Similar to lobster Newburg, but with a twist! A tarragon-wine sauce with subtle hints of lemon coats chicken and avocado. Serve over rice, egg noodles, or puff pastry shells.

1 onion, chopped
3 tablespoons vegetable oil
1 teaspoon salt
1 pinch ground black pepper
1/4 teaspoon dried tarragon
1 cup chicken broth
3 tablespoons all-purpose flour
1/2 cup milk
1 lb chicken breast, cooked and diced
1 egg yolk, beaten
1 tablespoon lemon juice
1/4 cup sherry wine
1 red bell pepper, chopped
1 avocado, peeled, pitted and diced

Steps:

  • Saute onion in oil for about 3 minutes. Stir in the flour, salt, ground pepper, tarragon, chicken broth and milk and cook until the mixture thickens, stirring constantly.
  • Blend in the egg yolk, then the lemon juice, sherry and bell pepper. Add the chicken pieces to the mixture. Cook until chicken is heated through, about 5 minutes. Stir in the avocado.
  • Serve over rice, egg noodles, or my favorite, puff pastry shells.

2 tablespoons butter or margarine
6 boneless skinless chicken breast halves, cut into 1/2-inch pieces
1/4 cup all-purpose flour
1/4 to 1/2 teaspoon salt
1/4 teaspoon white pepper
1 1/2 cups half-and-half
3 tablespoons dry sherry
1 (16-oz.) pkg. frozen broccoli, carrots and water chestnuts, cooked, drained
3 tablespoons grated Parmesan cheese
1 (8-oz.) can refrigerated crescent dinner rolls
1 tablespoon butter or margarine, melted
1/4 teaspoon paprika

Steps:

  • Heat oven to 350°F. Melt 2 tablespoons butter in large skillet over medium-high heat. Add chicken; cook and stir until browned and no longer pink in center. Reduce heat to medium; stir in flour, salt, pepper, half-and-half and sherry. Cook until mixture boils and thickens, stirring constantly.
  • Stir in cooked vegetables and 2 tablespoons of the Parmesan cheese. Cook an additional 4 to 6 minutes or until thoroughly heated, stirring frequently. Spoon into ungreased 12x8-inch (2-quart) glass baking dish.
  • Remove dough from can in rolled section; do not unroll. Cut roll into 12 slices; cut each slice in half crosswise. Arrange slice halves, curved side up, around outside of chicken mixture. Brush with 1 tablespoon melted butter. Sprinkle with remaining tablespoon Parmesan cheese. Sprinkle entire casserole with paprika.
  • Bake at 350°F. for 23 to 27 minutes or until rolls are deep golden brown.

3 ounces cream cheese, softened
3 tablespoons butter, melted, divided
1/4 teaspoon salt
1/8 teaspoon pepper
2 cups cubed cooked chicken
2 tablespoons milk
1 tablespoon chopped onion
1 tablespoon diced pimientos
1 tube (8 ounces) refrigerated crescent rolls
1/4 cup seasoned bread crumbs

Steps:

  • In a bowl, beat cream cheese, 2 tablespoons butter, salt and pepper until smooth. Stir in chicken, milk, onion and pimientos. Unroll crescent roll dough and separate into four rectangles; place on an ungreased baking sheet an press perforations together. , Spoon 1/2 cup chicken mixture into the center of each rectangle. Bring edges up to the center and pinch to seal. Brush with remaining butter; sprinkle with crumbs. , Bake at 350° for 20-25 minutes or until golden.

2 tubes (8 ounces each) refrigerated crescent rolls
1 cup shredded Colby-Monterey Jack cheese
2/3 cup condensed cream of chicken soup, undiluted
1/2 cup chopped fresh broccoli
1/2 cup chopped sweet red pepper
1/4 cup chopped water chestnuts
1 can (5 ounces) white chicken, drained, or 3/4 cup cubed cooked chicken
2 tablespoons chopped onion

Steps:

  • Arrange crescent rolls on a 12-in. pizza pan, forming a ring with pointed ends facing the outer edge of pan and wide ends overlapping., Combine the remaining ingredients; spoon over wide ends of rolls. Fold points over filling and tuck under wide ends (filling will be visible). , Bake at 375° for 20-25 minutes or until golden brown. Freeze option: Securely wrap cooled wreath in plastic and foil before freezing. To use, remove from freezer 30 minutes before reheating. Remove wreath from foil and plastic; reheat on a greased baking sheet in a preheated 325° oven until heated through.

This recipe is a lot like Lobster Newburg, except it's with chicken.

1 onion, chopped
3 Tbsp olive oil
1 tsp salt
1 pinch ground black pepper
1/4 tsp dried tarragon
1 c chicken broth
3 Tbsp all-purpose flour
1/2 c milk
2 c diced cooked chicken meat
1 egg yolk, beaten
1 Tbsp lemon juice
1/4 c sherry
1 red bell pepper, chopped
1 avocado - peeled, pitted and diced
6 slice bread, toasted

Steps:

  • 1. Sauté onion in oil for about 3 minutes. Stir in the flour, salt, ground pepper, tarragon, chicken broth and milk and cook until the mixture thickens, stirring constantly.
  • 2. Add the chicken pieces to the mixture. Blend in the egg yolk, then lemon juice, sherry and bell pepper. Cook until chicken is heated through, about five minutes. Stir in the avocado and serve on toast.

4 tablespoons butter, melted, divided
2 tablespoons minced chives
2 tablespoon whole milk

2 tubes (8 ounces each) refrigerated crescent rolls
1 cup crushed seasoned stuffing

Steps:

  • Preheat oven to 350°. Beat cream cheese, 2 tablespoons butter, chives, milk, salt and pepper until blended. Stir in chicken., Unroll crescent roll dough and separate into eight rectangles; press perforations together. Spoon about 1/2 cup chicken mixture in the center of each rectangle. Bring edges up to the center and pinch to seal. Brush with remaining butter. Sprinkle with crushed stuffing, lightly pressing down., Transfer to ungreased baking sheets. Bake until golden brown, 20-25 minutes. Freeze option: Freeze unbaked bundles on baking sheets until firm; transfer to a freezer container. May be frozen up to 2 months. To use, thaw in refrigerator. Bake as directed, increasing time as necessary to heat through.
