CREAMY FETA CHEESE DRESSING
Rich and creamy feta cheese dressing, with just the right amount of kick from fresh lemon, garlic and shallot. A new favorite at our house!

Steps:
- In a small bowl, whisk all ingredients except feta cheese.
- Stir in the crumbled feta.
- Serve immediately or store in fridge until ready to use.

Steps:
- Combine feta and yogurt in a large bowl and whisk until well blended. Add lemon zest and juice, olive oil, 1 1/2 teaspoons dill and 1 1/2 teaspoons mint. Season to taste with salt and pepper. Mix until well blended. If not serving immediately, cover and chill until ready to serve.
- Transfer to a serving bowl and garnish with the remaining herbs, a drizzle of olive oil and a sprinkling of sesame seeds. Serve with watermelon spears.

I found this recipe years ago, but made it for the first time recently because it was on an index card I decided NOT to toss. This dressing was a HUGE hit at dinner.
