CREAMY MACARONI SALAD
This is my own macaroni salad. I did not get it from my mother or my grandmother and I did not get it out of a book or off the internet. It is not Amish, Cajun, Mexican or any other description of the various macaroni salads that are posted on the internet. It is my own made up salad. It is designed after my own recipe #20155 that I have posted on Recipezaar (with 121 high reviews, thank you very much to those that have tried it). The dressing is mostly the same, but there are a few other ingredients in this salad that is not in my potato salad. I hope some of you will enjoy it as much as you did the other.

Steps:
- Mix cooled macaroni, celery, onions, bell pepper and green olives together in a large bowl.
- In a separate bowl mix together the mayonnaise, mustard, vinegar, pickle relish, sugar, salt, pepper and celery seed, stirring well.
- Stir dressing into the macaroni mixture.
- Stir in the crumbled bacon.
- Serve chilled.
- For another variation, omit the green olives, add sliced black olives and a container of grape tomatoes.
- For a meal type salad, add diced cooked chicken or tuna fish.

COOL AND CREAMY MACARONI SALAD
Don't drain the macaroni too well before adding the other ingredients - a little extra moisture will keep the salad from drying out. If you've made the salad ahead of time simply stir in a little warm water to loosen the texture.

Steps:
- Bring 4 quarts of water to a boil in large pot. Add 1 tablespoons salt and macaroni and cook until nearly tender, about 5 minutes.
- Drain in colander and rinse with cold water until cool, then drain briefly so that the macaroni remains moist. Transfer to a large bowl.
- Stir in onion, celery, parsley, lemon juice, mustard, garlic powder, and cayenne and let sit until flavors are absorbed, about 2 minutes.
- Add mayonnaise and let sit until salad texture is no longer watery, 5-10 minutes.
- Season with salt and pepper to taste. Serve.
- (The salad can be covered and refrigerated for up to 2 days. Check consistency and seasonings before serving.).
CREAMY RANCH MACARONI SALAD
Steps:
- Cook pasta al dente according to directions on package. Drain water then rinse pasta shells in cold water to stop them from further cooking. Set aside.
- In a large bowl, combine diced onion, diced celery and parsley. Mix well.
- Add cooled pasta shells to the onion mixture and toss until well mixed.
- Add the sour cream and half the ranch dressing mix to pasta mixture. Toss until well mixed.
- Add the mayonnaise and the remaining ranch dressing mix. Toss again until well mixed. Add shredded cheddar cheese and toss well once again.
- Cover and refrigerate for a couple of hours before serving.

- Bring a large pot of lightly salted water to a boil. Cook elbow macaroni in the boiling water, stirring occasionally until cooked through but firm to the bite, 8 minutes. Drain and cool under running water until chilled. Transfer to a large salad bowl.
- Stack American cheese slices alternating with bologna slices and cut into 1/2-inch dice. (Stacking helps prevent cheese from sticking together.) Mix bologna and cheese into macaroni and stir in hard-cooked eggs, sweet pickles, celery, green bell pepper, and red onion. Mix thoroughly.
- Stir creamy salad dressing and mustard into the salad and season with black pepper. Cover salad and chill in refrigerator until serving time.

- 1. In large bowl, mix all sauce ingredients except milk, stirring well, set aside. Cook macaroni according to package directions. Drain, rinse with cold water to stop cooking and chill, drain again, and stir into sauce mixture. Chill in fridge for 30 minutes to one hour. Stir in 1 Tbl. milk to loosen and serve! Enjoy!
- 2. ***SECRET TIP! Forgot to put this in here! After you drain your macaroni, put it in a small shallow bowl and pour 1/3-1/2 cup of milk over it. Keep stirring now and then and let the macaroni absorb all or most of the milk. This will take about 20-30 minutes, but WORTH IT. The pasta won't be soggy or anything, but will help GREATLY with stopping the sauce from soaking in too much and be dry. Just drain any excess milk before stirring into the sauce. You will then only have to add a TAD of mayo or milk to refresh the salad instead of a gallon more of mayo!
PERFECT CREAMY MACARONI PASTA SALAD
The key to the best creamy pasta salad is to rinse the cooked pasta under cold water before tossing with the dressing. Skipping this step means the dressing will turn sticky. We also "de-flame" the onion, which tames raw onion flavor so that the onion does not take over the salad. A quick bath in cold water does the trick.

- Cook pasta according to the package directions. Drain and rinse well under cold water to remove starch from the outside of the pasta.
- Meanwhile, add the chopped onions to a small bowl and cover with cold water. Set aside for 5 minutes and then drain. This tones down the raw flavor of the onion so that it won't overpower the salad.
- In the bottom of a large salad bowl, make the dressing. Whisk the sour cream, mayonnaise, mustard, cider vinegar, salt, and pepper. For a sweeter macaroni salad, add honey to taste. I typically add half of a tablespoon but try one to two tablespoons if you enjoy sweeter macaroni salads.
- Add the rinsed macaroni, drained onions, bell pepper, celery, radish, and the pickle to the bowl with dressing. Mix well. Taste, then adjust with additional salt and pepper.

I have looked all over for a great macaroni salad; this one is it! It's easy and is a huge hit at every function I take it to. The sauce for this is a great creamy sauce. I like my salads to have a lot of creamy dressing, so I always make an extra half batch of the wet mix and add it as necessary to get the salad more wet because the pasta soaks up the sauce.
