2 tablespoons olive oil
3 large red potatoes
4 garlic cloves, minced
2 tablespoons butter
1/4 cup sour cream
salt & pepper
12 slices lean bacon, cut in pieces
8 ounces grated mozzarella cheese
sliced broccoli floret

Steps:

  • Spray counter lightly with non-stick cooking spray.
  • Combine rolls and flatten into a 13-inch circle.
  • Place on a 12-inch sprayed pizza pan.
  • Brush dough with olive oil and allow to rest while preparing potatoes.
  • Clean cube and boil potatoes until they are tender.
  • Drain potatoes and add minced garlic, butter and sour cream.
  • Mash together adding salt and pepper to taste.
  • Spread potatoes evenly over pizza dough.
  • Top with bacon, cheese and broccoli.
  • Bake at 375°F 15-20 minutes.

4 Yukon Gold potatoes, skin on, quartered
4 cloves garlic
4 tablespoons butter
1/2 cup milk
Kosher salt and freshly ground black pepper
1 tablespoon olive oil
1 small onion, sliced
3 anchovies, chopped
1 sweet or spicy Italian sausage
6-ounces prepared pizza dough
1/2 cup grated Cheddar cheese
2 teaspoons lemon juice
1 tablespoon olive oil
Salt and pepper
1 cup arugula
1/2 fennel bulb, thinly sliced
2 celery stalks, thinly sliced
1/4 cup shaved Parmesan cheese

Steps:

  • Preheat oven to 400 degrees F.
  • Place the potatoes and garlic cloves in a large pot of salted water. Bring to a boil and cook until the potatoes are fork tender. Drain and add the potatoes and garlic back into the pot. Add the butter and milk and mash with a masher or a hand mixer. Keep the mashed potatoes a little bit chunky, not perfectly smooth. Season the potato mixture with salt and pepper, to taste.
  • Heat 1 tablespoon olive oil in a skillet over medium heat. Add the onions and cook until browned, about 6 minutes. Stir in the anchovies and cook for 2 more minutes, until anchovies 'melt' into the onions. Remove the onions from the pan and add in the sausage. Cook the sausage until browned and cooked through, about 6 to 8 minutes. Slice the sausage into thin rounds.
  • On a lightly-floured surface, using a lightly-floured rolling pin, roll out the pizza dough into a 1/4-inch thick round. Transfer the dough to a parchment-lined baking sheet and bake in the oven for 10 minutes.
  • Top the pizza crust with the onions. Spread the mashed potatoes over the onions and top with sausage slices and Cheddar cheese. Bake in the oven for 20 minutes. Slice and divide between 2 plates. Serve with the arugula salad on the side.
  • To make the arugula salad: whisk together the lemon juice, olive oil and salt, and pepper, to taste. Toss the arugula, fennel, and celery in the dressing. Divide the salad between 2 plates and top with shaved Parmesan.

5 ounces slab bacon, finely diced (about 1 cup)
1 1/2 pounds prepared pizza dough, at room temperature
All-purpose flour
Olive oil, for drizzling
Kosher salt and freshly ground black pepper
3 cups leftover mashed potatoes, slightly warm
1 1/2 cups shredded mozzarella (about 5 ounces)
1/2 leek (white and light green parts only), very thinly sliced
1 clove garlic, minced
1/2 cup freshly grated Parmesan or Pecorino Romano cheese (about 1 ounce)
12 fresh basil leaves
Crushed red pepper flakes, optional

Steps:

  • Put a pizza stone on the bottom rack in the oven and preheat to 500 degrees F for at least 30 minutes.
  • Heat a small skillet over medium heat, add the bacon, cook until the fat renders but is short of being crisp, about 5 minutes. Transfer with a slotted spoon to a paper towel-lined plate to drain.
  • Divide the dough into 2 equal portions; form each into a ball. Roll a portion into a 12-inch round on a floured surface (cover the other piece with a kitchen towel). Lightly dust a pizza peel with flour and put the dough on the peel, drizzle lightly with oil and sprinkle with salt and pepper. Slip the dough onto the preheated stone and cook until just set, about 4 minutes.
  • Using the peel, remove the dough from the oven and spread half of the mashed potatoes over the top, leaving about a 1-inch border around the side. Season with salt and pepper. Then sprinkle half of the cheese on top and top with half of the bacon, leek and garlic. Drizzle with a little olive oil. Return the pizza to the stone and cook until the crust is golden and the cheese melts, about 5 to 7 minutes more. Remove the pizza, top with half the grated Parmesan and scatter with some basil leaves and pepper flakes, if desired. Serve. Repeat with the remaining dough and toppings.

This is a fairly quick and simple version of garlic mashed potatoes. It goes well with just about any kind of meat or poultry, as well as many other meals. If you want to make this vegan or fleishig, reserve some of the cooking liquid to use in place of milk, and replace the butter with margarine.

