FRESH CREAM VANILLA CAKE



Fresh Cream Vanilla Cake image

This Italian Vanilla Cake is quite an easy cake to make. Made with fresh cream and no butter but with the added touch of citrus.

1 1/2 cups cake / pastry flour* ((180 grams))
3/4 cup granulated sugar ((150 grams))
1 cup + 2 tablespoons whole / whipping cream** ((270 grams))
1 large egg**
1 large egg yolk**
1 1/2 teaspoons baking powder
3/4-1 teaspoon vanilla
1 pinch salt
1 zest of lemon / mandarin or orange**
2-3 tablespoons icing / powdered sugar for dusting

Steps:

  • Pre heat the oven to 350F (180C), grease and flour an 8 inch (20-22cm) cake or bundt/tube pan.
  • In a medium bowl whisk the flour, baking powder and salt, set aside.
  • In the bowl of your stand up mixer or large bowl, beat on medium speed the eggs and sugar until light and fluffy (5-6 minutes), then add the vanilla, and then slowly add the cream while beating on medium / low for 2 minutes, add the flour mixture and zest, beat on medium speed to combine until smooth.
  • Pour the batter into the prepared pan and bake for approximately 35-40 minutes or until toothpick comes out clean. Let cool completely before removing from pan. Dust with powdered sugar before serving. Enjoy!

2 ½ cups bleached all-purpose flour
¼ cup cornstarch
4 teaspoons baking powder
½ teaspoon salt
2 teaspoons ground ginger
1 teaspoon ground cinnamon
½ teaspoon ground nutmeg
½ teaspoon ground allspice
½ teaspoon ground cloves
1 cup milk
3 large eggs
2 teaspoons vanilla extract
1 cup unsalted butter, softened until easily spreadable
2 cups dark brown sugar

Steps:

  • Adjust oven rack to middle position and heat oven to 350 degrees. Grease and lightly flour a metal or disposable foil 9-by-13-inch pan. Whisk dry ingredients and spices in a large bowl. Mix milk, eggs and vanilla extract in a 2-cup measuring cup.
  • Beat softened butter into dry ingredients, first on low, then medium, until mixture forms pebble-sized pieces. Add about 1/3 of the milk mixture and beat on low until smooth. Add remaining milk mixture in two stages; beat on medium speed until batter is just smooth. Add the sugar; beat until just incorporated, about 30 seconds. Pour batter into cake pan.
  • Bake until a cake tester or toothpick inserted into the cake's center comes out clean, about 40 minutes. Set pan on a wire rack; let cool for 5 minutes. Run a knife around the pan perimeter and turn cake onto rack. Let cool.

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x9-inch square pan.
  • Beat eggs in a small bowl until very thick. Add the sugar and the vanilla, beating well.
  • Combine the flour, baking powder, and salt. Add the flour mixture in three parts, alternating with the whipping cream, mixing until combined. Pour the batter into the prepared pan.
  • Bake in preheated oven until a toothpick inserted near the center comes out clean, 30 to 40 minutes.

1 can (16-ounce) cream cheese frosting, Betty Crocker
1 tablespoons garam masala, McCormick Gourmet Collection
1 cup chopped walnuts, Diamond

Steps:

  • Preheat oven to 350degreesF. Lightly coat an angel-food cake pan or fluted tube pan with cooking spray. Set aside.
  • In a large mixing bowl, combine cake mix, yogurt, and eggs. Beat with an electric mixer on low speed for 30 seconds. Scrape down sides of bowl; beat for 2 minutes on medium speed. Spoon batter into prepared pan. Bake in preheated oven for 30 to 35 minutes or until cake tester inserted in center comes out clean. Cool cake in pan for 15 minutes. Turn cake out onto a wire rack and cool completely.
  • In a small bowl, stir together frosting and the garam masala. Frost cake top with frosting. Sprinkle walnuts over frosting.
