Steps:

  • Melt butter in a saucepan over medium heat. Add apple and brown sugar. Cook, stirring occasionally, for 5 minutes.
  • Stir in oats, apple cider, milk, cinnamon, and salt and cook, stirring frequently, until oatmeal is creamy and thickened, about 3 minutes.

3 sweet apples, peeled, cored, and thinly sliced
2 Tbs. water
Pinch of ground cinnamon (optional)
1 tsp. agave nectar (optional - to add more sweetness)
Per portion
1 Tbs. baby oats
2 Tbs. breast milk or formula

Steps:

  • 1. Put the apples in a saucepan with the water. Bring to a boil, then reduce the heat, cover, and cook very gently until soft, 10 to 15 minutes. 2. Add the cinnamon, if using, and puree in a blender, or mash until smooth. Sweeten with the agave nectar, if using. Cool the applesauce and keep refrigerated until needed, or freeze in individual portions and thaw as required. 3. To serve, warm one portion (about 2 Tbs.) of the applesauce and stir in the oats and milk. Cool slightly and check the temperature before serving.

I had "inherited" bags and bags of apples and was trying to use them up and found this recipe in the August/September 2006 Taste of Home magazine that was chock full of other apple recipes. In the second batch, I added walnuts which were also a very nice addition. Even though the recipe calls for dried apples, don't let that make you hesitate in making these. I used chopped apples - 1 cup - and they were delicious! Also, be sure to flatten these a bit on the cookie sheet, they do not spread out while baking.

1 cup packed brown sugar
1/2 cup sugar
2 eggs
1 teaspoon vanilla extract
1 1/2 cups all-purpose flour

1/2 cup chopped dried apple

Steps:

  • In a large mixing bowl, cream butter and sugars.
  • Beat in eggs and vanilla.
  • Combine the flour, cinnamon and baking soda.
  • Gradually add to creamed mixture and mix well.
  • Fold in oat and apples.
  • Drop by rounded tablespoons 2 inches apart onto ungreased baking sheets. Bake at 350°F for 10-12 minutes. Let stand for 1 minute before removing to wire racks.

5-6 medium sized apples, preferably of different varieties (braeburn, cox, gala)
1 teaspoon ground cinnomon
1 tablespoon low calorie sweetener (eg: Splenda)

Steps:

  • Wash the apples then peel, core and slice them.
  • Place the apples in a large pan and then put in enough water to cover them up.
  • Bring apples to the boil, then gently simmer for 15-20 minutes or until soft.
  • Drain the apples, then, using a hand blender/ potato masher or spoon, mash the apples into a thick puree
  • Place in the fridge to cool before serving.