4 large red potatoes, unpeeled, cut into uniform quarters
4 -5 large garlic cloves, peeled and cut in halves
butter
hot milk
salt and pepper, to taste

Steps:

  • Place potatoes and garlic into a large saucepan full of cold water. Bring to a boil over high heat, reduce heat to medium, and boil for about 10-12 minutes. Check potatoes for doneness by poking a few wedges with a fork or skewer--if still firm, cook another minute or two and check again. Repeat until tender. Drain, taking care not to lose garlic cloves. Return potatoes to warm pot.
  • Mash potatoes. Do not overwork, or potatoes will be tough (it's okay if there's a few lumps--it just means these are real potatoes, not from a box). Make sure to smash up the garlic, or pull out the cloves and squeeze in a garlic press.
  • Add some butter, to taste (I usually use 2-3 T), and salt and pepper, also to taste. Mix until butter has melted.
  • Add a little hot milk and beat it into the potatoes. Continue until potatoes are desired creaminess (the amount I use varies, but I usually use between 1/4 and 1/2 cup, give or take a bit).
  • Cover pot with foil to keep warm until ready to serve. Potatoes will stay hot for 10-15 minutes this way.
  • Serve with a pat of butter in an indentation on top.

Pizza is many things to many people, but one thing it usually is not: is healthy. But in any pizzeria in Rome or Naples, you'll find a dizzying array of offerings that really are healthy. The crusts are thin, often topped with seasonal vegetables, and the slices are reasonably sized. There may be cheese on top, but not more than a few ounces. The crust for this recipe is made with half whole wheat flour and is wholesome but light and full of flavor. This week's pizza recipes also make for a handy way to sabotage the picky habits of vegetable-averse kids. Just tell them they're having pizza for dinner.

2 teaspoons active dry yeast
1 cup warm water
1/2 teaspoon sugar
1 tablespoon extra virgin olive oil, plus additional for brushing the pizza crusts
1 1/4 cups stone ground whole wheat flour
1 1/2 cups unbleached all-purpose flour, plus additional if necessary for kneading
1 1/4 teaspoons salt
1 bulb green garlic, sliced; or if the bulb has formed cloves, 4 cloves, sliced thin
1/2 pound new potatoes or other waxy potatoes, scrubbed
Salt
3 tablespoons olive oil
1/2 recipe whole wheat pizza dough
Freshly ground pepper
1 tablespoon chopped fresh rosemary, or 1 teaspoon crumbled dried rosemary, or 2 teaspoons dried oregano
1/4 cup freshly grated Parmesan
2 tablespoons extra virgin olive oil

Steps:

  • Combine the yeast and water in a 2-cup Pyrex measuring cup. Add the sugar, and stir together. Let sit two or three minutes, until the water is cloudy. Stir in the olive oil.
  • Combine the whole wheat flour, all-purpose flour and salt in a food processor fitted with the steel blade. Pulse once or twice. Then, with the machine running, pour in the yeast mixture. Process until the dough forms a ball on the blades. Remove from the processor (the dough will be a little tacky; flour or moisten your hands so it won't stick), and knead on a lightly floured surface for a couple of minutes, adding flour as necessary for a smooth dough.
  • Shape the dough into a ball, pinched at bottom and rounded at top. Transfer the dough to a clean, lightly oiled bowl, rounded side down first, then rounded side up. Cover the bowl tightly with plastic wrap, and leave it in a warm spot to rise for 1 to 1 1/2 hours. When it is ready, the dough will stretch when it is gently pulled.
  • Divide the dough into two equal balls. Put the balls on a lightly oiled tray or platter, cover with lightly oiled plastic wrap or a damp towel, and leave them to rest for 15 to 20 minutes. Afterward, the dough balls can be placed in a wide bowl, covered with plastic wrap and refrigerated for up to three days. Alternatively, you can wrap them loosely in lightly oiled plastic wrap and refrigerate them in a resealable plastic bag. When you are ready to roll out the pizzas, you will need to bring the balls to room temperature and punch them down again.
  • Preheat the oven to 450 degrees. Place a pizza stone on the middle rack of the oven. Roll or press out the dough to a 12- to 14-inch circle. Lightly oil pizza pans, and dust with semolina or cornmeal. Place the dough on the pizza pan. With your fingers, form a slightly thicker raised rim around edge of the circle. Brush everything but the rim with a little olive oil, then top the pizza with the toppings of your choice.
  • Place the pizza pan on the stone. Bake as directed.
  • Bring a medium pot of salted water to a boil, and drop in the garlic. Blanch for 30 seconds, and transfer to a bowl of cold water using a slotted spoon. Drain and dry on paper towels.
  • Add the potatoes to the pot, and bring to a gentle boil. Cover partially, and simmer the potatoes until just tender when pierced with a knife - 10 to 15 minutes, depending on the size of the potatoes. Drain and rinse with cold water. When cool enough to handle, slice about 1/4 inch thick.
  • Preheat the oven to 450 degrees with a baking stone inside. Roll or press out the pizza dough, and line a 12- to 14-inch pan. Brush all but the rim of the crust with 1 tablespoon of olive oil, and sprinkle on the Parmesan. Top with the sliced potatoes and sliced garlic. Season generously with salt and pepper, and sprinkle withthe rosemary or oregano. Drizzle on the remaining olive oil. Bake until the crust is browned and crisp, about 15 minutes. Serve hot or at room temperature.
