Pan Seared Halibut Recipe With Lemon Butter Sauce image

This pan seared halibut recipe with lemon butter sauce takes just 20 minutes... which you'd never guess with how fancy pan fried halibut looks. I'll show you how to pan sear halibut, plus how to make the perfect sauce for halibut.

4 6-oz Halibut fillets ((1.5 lb total))
1/2 tsp Garlic powder
1/2 tsp Paprika
1 tsp Sea salt
1/4 tsp Black pepper
2 tbsp Olive oil
1/2 cup Salted butter
1 medium Lemon ((cut in half))

Steps:

  • Use paper towels to pat the halibut fillets completely dry - this will ensure even browning. Season the fish on both sides with garlic powder, paprika, sea salt, and black pepper. Set aside.
  • Heat the olive oil in a large skillet over medium-high heat for 2 minutes.
  • Add the fish fillets in a single layer (you can do it in batches if all the fish won't fit in a single layer). Sear, without moving, for 3-4 minutes, until the edges of the fish are opaque. Flip and cook for 2-4 minutes, until cooked through.
  • Remove the fish from the pan and cover tightly with foil to keep warm.
  • Reduce heat to medium-low. Add the butter to the same pan. Wait for it to melt, then heat for 2-3 minutes, stirring occasionally, until the butter is browned and smells nutty.TIP: If you like garlic, you can also use this lemon butter sauce recipe.
  • Use the Zulay Kitchen Lemon Squeezer to squeeze all the juice from both halves of the lemon into the pan. Bring to a simmer, then reduce heat and simmer for about 3-4 minutes, stirring often, until volume is reduced by half. The lemon butter sauce will still be thin.
  • Drizzle a little lemon butter sauce over each serving plate. Place the pan seared halibut fillets over the sauce, then drizzle more sauce on top.

1 ½ tablespoons butter, melted
¼ cup chicken stock, or as needed
2 (8 ounce) fillets halibut
1 teaspoon lemon juice
salt and ground black pepper to taste

  • Preheat oven to 350 degrees F (175 degrees C).
  • Stir panko bread crumbs and melted butter together in a bowl until evenly coated.
  • Pour enough chicken stock into an oven-proof skillet to cover bottom; arrange halibut fillets in skillet. Drizzle lemon juice over fillets; season with salt and pepper. Spread a think layer of Dijon mustard over each fillet; press bread crumb mixture over mustard layer.
  • Place skillet in the preheated oven and cook until fillets flake easily with a fork and topping is browned, about 20 minutes.

This is by far the BEST fried halibut I have EVER had! (That really says a lot being from Alaska you know hehe). Simple and delicious with a "secret" ingredient that will knock your socks off! Even my kids like it and they do not like fish at all. I find the perfect meal with this fish is "sticky rice" and creamed corn, but you decide for yourself!

Number Of Ingredients 8

1 medium halibut fillet (approx 3 lbs)
2 cups white flour
1 tablespoon seasoning salt
1 teaspoon ground pepper
1 pinch onion powder
1/2 cup mayonnaise
1 tablespoon yellow mustard (or to taste)
6 tablespoons vegetable oil (amount will vary)

Steps:

  • Cut halibut into portion size pieces (this will vary with every family); set aside.
  • In gallon ziplock bag combine all dry ingredients; seal bag and shake to mix. Add halibut pieces to dry ingredients and shake thoroughly again.
  • In small bowl combine mayonnaise and mustard; mix thoroughly (secret ingredient!).
  • Add some oil to skillet over med heat until oil begins to ripple. You will need to add more oil in small amounts at a time throughout cooking.
  • Add halibut a few pieces at a time to skillet until full. DO NOT OVERLAP FISH. Cook until just beginning to brown on bottom side and flip. Once turned, lightly baste browned side of fish with mayonnaise mixture. Turn fish once more and repeat basting. The key to this step is to re brown basted sides of fish before removing from pan. The pieces should turn a deep brown (not black but close). That is when you know they are done.
  • Serve while still hot. (May be kept in warm oven until all fish is done).

This recipe makes a very moist halibut main dish. I have a recipe for another 'Oven Fried Buttermilk' using chicken, and, as I like to experiment, I decided to try it with halibut. The only changes I made were the main ingredient and the oven temperature.

