- Preheat oven to 400°.
- In a bowl, mix the cream cheese, crab, onions, and tarragon; blend well.
- Season to taste with salt and pepper.
- Place pastry sheets on a lightly floured cutting board; roll out to a 14x10 inch rectangle.
- Cut out 22 circles from each pastry sheet, using a 2-inch cutter.
- In a small cup, beat egg and milk with a fork until blended.
- Spoon 1 teaspoon crab mixture onto center of each pastry circle.
- Brush edge of pastry with egg mixture.
- Fold pastry in half to completely enclose filling; press edges together to seal.
- Place on baking sheet; brush tops with remaining egg mixture.
- Bake 12-15 minutes or until golden brown.
- Serve immediately.

Steps:
- Preheat oven to 400°F. Mix cream cheese, turkey, onions and parsley until well blended. Season with salt and pepper to taste.
- Place pastry sheets on cutting board. Cut out 22 circles from each pastry sheet, using a 2-inch round cutter. Beat egg and milk with wire whisk until well blended.
- Spoon 1 tsp. of the turkey mixture onto center of each pastry circle. Brush edge of pastry with egg mixture. Fold pastry in half to completely enclose filling; press edges together to seal. Place on baking sheet; brush tops with remaining egg mixture.
- Bake 12 to 15 minutes or until golden brown. Serve immediately.

SPINACH AND FETA PUFF PASTRY BITES

- Preheat the oven to 375 degrees F.
- Thaw frozen spinach in microwave according to package directions or by running under warm water. Drain spinach, squeezing the excess liquid from it. In a bowl, mix the spinach, feta, garlic, pepper, and nutmeg together.
- Flour a clean, dry countertop or other flat working surface. Lay out the puff pasty on the floured surface. Flour the top of the dough. Roll out the puff pastry until it is half as thick (about 1/8-inch) and about 24 by 12 inches. Trim edges to size if necessary. Cut into 3-inch strips crosswise and lengthwise, making 32 (3-inch) squares. Make sure the squares are well floured then stack them in a little pile.
- Fill a little dish with some room temperature water. Imagine each square you work with is separated in half by a diagonal. Place a couple teaspoons of filling in the top half. Dip a finger into the water and moisten the edges of the top half with water. Fold the bottom half to meet the edges of the top half. Use a fork to seal the edges.
- Place finished pockets on a nonstick baking sheet and bake about 15 minutes until golden brown and puffy. Serve warm.
FIG AND BRIE BITES RECIPE BY TASTY

- Preheat the oven to 400°F (200°C). Grease a mini muffin tin with nonstick spray.
- On a lightly floured surface, roll out the sheets of puff pastry and cut into 24 2-inch squares. Place each pastry square in a muffin cup, pressing down so the pastry is flush with the bottom.
- Fill each pastry cup with ½ teaspoon fig jam, 1 square of Brie, and ½ teaspoon bacon.
- Brush the edges of the pastry cups with the egg wash.
- Bake the pastry cups until golden brown and cheese is melted, 10-12 minutes.
- Garnish the bites with thyme, then let cool slightly before serving.

- Preheat oven to 400°. For filling, in a large skillet, heat butter over medium heat. Add mushrooms and onion; cook and stir until tender, 3-5 minutes. Add garlic and pepper; cook 1 minute longer. Stir in cream cheese until melted; remove from heat., Unfold one pastry sheet; cut into 9 squares. Cut each square diagonally in half. Place a scant teaspoon of filling on one half of each triangle. Brush edges of pastry with water; fold over to form a triangle. Seal edges with a fork; place 1 in. apart on parchment-lined baking sheets. Repeat with second pastry sheet and remaining filling., Bake until golden brown, 12-15 minutes. Remove from pans to wire racks. Serve warm. Freeze option: Cover and freeze unbaked triangles on parchment-lined baking sheets until firm. Transfer to a freezer conatiner; return to freezer. To use, bake as directed.

SAUSAGE AND SPINACH PASTRY PUFFS
This dish has always been my favorite. It is so easy to make and tastes so good. I've always used chicken apple sausages with Chardonnay which I bought from Trader Joes.

Steps:
- Preheat oven to 400F.
- Heat oil in a skillet.
- Brown sausages, about 3 minuted under medium heat.
- Discard excess fat from the sausages from the pan.
- Add onion to the pan, cook about 3 minutes.
- Add salt and pepper to taste.
- Let it cool for at least 10 minutes.
- Squeeze out excess liquid from the chopped spinach by using a kitchen/paper towel.
- Place spinach, lemon zest and grated Parmiagiano Reggiano in a bowl.
- Add cooled sausage mixture into the spinach mixture, incorporate well. Filling is now ready.
- Cut each puff pastry sheets into 2 rectangles.
- Brush the top layer with mustard.
- Fill pastry sheets with filling.
- Crimp the edges using a fork.
- Cut 2 slits on top of each pastry.
- Bake for 15-25 minutes until golden brown.

- Preheat oven to 400°. In a large saucepan, bring the water, butter and salt to a boil. Add flour all at once and stir until a smooth ball forms. Remove from heat; let stand 5 minutes. Add 1 egg at a time, beating well after each addition. Continue beating until mixture is smooth and shiny. , Drop by teaspoonfuls 2 in. apart onto greased baking sheets. Bake 18-22 minutes or until golden brown. Remove to a wire rack. Immediately split puffs open; remove tops and set aside. Discard soft dough from inside. Cool puffs. , In a large bowl, combine filling ingredients. Just before serving, spoon 1 teaspoonful filling into each puff; sprinkle with parsley if desired. Replace tops.
