Creamy Spinach and Bacon Pasta Salad is so simple to make; it takes about 20 minutes from start to finish to have you out of the kitchen in no time flat.

1-8.3 ounce Caesar Suddenly Salad
6 bacon (crisp)
½ cup mayonnaise
¼ cup whole milk
3 large hard-boiled eggs (sliced)
1 head artesian lettuce (chopped)
3 cups fresh spinach (chopped)
1 cup grape tomatoes (halved)
¼ cup red salad onions (chopped )

Steps:

  • Using the directions on the back of your box of Caesar Suddenly Salad box prepare the pasta, drain and rinse the noodles if desired in cold water. Let the noodles cool.
  • Meanwhile, cook 6 slices of hickory smoked bacon till crisp and boil 3 eggs till the eggs are hard-boiled.
  • Combine 1 packet of Caesar Suddenly Salad dressing mix with ½ of a cup of mayonnaise, and ¼of a cup of milk. Note you may use Miracle Whip if desired.
  • In a large glass bowl combine the noodles and caesar dressing whisking until smooth.
  • Combine the coated pasta, fresh spinach, artesian lettuce, crisp hickory smoked bacon, grape tomatoes, hard-boiled eggs, and red salad onions by gently tossing.
  • Refrigerate until ready to serve.

1 (12 ounce) package penne pasta
2 tablespoons olive oil, divided
6 slices bacon, chopped
2 tablespoons minced garlic
1 (14.5 ounce) can diced tomatoes
1 bunch fresh spinach, rinsed and torn into bite-size pieces

Steps:

  • Bring a large pot of lightly salted water to a boil. Add the penne pasta, and cook until tender, 8 to 10 minutes.
  • Meanwhile, heat 1 tablespoon of olive oil in a skillet over medium heat. Place bacon in the skillet, and cook until browned and crisp. Add garlic, and cook for about 1 minute. Stir in the tomatoes, and cook until heated through.
  • Place the spinach into a colander, and drain the hot pasta over it so it is wilted. Transfer to a large serving bowl, and toss with the remaining olive oil, and the bacon and tomato mixture.

125 g reduced-fat bacon, diced
1 teaspoon minced garlic
6 shallots, chopped
300 g penne pasta, cooked
150 g baby spinach leaves
90 g low fat tasty cheese, grated
1/2 cup ww caesar salad dressing
2 lemons, cut into wedges (optional)

Steps:

  • Coat a large fry pan with cooking spray.
  • Heat and add the bacon, garlic and shallots.
  • Cook, stirring for 2-3 minutes.
  • To the pan, add the pasta spinach and cook until the spinach is just wilted.
  • Remove from the heat.
  • Stir in the cheese and dressing.
  • Serve garnished with the lemon wedges if desired.
  • This is good for lunch cold as well if you have leftovers.

300g penne or farfalle (use wholemeal, if you like)
200g natural yogurt
2 tsp Dijon mustard
1 tsp honey
1 garlic clove , crushed
1 lemon , zested
2 tbsp extra virgin olive oil
4 large tomatoes , roughly chopped
large handful of baby leaf spinach , roughly chopped
small bunch of basil , leaves chopped
6 cooked smoked bacon rashers

Steps:

  • Cook the pasta in a large pan of boiling water following pack instructions. Drain and run under cold water until completely cool.
  • Meanwhile, mix the yogurt, mustard, honey, garlic, lemon zest, olive oil and some seasoning together in a large bowl. Toss the cooked pasta with the dressing, tomatoes, spinach and basil. Keep chilled until ready to serve, then crumble over the bacon.

10 slices bacon
1 cup mayonnaise
3 tablespoons dry ranch salad dressing mix
¼ teaspoon garlic powder
½ teaspoon garlic pepper

1 large tomato, chopped
1 (4.25 ounce) can sliced black olives
1 cup shredded sharp Cheddar cheese

Steps:

  • Bring a large pot of lightly salted water to a boil; cook rotini at a boil until tender yet firm to the bite, about 8 minutes; drain.
  • Place bacon in a skillet over medium-high heat and cook until evenly brown. Drain and chop.

olive oil flavored cooking spray or 1 tablespoon olive oil
1 teaspoon minced garlic
1 onion, finely chopped
1/2 red capsicum, finely chopped
3 slices bacon, chopped (WW brand if possible)
7 mushrooms, sliced
185 ml evaporated low-fat milk
1 tablespoon Dijon mustard
100 g baby spinach leaves
200 g pasta (any type - I use penne or fettucine)
chili flakes (optional)
black pepper, to taste

Steps:

  • Bring a large pot of salted water to the boil.
  • Spray a pan with olive oil spray and sauté finely chopped onion, capsicum, bacon and garlic.
  • When soft add mushrooms and as much or as little chilli as you like.
  • Cook until soft.
  • Put pasta into boiling water and bring back to the boil.
  • Cook to your liking.
  • Add dijon mustard and evaporated milk to the onion mix.
  • Stir to combine and heat very gently until pasta is ready.
  • If you like a'wetter' sauce add a small amount of the pasta cooking water to the onion/milk mixture.
  • Place washed spinach leaves into a colander.
  • When ready drain the pasta over the spinach.
  • This will wilt the spinach- the only'cooking' it needs.
  • Add the pasta/spinach mix to the sauce.
  • Stir to combine.
  • Serve topped with freshly ground black pepper and parmesan cheese if desired.
  • **Note: In Australia, on the Weight Watchers points plan, WW bacon is 1/2 a point for 3 slices and the small tin (185ml) of carnation brand light and creamy evaporated milk is 3 points.
