Creamy Four Cheese Pasta With Garlic image

This creamy and garlicky spaghetti is a delicious dish, perfect for cheese lovers. Toss a quick salad and sit down to a wonderful meal.

1 tablespoon butter
1 tablespoon olive oil
2 cloves garlic, minced
2 ounces cream cheese , softened to room temperature
1/2 cup heavy cream
1/4 cup Asiago cheese
3/4 cup Parmesan cheese, divided
1/2 cup Pecorino Romano cheese
8 ounces cooked spaghetti (reserve 1/4 cup of the pasta water)
Kosher, to taste
Freshly ground black pepper, to taste
1 teaspoon finely chopped Italian parsley

Steps:

  • Gather the ingredients.
  • Bring water to a boil in a tall pasta pot, add salt generously, and cook spaghetti according to package directions for al dente. Reserve 1/4 cup of pasta water after spaghetti has finished cooking. Strain spaghetti and rinse with warm water to prevent it from sticking together while you prepare sauce.
  • In a large skillet over high, heat butter and olive oil. Reduce heat to low, add minced garlic , and cook until fragrant (be careful not to brown garlic).
  • Using a whisk, stir in heavy cream and gradually add cream cheese and Pecorino Romano, 1/2 cup of the Parmesan, and Asiago cheeses until you achieve a thick sauce consistency.
  • Add cooked spaghetti and reserved pasta water to sauce.
  • Season with salt and pepper and cook for another 2 minutes, stirring and tossing pasta until it is completely coated with sauce. Leave in skillet or transfer to a serving dish. Top with chopped parsley and remaining 1/4 cup of Parmesan cheese.

Steps:

  • 1. Heat olive oil and butter on medium heat in a large skillet, add minced garlic and coo for about 1 minute on medium heat, without burning. 2. Cook pasta in a separate pan, drain. Reserve some of cooked pasta water. Dissolve 1 cube of chicken broth bullion in 1 cup of hot pasta water. 3. Add pasta water (with the dissolved chicken broth bullion cube in it), heavy cream, and cooked spaghetti to the skillet with cooked garlic. Bring to boil, stirring. Once the liquids are boiling, immediately add cheese and keep stirring everything together (spaghetti and the cream), while boiling, until cheese melts and coats pasta, for about 1 minute. Reduce to simmer and continue to cook, constantly stirring, to thicken the sauce - for another minute or two. 4. To serve, top each serving with finely chopped chives, or green onions, or parsley

4 garlic cloves, minced
2 tablespoons butter
3 cups chicken broth, or more as needed
½ teaspoon ground black pepper

½ pound spaghetti

¾ cup heavy cream
1 ½ tablespoons dried parsley

Steps:

1/2 large yellow onion, Diced
5 large garlic cloves, Minced
2 cups milk or 2 cups cream
1 cup shredded cheese, Your Choice
1/8 cup Jack Daniels Whiskey
3 tablespoons flour
3 tablespoons butter
1 tablespoon butter
1 tablespoon olive oil

Steps:

  • Make a roux with the equal parts butter and flour.
  • Melt the remaining butter in a sauce pan with the olive oil.
  • Add the onion, saute until tender.
  • Add the garlic, saute until lightly brown. Deglaze with Whiskey.
  • Add milk, bring to very gently simmer, low heat.
  • Add the roux until sauce starts to thicken, you may not need all the roux.
  • When thick, remove from heat and stir in cheese.
  • Pour over desired side or main dish and ENJOY!
