CRISPY LEEK, SPINACH & FETA FILO ROLLS



Crispy Leek, Spinach & Feta Filo Rolls image

A delicious and totally make-ahead appetizer for your next party

Number Of Ingredients 13

1 sm. onion, finely minced
1 med. leek, trimmed and sliced thinly
2 --- green onions, finely minced
4 TBSP. olive oil
10 oz. fresh spinach, chopped
1 cup crumbled Greek Feta cheese
4 oz. cream cheese, or ricotta cheese, at room temperature
1 large egg, lightly beaten (optional)
4 TBSP. fresh dill, minced
¼ tsp. freshly ground pepper
1 lb. thin filo sheets, thawed overnight and at room temperature
(about 16 sheets, depending on thickness)
--- --- olive oil or melted butter (for brushing on the filo)

Steps:

  • In a small skillet, cook the onions and the leek in the olive oil until soft and golden brown. Remove from the heat, place in a bowl and let them cool.
  • Place the spinach in a colander, sprinkle with some salt and let it sit for 20 minutes. Squeeze the spinach between the palms of your hands to drain the water. Put the spinach in a bowl along with the Feta cheese, cream cheese, dill, ground pepper, and egg. Mix well and set aside. The mixture can be prepared one day ahead.
  • Pre-heat the oven to 375°F.
  • Unwrap the filo and place it on a work surface with the long side nearest to you. Take one sheet of filo, brush it with some of the olive oil. Top it with a second sheet. Brush this second sheet of filo with olive oil as well. Repeat with a third layer. Cut the stacked filo sheets into four equal rectangles. Place some of the leek mixture at the bottom end of each strip. Fold both sides inwards and roll the filo up tightly. Once you are done, place the filled filo rolls on a parchment paper-lined sheet pan, seam side down. Continue with the rest of the filo. Brush the tops with a little more olive oil, sprinkle with coarse sea salt and bake in the oven for about 20 minutes or until golden.
  • Remove from the oven and let stand for a few minutes. Serve as an appetizer with some plain Greek yogurt or tzatziki.

Much easier than it looks, once you have mastered this salmon in filo recipe it will be a dinner party favourite

4 leeks , trimmed and finely chopped
25g butter
100g full-fat crème fraîche or cream cheese
6 sheets filo pastry
2 skinless salmon fillets

Steps:

  • Heat oven to 200C/fan 180C/gas 6. Put the leeks into a large saucepan with 3 tbsp water and a couple of knobs of butter. Cover, then cook for 10 mins until tender. Remove from the pan, allow to cool, then mix with the crème fraîche and some seasoning.
  • To assemble the parcels, brush a sheet of pastry with melted butter, then lay 2 more sheets on top, brushing butter between each layer. Place a salmon fillet in the centre, season, then spoon over half the leek mix. Fold the ends over the top, pull up the sides and scrunch together to enclose. Repeat.
  • Brush both the parcels with melted butter. Put onto a lightly greased baking sheet, then cook for 20-25 mins until browned and crisp. Delicious served with a green salad.

2 tablespoons unsalted butter
4 medium leeks, white and light green parts only, minced
3 cloves garlic, smashed, peeled and minced
Kosher salt and freshly ground black pepper
5 ounces cold soft/fresh cheese, such as Boursin or goat cheese
1/3 cup finely grated Parmesan
1/4 cup fresh chopped parsley
Pinch red pepper flakes, optional
One 1-pound box frozen phyllo dough, thawed according to package directions (thirty-six 14-by-18-inch sheets) (See Cook?s Note)
2 sticks (16 tablespoons) unsalted butter, melted
Smoked paprika, as needed for finishing

Steps:

  • For the filling: Melt the butter in a medium saute pan over medium heat. Add the leeks and saute until wilted and very soft, 4 to 5 minutes. Add the garlic and saute until fragrant, about 1 minute. Season with salt and pepper, and then transfer to a medium bowl.
  • Stir in the soft cheese until it melts and the mixture becomes creamy. Stir in the Parmesan and parsley. Season with red pepper flakes if using. Set aside (you can scoop the filling later or pipe it by transferring the filling to a disposable piping bag with 1/2-inch opening cut from the tip).
  • For the cigars: Preheat the oven to 350 degrees F. Line two baking sheets with parchment paper.
  • Open the phyllo dough and unfurl it. With one of the shorter sides facing you, cut the dough in half lengthwise (you're aiming for rectangles about 7-by-18-inches long, but exact size may vary based on brand of dough). Cover the dough with a lightly damp clean kitchen towel so it doesn't dry out while you assemble the cigars.
  • Make a cigar by placing one sheet of cut phyllo on your work surface with one of the shorter sides facing you. Brush the dough all over (but lightly) with the melted butter and top with another piece of dough. Continue this process until you've layered three pieces of dough. Brush the surface of the final piece with butter, too.
  • Scoop (or pipe) about 1 tablespoon of filling in a line on top of the dough on the side closest to you. Fold the outside pieces of dough inward, and then roll up the dough around the filling to make a cigar shape (a lot like rolling a burrito).
  • Transfer the cigar to the prepared baking sheet, and then repeat with the remaining dough and filling. Brush any of the remaining melted butter over the assembled cigars and sprinkle smoked paprika over each one.
  • Bake the cigars until golden and crisp, 17 to 22 minutes. Cool at least 5 minutes before serving warm.

