased cookie sheet; space 1 inch apart.
  • Bake in preheated 400 F oven for 20 to 25 minutes or until puffed and golden; let cool.
  • PUFF FILLING-------------.
  • Rinse shrimp in cold water; drain well.
  • In a medium bowl, combine shrimp, chopped celery, chopped green onions and chopped hard cooked eggs; mix well.
  • In a separate bowl using a whisk, blend together mayonnaise, salt and lemon juice; fold into shrimp mixture and chill for about 1/2 hour in refrigerator.
  • TO ASSEMBLE PUFFS-----------------.
  • Pull or cut tops off the puffs and set aside with each puff.
  • Remove any soft membrane from inside puff and discard.
  • Stuff with chilled filling.
  • Replace tops of puffs.
  • Refrigerate until ready to serve.
  • You can also use crab in place of shrimp.

2 cups heavy cream
1 cup milk
½ cup butter
1 cup water
¼ teaspoon salt
1 cup all-purpose flour

Steps:

  • Mix together vanilla instant pudding mix, cream and milk. Cover and refrigerate to set.
  • Preheat oven to 425 degrees F (220 degrees C).
  • In a large pot, bring water and butter to a rolling boil. Stir in flour and salt until the mixture forms a ball. Transfer the dough to a large mixing bowl. Using a wooden spoon or stand mixer, beat in the eggs one at a time, mixing well after each. Drop by tablespoonfuls onto an ungreased baking sheet.
  • Bake for 20 to 25 minutes in the preheated oven, until golden brown. Centers should be dry.

4 cups fresh spinach leaves
salt and pepper to taste
1 sheet frozen puff pastry, thawed
4 jumbo shrimp, peeled and deveined
4 ounces crabmeat, drained and flaked
¼ cup bechamel sauce
1 tablespoon chopped shallots
1 tablespoon chopped fresh tarragon
1 egg, beaten

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Grease a baking sheet
  • Heat oil in a large skillet over medium heat. Add spinach; cook and stir until wilted, about 3 minutes. Season with salt and pepper. Drain off any excess liquid; set aside.
  • Lay the sheet of puff pastry out on a clean surface, and cut into 4 squares. Prick lightly with fork.
  • In a medium bowl; mix crabmeat, bechamel sauce, shallots, and tarragon until well blended.
  • Cut prawns lengthwise and open them up to form a butterfly shape. Lay one shrimp in the middle of each pastry square with open side facing up. Stuff each shrimp with an equal amount of spinach and top with a heaping tablespoon of the crab mixture. Fold over pastry to make a triangle, and press the edges to seal. Place on the baking sheet, and brush with beaten egg.
  • Bake in preheated oven until golden brown, 15 to 20 minutes. Serve warm.

1 cup flour, all purpose
1/2 cup butter
6 tbsp cream cheese, light
2 cups shrimp, cubed
2 tbsp butter
3/4 cup onion, finely chopped
3 cloves garlic, chopped
2 tbsp parsley, coarsely chopped
1 cup water
1.5 tbsp flour, all purpose
salt and pepper (to taste)

Steps:

  • In a mixer, combine flour, butter and cream cheese.
  • Mix until dough forms a ball and cleans the sides of the bowl.
  • Wrap dough in plastic wrap and chill for 15 minutes.
  • Add butter, onion and garlic and parsley to the pan on stove top. Saute for 2 to 3 minutes.
  • Add the shrimp, along with some salt and pepper and mix together. Saute for another 1 minute.
  • Combine cool water with flour until you have a smooth milky mixture.
  • Add the flour water mixture to the pan, stir together a few times and put aside to cool before filling cups.
  • Remove dough from the fridge and shape dough into 2 dozen 1-inch balls. Place each in a paper-lined or greased miniature (1 ¾"-inch) muffin cup.
  • Press dough on bottom and sides of each cup.
  • Scoop 1 tbsp of the cool shrimp filling and place inside each cup.
  • Bake in a 365°F preheated oven for 25 minutes or until golden brown and filling is set.
  • Cool in pans on a wire rack.

