SOUTHWESTERN BLACK BEAN SPAGHETTI & AVOCADO CREMA

Steps:
- Bring a pot of water to boil to cook the noodles.
- Prepare the avocado crema (recipe below).
- Heat the olive oil over medium heat in a large skillet. Add the onion and cook for a few minutes until it softens.
- Add mushrooms, jalapeño, and garlic and cook a few minutes until the mushrooms begin to sweat.
- Add the corn, bell pepper, fire-roasted tomatoes, black beans (optional), paprika, chili powder, cumin, oregano, cayenne, and salt, and cook for about 4-5 minutes, until the water from the tomatoes begins to cook off and the sauce thickens a bit. Taste and adjust seasoning to taste.
- Meanwhile, cook the noodles according to the package directions.
- Divide the noodles between 4 plates, top with sauce, and drizzle with avocado crema. Sprinkle fresh green onions and monterey jack (optional) on top. Serve with lime wedges.
- Toss all the ingredients in the food processor and blend until smooth. (Yup, that's all!). You'll likely have leftover crema that you can dip chips in too!
SPICY CHICKEN AND BLACK BEAN PASTA
This is a healthy and easy meal. I serve it with a tossed green salad. If queso fresco is not available, use a white cheese like Monterray jack.

Steps:
- Heat oil in a large skillet and add chicken, chili powder, cumin and garlic powder.
- Saute until chicken is cooked through.
- Remove chicken and set aside.
- Return skillet to heat and lightly saute jalapenos and green onions.
- Stir in black beans and tomatoes to heat them.
- Add chicken and pasta.
- Remove from heat and toss with cheese and cilantro.
SPINACH AND BLACK BEAN PASTA
From Chris Carmichael's "Food for Fitness", p. 292. "This is a recipe that combines two of athletes' favorite vegetables: spinach and black beans. It's a great dish for getting your carbohydrates and your protein, as well as a big dose of vitamins. This can also be served over brown rice, especially since brown rice takes 45 to 50 minutes to prepare. The rice will be ready just as the rest of the recipe is ready."

Steps:
- Bring a large pot of lightly salted water to a boil. Add the pasta, and cook for 8 to 10 minutes, or until al dente; drain.
- In a large saucepan over medium heat, bring the vegetable broth to a boil. Reduce heat and mix in spinach, onion, garlic, cayenne pepper, salt, and pepper. Stir in the black beans and broccoli. Continue to cook and stir 5 to 10 minutes.
- Stir in the tomatoes, and continue cooking 10 minutes, or until all vegetables are tender. Serve over the cooked pasta. Garish with Parmesan cheese.

Experiment! Turned out pretty thick but good. There is probably a smarter way to make this, like making the sauce separate, but I'm a big fan of one dish meals. Also thought of adding a can of chopped green chilies.

Steps:
- Cook pasta as directed.
- Meanwhile cook smoked sausage or chicken on medium high heat with garlic in a large skillet.
- Once cooked through, add cream cheese and chicken stock.
- Turn heat to medium and continue to stir until cream cheese is mixed (takes a little while).
- Add milk (can add more if you want) to thin the sauce some.
- Add the black beans and cheese, continue to stir until heated through and cheese is melted.
- Add the drained pasta and mix.
