- In a food processor, cover and process cream cheese until smooth. Add half of the beans; cover and pulse until blended. Transfer to a bowl; stir in the cheese, onions, cumin, cayenne and remaining beans. Cover and refrigerate for 8 hours or overnight., Just before serving, garnish with cheese, tomato and onion. Serve with tortilla chips.

CREAMY BLACK BEAN DIP
I made this with regular cream cheese and a sharp cheddar, but I'll post it with the reduced-fat ingredients. My personal preference is to add a little more cayenne pepper for heat, but this is also a great mild dip. BLACK BEAN DIP
Steps:
- Put the beans into a food processor and pulse until coarsely ground. While pulsing, slowly add the vegetable broth until the beans are creamy but still have some small chunks.
- Transfer the bean mixture to a nonstick skillet over medium-low heat. Cook, stirring, until the beans are warm, about 3 minutes. Stir in the onion, tomato, jalapeno and cilantro, then remove from the heat; season with salt and pepper.
- Serve warm or at room temperature with tortilla chips for dipping.
CREAMY BLACK BEANS
In Mexico, Frijoles de la Olla (slow cooked beans in a pot) are typically prepared in large clay pots over an open fire with pepper and spices. You can achieve similar results at home with a large pot or a pressure cooker!

- Soak the beans in a pot of water overnight. Drain.
- Heat the olive oil in the pot over medium heat. Add the onion, garlic, jalapeno and cumin and cook, stirring occasionally, about 5 minutes. Add the oregano and the beans, then add enough water to cover (about 9 cups). Increase the heat to medium high and bring to a boil, then reduce the heat to medium low, partially cover and cook, stirring occasionally, until the beans are just tender, about 3 hours.
- Add 2 teaspoons salt and simmer, uncovered, stirring occasionally, until the liquid is mostly absorbed, about 45 minutes. Season with salt. Let sit 15 minutes before serving; top with queso fresco and cilantro, if desired.

This creamy black bean dip with canned beans has a little heat and is a great addition to any game-watching party! I like to serve this with tortilla chips alongside guacamole, salsa, and/or pico de gallo.

- Combine sour cream, Cheddar cheese, black beans, 1/4 teaspoon parsley, paprika, chili powder, onion powder, garlic powder, pepper flakes, and pepper in a bowl; gently fold together so black beans aren't crushed. Sprinkle with more parsley, if desired.

BLACK BEAN CREAM CHEESE DIP
This is a soft, creamy dip that goes well with veggies, tortilla chips, or bagel chips. Do not use whipped cream cheese. Prep time is chill time. **Update: After reading Parsley's review, I changed the ingredients to read 1/4 cup red onion, since onions can vary in strength so much. Better to start with a smaller quantity and add more if you'd like.

- First we make salsa. In a food processor, pulse the garlic, onion, cilantro, tomatoes, and juice from half the lime until well blended but still chunky. You don't want this to be completely smooth. Pulse. Try not to eat all the salsa once made too; that's a tough one.
- Now we blend together the cream cheese, black beans, juice from the remaining half of lime, and cayenne. Just blend until smooth.
- Stir (by hand) the salsa into the cream cheese mixture. Taste, and add salt and pepper to your liking.
- Serve chilled with lots of tortilla chips. This dip is a somewhat funky color, so I like to garnish the top with a few black beans so everyone knows where that color is coming from. Enjoy!