2 tablespoons butter
1 tablespoon minced shallot
2 tablespoons finely chopped sweet red peppers
2 tablespoons flour
1 cup half-and-half cream (10%)
2 cups crabmeat
1 cup peeled raw shrimp (thawed)
1/4 cup dry sherry
3/4 cup sliced mushrooms (regular white or mixed variety)
1/4 cup grated lightly smoked cheddar cheese
1/4 cup grated parmesan cheese
2 sheets puff pastry, thawed

Steps:

  • Melt butter, add onion and red pepper and saute until just softened.
  • Add flour and stir to incorporate the flour with the butter/onion mixture. Slowly add the cream, stirring constantly until all cream has been added. Cook until thick and smooth. Add crabmeat, raw shrimp, mushrooms and sherry to the sauce and cook until shrimp are pink through.
  • Stir in the grated cheeses. Let simmer until reduced and thickened a little more.
  • Line a deep dish pie plate (or any other type of ovenproof dish) with the pastry (keep the parchment paper and put that down first so the pastry won't burn to the bottom).
  • Add the crab/shrimp mixture. Put another sheet of pastry (no parchment) on the top, pinch edges together. Cut vent holes in the top and brush with a little melted butter. Sprinkle with more cheese if you wish.
  • Bake at 350 for about 30 minutes or until the pastry is puffed and golden.

1 c hot water
1/2 c butter
1 c flour
4 eggs
1/2 tsp salt
4 can(s) 6 oz size, baby shrimp
1-1/2 c chopped celery
3 eggs, hard boiled
3 tsp onion salt
1 tsp black pepper
2 pkg 8 oz, cream cheese
3/4 c mayonaise

Steps:

  • 1. Put hot water, butter, and salt in sauce pan and bring to a boil. Add the flour and stir well until the mixture starts to pull away from the sides of the pan. Using a mixer, then add your eggs one at a time, beating after each egg very well. This step is very important. Drop by teaspoon onto baking sheet and bake for 10 minutes at 425º. Reduce oven temperature to 400º and bake for another 23 minutes. They should be slightly browned and this time could vary so keep checking them. Remove from oven and cool.
  • 2. Mix all of the remaining ingredients together for the filling. Split the cream puffs when they are cool and fill with the filling mixture. Filling mixture keeps well in the fridge for several days.

1 Recipe for Cream Puff Pastry for "mini" profiteroles
(such as Epicurious recipe: Cream Puffs with Vanilla Ice Cream and Chocolate Sauce) -- can be made ahead and frozen until day of tailgate or party.
1 pound large or medium shrimp, shell on
2-3 stalks celery
1/2 to 3/4 cups mayonaise

Steps:

  • Bake "mini" sized cream puffs according to directions. Should have about 48 cream puffs. Cool completely (be sure to make a small slit or skewer a small hole in each so that steam can escape as they are cooling and they do not get soggy) then cut through the middle horizontally but not all the way through, leaving a "hinge" on one side. Store in zip lock bags if taking on the road. Cook shrimp in heavily salted, boiling water approximately 3-4 minutes or until pink & tender and just done. Strain then cool in ice bath to stop cooking process. Drain. Peel & devein. Chop shrimp into medium dice (4-6 pieces per shrimp) and place in large bowl. Cut celery into narrow julienne strips, and then cut across into very thin pieces or fine dice. Add to shrimp in bowl. Add mayonaise to shrimp, 1/4 cup at a time. Only use enough to coat shrimp and celery; not too heavy. Salt & pepper to taste. Put shrimp mixture into a large zip lock plastic bag and chill to blend flavors, at least 1/2 hour. When ready to serve, arrange mini cream puffs on a serving plate. Snip a bottom corner of the shrimp bag with scissors, to use like a pastry bag. Fill each cream puff bottom until filling peaks out a little with "lid" closed down so your guests can see what's inside, about 1-2 Tablespoons each depending on the size of your cream puffs. Serve immediately. Only fill as many as you will eat in a short time as the cream puffs can start to get soggy if they sit too long.
