CREAMY CILANTRO LIME SAUCE WITH CHICKEN



Creamy Cilantro Lime Sauce with Chicken image

This chicken pasta dish takes the flavors of Mexico and the flavors or Italy and combines them to make a Creamy Cilantro Lime Sauce with Chicken that is out of this world amazing!

Number Of Ingredients 10

one pound spaghetti noodles
2 tablespoons olive oil
1 pound chicken breasts cut into chunks and seasoned with any Cajun style season
2 tablespoons chopped garlic
2 tablespoons freshly squeezed lime juice and the zest of one lime
1/4 cup chicken stock
1/4 cup chopped cilantro
2/3 cups heavy whipping cream
2/3 cups milk
1/2 cup parmesan cheese grated

Steps:

  • Prepare your noodles according to the directions on the box.
  • While your noodles are cooking, heat your olive oil in a large sauce pan with high sides over medium to high heat.(I used my chicken fry pan)
  • Cook your chicken until it's browned on all sides, and no longer pink.
  • Remove from the pan, and set aside.
  • Add the garlic, lime juice, and chicken broth to the pan, and scrap any yummy bits from the bottom left from the chicken.
  • Add in the lime zest, heavy cream, and milk.
  • Bring it almost to a boil, and add the cheese, stirring to combine and help it melt.
  • Add the cilantro, reserving 1/2 to sprinkle on the tops of the dishes before serving.
  • Add the cooked chicken and pasta.
  • Toss to coat.
  • Serve hot. Spinkle with additional parm cheese and cilantro.

Here's what you need: shredded chicken, sour cream, lime, fresh cilantro, garlic, olive oil, salt, pico de gallo, corn tortillas

2 cups shredded chicken
½ cup sour cream
½ lime, juiced
¼ cup fresh cilantro, chopped
3 cloves garlic, minced
1 tablespoon olive oil
¾ teaspoon salt
pico de gallo, or salsa, for topping
4 corn tortillas

Steps:

  • In a large, nonstick skillet, heat the olive oil over medium heat.
  • Toss in the garlic and sauté until fragrant, about 30 seconds.
  • Add the shredded chicken, salt, sour cream, and lime juice. Mix until the chicken is evenly coated and the mixture has heated through.
  • Stir in the cilantro and immediately remove from heat.
  • Pour the chicken mixture into a large serving bowl and toast the tortillas in the seasoned pan, about 3 minutes per side.
  • Divide the mixture evenly between tortillas, top with pico de gallo, and serve.
  • Enjoy!

  • In a large heavy-duty skillet, heat the oil over medium-high heat. Season chicken generously with salt and pepper then add the chicken and cook for 7-8 minutes, turning once or until chicken is cooked through. Remove chicken from skillet and cover with foil on a separate plate, set aside.
  • Add onions to the same skillet (without washing it) and cook onion for 1 minute. Add garlic and cook for just 30 seconds. Add chicken broth, lime juice, cilantro, red peppers flaked, and salt and pepper to taste. Bring to a gentle boil for 8-10 minutes or until liquid is reduced by 1/4 cup.
  • Whisk in cream during the last minute. Turn off heat and return chicken to the sauce. Garnish with more cilantro. Serve with aside of steamed veggies or rice. Enjoy!

  • If the chicken breasts are uneven in thickness, pound them down so they’re all even. This way all the breasts will cook through simultaneously. Sprinkle each with salt and pepper.
  • In a large ovenproof skillet, heat the oil over medium-high heat. Add the chicken and cook for 6-7 minutes, turning once. You want the chicken nice and browned on the outside. (It doesn’t have to be cooked all the way through yet.) Set chicken on a plate and cover tightly with foil until step 5.
  • Remove skillet from heat and add the broth, lime juice, onion, cilantro, and red pepper. Return to heat. Cook and stir to scrape up the browned bits from the bottom of the skillet. Bring to a boil. Allow to boil gently, uncovered, for 10 minutes or until the liquid is reduced to around 1/4 cup. (During this time you can steam some veggies to have on the side, like asparagus.) Reduce heat to medium-low, then add the cream and butter. Stir until butter has melted.