2 cups buttermilk
1 ½ teaspoons salt
4 (3/4 inch thick) halibut fillets
1 (8 ounce) package seasoned rye crackers
2 tablespoons Greek seasoning
3 eggs, beaten
2 tablespoons water
½ cup butter, melted

Steps:

  • Set a large resealable plastic bag in a bowl. Pour in the buttermilk and salt. Add the halibut fillets and close the bag. Refrigerate for at least 4 hours and up to 1 day.
  • Preheat the oven to 250 degrees F (120 degrees C).
  • Place half of the crackers and half of the Greek seasoning into a blender. Cover and pulse until they become fine crumbs. Pour into a shallow bowl, and repeat with remaining crackers and Greek seasoning. Whisk eggs with water in a separate bowl.
  • Remove halibut from the bag and discard the marinade. Dip fish into the egg and then in the crumbs until evenly coated. Place coated fillets into a lightly greased 9x13 inch baking dish. Do not let them touch, as they will weld themselves together. Drizzle the butter on top of the fish.
  • Bake uncovered in the preheated oven until fish is opaque and flakes easily with a fork, about 45 minutes.

Well most of it's done in the oven! The original recipe is from Cooking Light but I've made a couple modifications. While the fish is baking I deglaze the frying pan with a flavored vinegar (I use a tequila-lime vinegar) and a little water, then top the fish with the sauce before serving. 6 halibut fillets
salt & pepper

  • Preheat oven to 450°F.
  • Combine first 5 ingredients in a shallow dish.
  • Place eggs in a shallow dish.
  • Place flour in a shallow dish.

  • Dredge fish in flour.

  • Dredge in breadcrumb mixture.
  • Heat 1 tablespoon oil in skillet over medium-high heat.
  • Add 2 fish fillets; cooks 2-3 minutes per side or until browned.

  • Repeat process with remaining olive oil and remaining fish.
  • Bake at 450°F for 6 minutes or until fish easily flakes when tested with a fork or until desired doneness.

PANKO CRUSTED HALIBUT

Number Of Ingredients 12

4 one inch thick fillets of wild halibut
salt and pepper to season ((maybe ¼ tsp of each for all 4 pieces))
drizzle of sunflower or grapeseed oil for the pan
1 cup panko bread crumbs
1/2 cup flour or cornstarch
1 egg
1 tsp salt and pepper
LEMON DILL SAUCE
1 cup wine
1/2 cup butter
1/2 lemon juiced
2 tbsp fresh dill (, chopped)

Steps:

  • Take the halibut out of the fridge and let it come to room temperature for 30 mins or so. Pat the fillets dry with paper towel. Season with salt and pepper.
  • Make the sauce. Add the wine to a small pot and simmer till it reduces in half. Add the butter, lemon, and dill. Simmer for just a min and then set aside with a lid on.
  • Heat your oven to 350 degrees.
  • Bread the fillets. Get out three bowls. In one add the flour or cornstarch, 1/4 tsp salt and pepper each. In the second, add the egg, 1/4 tsp salt and pepper. In the final bowl add the panko, 1/4 tsp salt and pepper. Take each fillet and coat first in flour or cornstarch, then egg, then panko. Set aside on a plate.
  • Heat a large skillet to med-high heat. A heavy bottomed stainless steel or ceramic pan works best. You might need 2 medium pans instead depending on how big your fillets are. You must make sure that the fillets are not crowded in the pan or they wont get a nice sear or crust on them.
  • When the pan, or pans, are nice and hot, drizzle some oil into the pan just so it has a thin layer. When the oil starts to shimmer and smoke slightly, place a fillet, in the pan laying it down in the pan away from you.
  • Don't touch it! You will want to, but don't. Wait 3 mins and then try to lift the fish. If it lifts easy, flip it over. If it doesn't release easy, let it be for another min then try again. Don't poke at it or it could break up.
  • Once the fish is flipped onto the other side, wait 1 min and then turn the heat off and throw the pan in the oven for 4 - 6 mins per ½ inch thickness. We cooked the fillet in the pictures of this post for 8 mins.
  • Remove from the oven, place on plates, drizzle with the sauce and serve immediately.
