2 plantain (green, unripe)
1½ teaspoons salt
4 tablespoons butter (or olive oil, whichever you prever)
2 tablespoon olive oil
2 red onion (large)
1 tablespoon fruit vinegar
salt

Steps:

  • Peel the plantains (see how-to) and cut lengthwise, then divide each half into two. You can remove the center where the seeds are located (optional, this is just my preference for a smoother mangú).
  • Boil the plantains in enough water to cover them plus an inch until they are very tender, having added the salt to the water before the water breaks the boil.
  • Remove the plantains from the water and mash them right away with a fork until they are very smooth and there are few to no lumps (be careful not to burn yourself). Mix in butter, and progressively add a cup of water at room temperature and keep mashing and mixing until it turns into a very smooth puree (see tips below).
  • Heat a tablespoon of olive oil in a skillet over low heat. Add onions and cook and stir until they become translucent. Pour in vinegar and season with salt to taste.
  • Garnish mangu with the onions and serve per suggestions above.

Creamy, rich and delicious, mangu is one of my favorite plantain recipes. Dominica mashed plantain is super simple to make, but is full of flavor. Serve as part of a breakfast, or as a side dish.

3 green plantains
¾ teaspoon salt
1/2 cup water, (at room temperature)
2 tablespoons butter, (unsalted)
½ cup red onions, (sliced)
1 tablespoon apple cider vinegar
pinch of salt

Steps:

  • Peel the plantains and cut lengthwise, then divide each half into two.
  • Add the plantains to a pot and boil in enough water to cover them until they are very tender. Add salt to the water before the water breaks the boil.
  • Remove the plantains from the water and mash them right away with a fork until they are very smooth and there are few to no lumps. Mix in butter, and water. Keep mashing and mixing until smooth.
  • In a small bowl combine onions, vinegar and salt. Let sit for about 5 minutes.
  • Heat a tablespoon of oil in a skillet over low heat. Add onions and cook while stirring until they become translucent, about 1-2 minutes.
  • Garnish mangu with the onions and serve with eggs, Dominican fried salami and fried cheese.

1 large red onion, cut in half, thinly sliced
2 tablespoons white vinegar
4 unripe plantains, peeled
6 tablespoons butter, softened
6 fried eggs

Steps:

  • In small bowl, mix onion and vinegar. Cover; refrigerate until ready to serve.
  • Cut plantains into 8 pieces. Place plantains in 2-quart saucepan; cover with water. Heat to boiling; reduce heat to medium. Cook 20 to 25 minutes or until plantains are tender.
  • Using slotted spoon, remove plantain pieces from water. Place in medium bowl with butter; mash plantains, adding water from cooking liquid, until mixture is mashed.
  • For each serving, top about 1 cup mashed plantains with sliced onion; serve with fried egg.

Steps:

  • Peel and quarter the plantains.
  • Boil until they break with the fork.
  • As the platains are cooking, In a small sauce pan start pickling the onions with the oil and vinegar.
  • Once they are transparent remove from flame.
  • Drain the plaintains leaving a tablespoon or 2 of water, mash, add butter.
  • Finally add onion mix into mashed plantains, folding them in.
  • Enjoy! If you did it correctly it should stay soft all day.

I was making Anniversary Chicken, and wondered what I could put on the plate with it... Pasta didn't work, so I re-created this sauce that a chef in a restaurant told me about once. Leave out the mango slices if they will clash with the type of chicken you are cooking.

1 (15.25 ounce) can mango slices, with juice
1 (1.5 fluid ounce) jigger brandy
2 tablespoons brown sugar

Steps:

  • In a medium saucepan over medium heat, blend heavy cream, mango juice, brandy, and brown sugar until thickened. Stir in mangoes, and bring to a boil over high heat. Continue to cook and stir about 1 minute. Serve warm.

  • Peel mangoes then cut around the pit. Reserve half of one mango for garnishing later. Chop the remaining mango and place in a food processor. Add one tablespoon of sugar and orange zest. Blend into a smooth paste.
  • Place cream in a bowl. Add the vanilla extract and sugar. Whip using a hand mixer until stiff peaks form. About 3 minutes.
  • Place the mango puree and the whipped cream in cups in layers. Dice the mango you reserved from step 1 and place on the cups. Garnish with mint leaves if desired. Serve immediately or chill for at least 30 minutes before serving. Best enjoyed chilled.
