Foolproof Creme Anglaise (Classic Vanilla Custard Sauce) Recipe image

My Foolproof Creme Anglaise is a sweet custard-like sauce, the name of which is French for "English cream," and my method truly is foolproof.

1 cup (8floz/225ml) cream ((any type of fresh cream will do))
1 1/2 cups (12floz/340ml) whole milk
1/2 cup (4oz/115g) sugar, (divided )
1 vanilla bean, (split lengthwise and scraped )
6 egg yolks

Steps:

  • In a medium heavy bottomed saucepan add the cream, milk, 1/4 cup sugar, vanilla pod and beans.
  • Simmer over medium heat until the mixture starts to bubble around the edge of the pan, for about 2 minutes, do not let it boil. Remove from the heat and let stand for 20 minutes.
  • While the cream mixture is infusing, whisk the egg yolks with remaining 1/4 cup of sugar in a medium bowl.
  • Ladle some of the hot cream mixture into the egg yolk mixture, then swiftly whisk to combine. Add another ladle of the infused milk to the eggs until the egg mixture is warm to the touch. This method is called tempering and it prevents the eggs from curdling.
  • Pour the tempered cream and egg mixture into the remaining cream in the saucepan, then return the pan to the heat.
  • Continue to cook over medium heat while constantly stirring until the custard coats the back of a spoon, this will take about 5 to 7 minutes.
  • Once the custard has thickened, remove from the heat and strain through a sieve into a medium bowl to remove any lumps and the vanilla pod.
  • Place the custard in an ice bath to cool it down quickly and prevent overcooking.
  • Once cooled, cover and store in the fridge in an airtight container for up 4 days. Serve with pies, crisps and cobblers.

Gradually add egg yolk mixture back to remaining milk mixture, whisking constantly. Continue to cook, stirring constantly, until the mixture coats the back of a spoon.

1/2 cup whole milk
1/2 cup whipping cream
1 2-inch piece vanilla bean, split
3 large egg yolks
3 tablespoons sugar

Steps:

  • Combine milk and cream in heavy medium saucepan. Scrape in seeds from vanilla bean; add bean. Bring milk mixture to simmer. Remove from heat.
  • Whisk egg yolks and sugar in medium bowl to blend. Gradually whisk hot milk mixture into yolk mixture. Return custard to saucepan. Stir over low heat until custard thickens and leaves path on back of spoon when finger is drawn across, about 5 minutes (do not boil). Strain sauce into bowl. Cover and chill. (Can be made 1 day ahead.)

James Martin is a master at dessert & here is another one of his creations - can you see why he's one of my favourite chefs? This recipe is for one individual cheesecake but can easily multiply the ingredients.

butter, for greasing
140 g cream cheese
3 tablespoons icing sugar
1 tablespoon cocoa powder
50 ml double cream, whipped until soft peaks are formed when the whisk is removed
3 digestive biscuits, crushed
55 g dark chocolate, grated
1 orange, peeled, segmented
1 sprig of fresh mint
200 ml milk
150 ml double cream
3 free-range egg yolks
85 g caster sugar
3 cardamom pods, lightly crushed
1 vanilla pod, split, seeds scraped out
30 g caster sugar

Steps:

  • Grease a 10cm/4in chefs' ring with butter and place onto a plate.
  • Place the cream cheese, icing sugar, cocoa powder and cream into a bowl and whisk together.
  • Press the biscuit crumbs into the bottom of the ring mould, then add the cream cheese mixture to fill the ring.
  • Smooth over the top and sprinkle the chocolate over.
  • Carefully remove the ring and top with the orange segments and mint.
  • For the crème anglaise, heat the milk and cream in a saucepan over a medium heat, until nearly boiling, then remove from the heat.
  • In a bowl, beat together the egg yolks and sugar, then gradually add the warmed cream mixture, stirring constantly.
  • Return the mixture to the saucepan. Add the cardamom and vanilla seeds and stir over a low heat, until thickened enough to coat the back of a spoon.
  • Strain the mixture through a sieve into a bowl and allow to cool.
  • For the spun sugar, melt the sugar in a small frying pan until golden, then remove from the heat. Using a fork, flick strands of the caramel over an upside-down bowl.
  • Allow to set, then remove and serve over the cheesecake with the crème anglaise poured around.

Crème Légère (light cream) is a mix of Crème patissier (cream pastry) and freshly whipped cream. It's the perfect luxurious filling for any cake or dessert.

60 grams Caster Sugar
2 Large Whole Eggs
30 grams Plain Flour or Corn Flour
300 ml Double Cream
1 Vanilla Pod Seeded
60 grams Unsalted Butter

Steps:

  • In a heat proof bowl, beat together the Sugar, Eggs and Flour until well combined.
  • Heat 200ml of the cream with the Vanilla Pod and Seeds until bubbles form, sieve then add to the Egg mixture. Mix until well combined.
  • Return the mixture to a clean pan and gently heat the Crème mixture beating all the time as it thickens to avoid lumps forming.
  • As soon as the mixture thickens take off the heat and add the butter, beating until all the butter has melted and incorporated in the creme mixture.
  • Place the Crème Pâtissière into a separate bowl and cover the top of the creme with cling film to prevent a skin forming. Leave to cool completely, in the fridge if needed.
  • When completely cooled soften the Crème Pâtissière a little by giving it a quick whisk.
  • In a separate bowl whip the remaining (100g) cream until ribbons are formed then add to the smooth Crème Pâtissière, mix until well combined.
  • Leave in the fridge until required. Crème Pâtissière now becomes Crème Légère ~ Light Creme

Steps:

  • Whisk the sugar, egg yolks and cornflour together in a bowl until smoothly combined and set aside.
  • Pour the milk into a large heavy based pan. Split the vanilla pods open (If using vanilla pods) and scrape out the seeds with the tip of a knife and add these to the milk in the pan. (Alternatively add the vanilla extract to the milk) Bring to the boil, then remove from the heat.
  • Pour about a quarter of the hot milk onto the egg mixture and whisk together. Then return this mixture to the rest of the milk in the pan. Put back over a gentle heat and cook, stirring continuously, until the mixture becomes thick. Remove from the heat immediately.
  • Pass the mixture through a sieve into a bowl. Add the butter and stir in to melt. Place a disc of baking parchment or silicone paper directly on the surface of the creme patissiere to stop a skin forming. Leave to cool and then chill before using.
