Super easy red skin mashed potatoes! These mashed potatoes are creamy, buttery, and rich. They come together in 30 minutes and are freezer-friendly.

2 pounds red skin potatoes
4 tablespoons unsalted butter
½ cup half and half, plus more if desired
Salt and pepper to taste
Chopped chives for garnish

Steps:

  • Scrub the potatoes clean and cut them into 1.5 inch chunks. Don't peel the potatoes.
  • In a medium pot, heat enough water to cover the potatoes and boil potatoes until tender, about 20-25 minutes. Drain the water and return potatoes to the pot.
  • In a medium bowl, microwave the half-and-half with the butter together for a few seconds, until warmed up and melted.
  • Mash the potatoes with a potato masher, adding the warmed up half-and-half and butter at the same time. Season with salt and pepper to taste. Garnish with chopped chives. Enjoy!

6-8 medium Red Skin Potatoes, do not peel.
1/2 cup Buttermilk
1/4 cup Butter
1 heaping Tablespoon of Mayonnaise, or more if needed.
1/2 teaspoon Granulated Garlic Powder
Salt and Pepper to taste

Steps:

  • Wash the potatoes to remove any dirt and dust.
  • Place potatoes in a medium sized saucepot, cover with about 1 inch of water.
  • Place pot over medium heat and bring to a low boil.
  • Boil potatoes about 20-25 minutes, or until fork tender.
  • Remove potatoes from water, place in bowl and let cool a bit, do not discard potato water.
  • Using a potato masher, mash up the potatoes, skin and all, until creamy.
  • Add Buttermilk
  • Add Mayonnaise
  • Add Granulated Garlic Powder
  • Add Salt and Pepper to taste
  • Stir well, adding more liquid as needed to make creamy mashed potatoes.
  • Taste test and add more salt, pepper, potato water or mayo as needed.
  • Enjoy!

RED-SKINNED MASHED POTATOES

3 pounds (1360 grams) red potatoes
3/4 cup (175 ml) whole milk1
3/4 cup (175 ml) whipping cream
5 garlic cloves, crushed
2 teaspoons salt
3/4 cup (168 grams) unsalted butter
black pepper and chives (as garnish), optional

Steps:

  • Scrub the potatoes clean and cut the potatoes into 1" chunks (do not peel them). Put them in a colander and rinse under cold water.
  • Get out a steaming basket and a pot that's large enough for the steaming basket. Add an inch of water to the pot, and put in the steaming basket. Bring the water to a boil and add the potatoes to the steaming basket. Cover the pot with a lid.
  • Turn the heat down to medium and steam for about 20-30 minutes or until tender. They should be fully cooked.
  • Meanwhile, in a small saucepan over low heat, add the milk, cream, garlic, and salt (I recommend using 2 teaspoons and adding more later, if desired). Once it's all melted, turn the heat off (but keep the saucepan on the stove so it stays warm).
  • Once the potatoes are fully cooked, remove the steamer basket from the pot and drain the water from the pot. Put the potatoes back into the pot and put back on the burner (which is now off - if you have a gas or induction burner that's not still hot, then turn the heat to the lowest setting). Let any remaining moisture cook off for 1-3 minutes, shaking the pot occasionally.
  • With an electric hand mixer (turned off) or a potato masher, break up the large potato pieces first. Stir in the butter (with a large spoon or silicone spatula) so that it coats the potatoes. It doesn't have to be perfectly mixed in - it just has to be melted and coat the potatoes.
  • Add the milk mixture in 3 additions (using an electric hand mixer), starting off on low so that the liquid doesn't fly everywhere and then turning it up to high and beat until smooth and creamy. You need the full amount of liquid. Do not overmix! Taste and add more salt, if needed.
  • Garnish with chopped chives and fresh black pepper. Best if served immediately, as with all mashed potatoes.

1 tablespoon kosher salt, plus more to taste
½ cup unsalted butter, 1 stick, cubed
½ cup heavy cream
1 small clove garlic, minced
½ cup sour cream
freshly ground black pepper, to taste
1 tablespoon green onion, chopped, for garnish

Steps:

  • Add the potatoes to a large pot and cover with cold water. Add the salt. Bring to a boil over high heat and cook until the potatoes are fork-tender, about 20 minutes longer. Drain and return to the pot. Set aside.
  • In a small pot over medium heat, bring the butter, cream, and garlic to a simmer. Once simmering, remove from the heat.

3 pounds red skin potatoes, unpeeled and cut into 2" cubes
1/2 tablespoon + 1 teaspoon salt
2 garlic cloves, minced
6 tablespoons butter
1/2 cup milk ((whole or 2%))
1/2 cup heavy whipping cream
1/2 teaspoon black pepper
Optional garnish: fresh chopped chives

Steps:

  • Add the potatoes and 1/2 tablespoon of salt to a large pot and fill with enough water to cover the potatoes. Bring to a gentle boil and cook until the potatoes are fork tender, about 15-20 minutes.
  • When the potatoes are nearly done cooking, add the garlic, butter, milk and heavy whipping cream to a small saucepan. Bring to a gentle simmer over medium-low heat for about one minute (do not boil).
  • Drain the potatoes and return to the pot. Mash until mostly smooth. Pour in half of the garlic infused butter, milk and cream and mash until combined. Pour in the second half and sprinkle with 1 teaspoon of salt and 1/2 teaspoon black pepper; mash until desired consistency. Careful not to over mix the potatoes, or they can become sticky like glue.
  • Transfer to a serving bowl and garnish with more melted butter, flakey sea salt, black pepper and chives.
