CREAM CHEESE DESSERT PIZZA WITH FRESH FRUIT



Cream Cheese Dessert Pizza With Fresh Fruit image

Perfect for any summer get-together and ALWAYS disappears quickly. Also super easy to make...although the freshest fruit is a must! Cooking time includes chilling time (best served chilled).

1 (16 ounce) package Pillsbury sugar cookie dough
1 (8 ounce) package cream cheese, softened
1/3 cup sugar
1 teaspoon vanilla
1/2 cup sugar
1 1/2 tablespoons cornstarch
3/4 cup orange juice
1/4 cup pineapple juice
2 -3 cups fresh fruit, sliced

Steps:

  • Crust: slice the cookie dough into 1/4 to 1/3 in pieces and spread onto buttered (13 in or so) pizza pan using wet fingers. Bake @ 350 til light brown - usually 12-14 minutes.
  • Glaze: Mix 1/2 cup sugar with 1 1/2 Tbsp corn starch, then Stir in OJ and pineapple juice. Cook in saucepan, stirring 'til thick. Cover & refrigerate.
  • Filling: Mix 8 oz softened cream cheese with 1/3 cup sugar & 1 tsp vanilla and spread on baked cookie crust.
  • Top with sliced fresh fruit as desired. Pour glaze over fruit (I like to spread it evenly using a silicon brush or flexible spatula) and chill in refrigerator.

I created this recipe on pizza night to use up some cream cheese spread the kids refused to eat. Not only did they eat it, they asked me to make it again! It is so simple and delicious, how can I refuse?

Number Of Ingredients 6

1 pizza crust mix (may use homemade recipe)
1 (8 ounce) container flavor of choice cream cheese spread (I used honey nut)
1/2 cup flour
1/2 cup brown sugar
1/4 cup butter
1/4 teaspoon cinnamon (optional)

Steps:

  • Preheat oven to 400 degrees.
  • Prepare pizza crust according to directions as desired. I made it with a crispy crust.
  • Remove the lid and seal from the cream cheese. Microwave on high for 15-20 seconds until it is very soft and spreadable.
  • Spread softened cream cheese on prepared crust.
  • Mix together the flour, cinnamon and sugar.
  • Cut in butter until it resembles coarse crumbs.
  • Sprinkle the flour mixture on top of cream cheese.
  • Bake for 12-17 minutes, or according to pizza crust dirctions, until done.

1 pkg sugar cookie dough (sliceable)
1 pkg cream cheese
1 cup powdered sugar
2 cups sliced fruit of your choice (kiwi, strawberries, pineapple, bananas, etc.)

Steps:

  • Roll out cookie dough evenly on cookie tray like you would pizza dough. Then bake according to the instructions on package.
  • While that is cooking, put cream cheese in a bowl and slowly start stirring in powdered sugar until it is sweetened to your desire. When cookie is cooked, refrigerate for about 20 minutes.
  • Slice fruit you wish to have as toppings. Take the cookie out of the refrigerator and spread on cream cheese and powdered sugar mixture. Top with sliced fruit. Sprinkle some powdered sugar over top to garnish. Cut and serve.

  • Make the frosting by beating all the frosting ingredients in a mixer. Add more powdered sugar until you get the desired consistency. It should be thick enough to spread over the cookie.
  • Once the cookie is completely cooled slather it with the cream cheese frosting. I used about 2/3 of the frosting. Refrigerate the rest.
