CREOLE MEAT LOAF
This meat loaf is not spicy, despite the name. It is a mix of ground beef and pork, with a nice creole sauce on top. It originally came from an old Southern Living cookbook, but the recipe has been changed significantly since its publication. If you would like, put the cheese of your choice on the meatloaf before adding the creole sauce. Also, feel free to substitute creole seasoning for the salt and pepper!

Steps:
- For the meat loaf, mix the first 10 ingredients thoroughly in the order given and shape into a loaf. Pack into a greased 9 x 5 x 4 inch loafpan. Cover with creole sauce and bake at 350 degrees for 1 hour.
- For the creole sauce, melt the shortening; add flour, and cook over medium heat until a rich brown, stirring constantly.
- Add chopped pepper, onion, and garlic. Let simmer until wilted. Add milk.
- Add tomotoes, salt and pepper (or creole seasoning), and worcestershire sauce. Let come to a boil and cook for 4 to 5 minutes.

- In a large bowl, combine the milk, egg, green pepper and onion. Stir in the crackers, salt, mustard and pepper. Crumble beef over mixture and mix well. Pat into an ungreased 8x4-in. loaf pan. , Bake, uncovered, at 350° for 1-1/4 hours or until no pink remains and a thermometer reads 160°. Drain. , Let loaf stand in pan for 10 minutes. Meanwhile, in a small saucepan, combine the sauce ingredients. Cook until heated through. Turn loaf out onto a serving platter. Spoon 1/2 cup hot sauce over loaf; serve remaining sauce with meat loaf.

CREOLE MEATLOAF
I don't care for Weetabix cereal as a cereal itself, but the recipe on the box I saw years ago for using the cereal in meat loaf is insanely yummy! I figured, people put corn flakes in meat loaf, so why not try this. I add green bell peppers as well as the red called for.

Steps:
- Combine the ground beef, egg, crushed Weetabix, 1/2 cup of the chili sauce, 1/4 cup each of the peppers, and 1/2 of the chopped onion in a bowl. Mix well but don't over handle.
- Place in a large loaf pan, pat firmly.
- Bake at 375°F, for 35 minutes.
- Meanwhile, fry the remaining peppers, onion, and the garlic in the oil until tender. Stir in the remaining 1/2 cup chili sauce, and simmer about 5 minutes.
- Drain excess fat from the meat loaf. Top with the sauce and bake a further 10 minutes.
- ENJOY.

MEXICAN MEATLOAF
This jelly-roll approach to making meatloaf is really easy and tasty, especially when filled with your favorite cheese and sauces. This Mexican variety includes refried beans and tortillas to make it somewhat of a meatloaf burrito!

- Preheat oven to 350 degrees F (175 degrees C).
- In a medium bowl, mix thoroughly the ground beef and taco seasoning; set aside. In a medium saucepan, heat the refried beans over medium low heat until they are completely heated through.
- Place the ground beef mixture on a large piece of foil. Press the mixture into an approximately 1 inch thick square shape. Spread the refried beans evenly over the top of the flattened beef. Layer the flour tortillas on top of the refried beans, trimming the edges to fit the square. Layer tortillas with salsa and Cheddar cheese, staying 1/2 to 1 inch away from edges of the square.
- Gently roll the layered beef into a Swiss roll shape, pressing and compacting the loaf as you go. Pinch and seal the edges. Wrap in the foil and seal.
- Bake in preheated oven 40 to 45 minutes, or until no longer pink in the center. Cut loaf in half to test for doneness, if necessary.

- Preheat oven to 375. In a medium bowl, combine breadcrumbs, milk, ketchup, cheese, scallion, carrot, 1/2 teaspoon salt, and teaspoon pepper. Add beef and gently combine. Transfer mixture to a rimmed baking sheet and form into a 2 1/2-by-4-inch loaf. Bake until cooked through, about 30 minutes.
- Meanwhile, in a small skillet, heat oil over medium. Add green beans and 1 tablespoon water. Season with salt and pepper. Cover and cook until water is absorbed, about 3 minutes. Uncover and cook, stirring occasionally, until beans are crisp-tender, about 3 minutes. Serve alongside meatloaf.

BLACK BEAN VEGETARIAN MEAT LOAF
This was a creation based on trying my first black bean vegetarian burger and deciding I had to learn how to make one, then I decided to go for a vegetarian meatloaf instead! Based on a 4 ounce serving, this recipe could be used to make twelve 4 ounce burgers instead of a meatloaf.

- Preheat oven to 350 degrees F (175 degrees C). Generously coat the inside of an 8x13-inch baking dish with cooking spray.
- Mash black beans in a large bowl. Mix crackers, Cheddar cheese, bell peppers, corn, onion, jalapeno pepper, egg white, taco seasoning, and Ranch seasoning into black beans until evenly mixed. Spoon mixture into the prepared baking dish; form into a loaf.