30 ml olive oil
1 onion, finely chopped
1 clove garlic, crushed
125 g country mixed vegetables, soaked overnight
450 ml chicken stock
10 ml smoked paprika
3 skinless chicken breasts, cut into 2 cm pieces
1 (150 g) package trimmed asparagus, roughly chopped
salt & freshly ground black pepper
50 g freshly grated parmesan cheese
15 ml creme fraiche
1 (20 g) package flat leaf parsley, roughly chopped
1 (200 g) package phyllo pastry, chilled
75 g butter, melted

Steps:

  • Pre heat the oven to 190 C, 375 F or Gas Mark 5.
  • Heat half the olive oil in a saucepan over a moderate heat, add the onion and garlic and fry until soft.
  • Add the casserole mix and chicken stock.
  • Bring to the boil, reduce the heat and simmer for 30 minutes.
  • Heat the remaining olive oil in a frying pan over a moderate heat, add the smoked paprika and fry for 30 seconds, then add the chicken and fry for 5 minutes until browned.
  • Add the asparagus and casserole mix to the chicken.
  • Add seasoning to taste, cheese, creme fraiche and parsley.
  • Remove from the heat.
  • Lay 1 sheet of filo on the work surface and brush with melted butter.
  • Repeat this with 2 more sheets.
  • Cut this in half.
  • Place 2-3 spoonfuls of chicken mixture in the centre of the filo.
  • Bring the filo together to form a money bag and brush with melted butter.
  • Repeat this process using the remaining filo and chicken mixture.
  • Place the parcels onto a baking sheet and bake in the oven for 25-30 minutes until golden.

Pesto adds loads of flavor to these baked salmon phyllo parcels. Just three - yes, three! - main ingredients result in a sophisticated dinner that's deceptively easy to make.

2 (4 ounce) fillets salmon fillets
2 tablespoons basil pesto (store-bought or homemade)
8 sheets phyllo dough, thawed if frozen
¼ cup olive oil, plus more if needed

Steps:

  • Preheat the oven to 350 degrees F (190 degrees C). Line a baking sheet with parchment paper and set aside.
  • Pat the salmon fillets dry with paper towel and season with salt and pepper. Lay skin-side down on a cutting board or plate and top each fillet with a tablespoon of pesto, or more to taste, ensuring the entire top of the fillet is evenly covered. Set aside while you prepare the phyllo.
  • Lay a sheet of phyllo flat on a work surface and brush with olive oil. Lay another sheet on top, brushing with oil. Repeat process for a total of four sheets, leaving the top of the last sheet dry. Place one of the prepared salmon fillets at the bottom of the stack of phyllo sheets with the pesto side facing up. Roll over once, so the skin side is facing up, then fold over the sides. Brush all over with oil. Continue rolling until the end of the phyllo, then place on the parchment-lined baking sheet with the pesto side facing up and brush the top with oil. Score the top 2 to 3 times to allow steam to escape. Repeat with the remaining salmon and phyllo.
  • Bake parcels in the preheated oven for 20 to 25 minutes, until the phyllo is golden brown. Remove from oven and let rest a minute or two before serving.

2 large leeks, finly chopped
1 teaspoon fresh ginger, grated
1 garlic clove, crushed
1 lemon zest, grated
1 lemon, juice
2 tablespoons parsley
100 g Baby Spinach
6 sheets phyllo pastry
400 g smoked salmon
150 ml white sauce
100 g cheese, Grated

Steps:

  • Heat oven to 180°C Put the leeks, ginger & garlic into a large saucepan with 3 tbsp water and a small knobs of butter. Cover, then cook for 5-10 mins until tender. Remove from the pan, allow to cool, then mix with the lemon, parsley & spinach. 

To assemble the parcels, spray a sheet of pastry with oil, then lay 2 more sheets on top, spraying oil between each layer. Do the same with remaining 3 sheets, then cut in half. Place 100g of salmon in the centre, season, then spoon over quarter of the leek mix, white sauce and grated cheese. Bring up 2 edges of pastry over the salmon to enclose. Brush the open ends with butter/oil, and fold up and over to seal. Put on a baking sheet and brush with butter.

Put onto a lightly greased baking sheet, then cook for 15-25 mins until browned and crisp.

Delicious served with Vegetables.

25 g butter
1 large leek, sliced
100 g cream cheese, softened
1 teaspoon ground nutmeg
black pepper, to taste
6 sheets phyllo pastry

Steps:

  • Preheat oven to 180ºC.
  • Grease a large baking tray.
  • Melt the butter in a saucepan and fry the leek until soft then beat in the cheese until thoroughly mixed. Season with pepper and nutmeg.
  • Brush 1 sheet of phyllo pastry with olive oil and fold in half lengthways.
  • Place 1/6th of the filling mixture at the bottom of the strip of pastry.
  • Fold over in a triangle shape. Continue folding, keeping the triangle shape, until you reach the end of the strip of pastry.
  • Make sure the filling is completely enclosed.
  • Place on the baking tray and brush with oil. Repeat this for the remaining pastry.
