FRIED CORNBREAD (SOUTHERN STYLE)
A SOUTHERN bread for sure! Goes well with any boiled leafy greens, cabbage, lima beans, black-eyed peas, fried fish or pork chops. Just can't beat it!!! Just like Grandma use to make!

Steps:
- Mix first two ingredients to make a batter --- add more or less water depending on how thick or thin you want your cornbread patties. The best way would be to mix in small amounts of water at a time to get the consistency you want.
- In a skillet or frying pan bring oil up to medium heat and test 1/2 teaspoon drop of batter, You do not want it to fry too fast. I normally cook mine on #6 and then furn down to #5 on my stove. Drop by tablespoons full and pat out with back of spoon to make a pattie. Turn over when bottom is light brown.

- in 9" pie pan stir together all ingredients except cornmeal, fish and oil.
- on waxed paper place cornmeal, dip fish into batter, then coat both sides of fish with cornmeal.
- in 10" skittle heat oil until hot.
- place 3 or 4 fish fillets in hot oil.
- cook over med heat until golden brown.
- turn and continue cooking until golden brown and fish flakes with a fork.
- repeat with remaining fish, place fried fish on paper towel to drain any excess oil.
- Serve with potatoes or rice.

- Place 2 tablespoons oil in a 10-in. cast-iron skillet; place in oven. Preheat oven to 450°. Whisk together cornmeal, sugar, baking powder, baking soda and salt. In another bowl, whisk together eggs, buttermilk and remaining oil. Add to cornmeal mixture; stir just until moistened., Carefully remove hot skillet from oven. Add batter; bake until golden brown and a toothpick inserted in center comes out clean, 15-20 minutes. Cut into wedges; serve warm.

- Combine flour, salt, and baking powder. Stir in 1 1/2 cups lukewarm water. Knead until soft but not sticky. Shape dough into balls about 3 inches in diameter. Flatten into patties 1/2 inch thick, and make a small hole in the center of each patty.
- Fry one at a time in 1 inch of hot shortening, turning to brown on both sides. Drain on paper towels.

- Preheat oven to 350°. Stir together apples and 1/4 cup brown sugar. In another bowl, combine cornbread mix, oats, cinnamon and remaining brown sugar. Steps:
- In a medium bowl, combine milk and lemon juice. Add cod fillets, and marinate 5 minutes. Heat oil in large heavy skillet over medium heat.
- In a shallow bowl, mix together cornmeal and flour. Season with paprika, black pepper, salt, garlic powder, thyme and cayenne pepper. Dredge fish in cornmeal mixture.
- Fry cod fillets in hot oil until golden brown.

THIN AND CRISPY CORNBREAD
The thick, golden wedges of cornbread served directly from a skillet that you see in glossy food magazines look nothing like the thin and crispy cornbread April McGreger's Mississippi grandmother used to make. The ratio of crunch to tender middle here errs on the side of crunch, which makes it perfect for soaking up the delicious broth called potlikker, which comes from simmering smoked meat and greens, sometimes cooked with Southern field peas. This cornbread bakes up best in a well-seasoned 12-inch cast-iron skillet, though you can divide the batter between two smaller skillets or even cake pans. A scattering of dry coarse cornmeal in the hot skillet before you pour in the batter makes the cornbread extra crunchy. Flipping it onto a plate or rack also helps the crust stay crisp. Or you could make it thicker and cook it ahead of time, then split the slices and toast them before serving.

- Heat the oven to 500 degrees. Add bacon drippings to a 12-inch skillet and place in the oven to warm.
- In a medium mixing bowl, use a whisk or fork to combine the cornmeal, salt and baking soda. Add the egg, buttermilk and water and stir well to combine. When the skillet is very hot and the bacon grease is sizzling, carefully remove from the oven and pour half the hot fat into the cornbread batter. Whisk well to combine.
- Working quickly, sprinkle the hot skillet with the remaining coarse cornmeal. It should smell like popcorn. Pour the batter into the hot pan and return to the oven. Check after 20 minutes, baking until the cornbread is deep golden brown.
- Remove the hot pan from the oven and immediately flip out onto a plate. Cut into wedges.

FRY BREAD WITH CORNMEAL AND COCONUT OIL
Ingenuity is behind Indigenous fry bread. When the United States government forcibly relocated Navajos (Diné) from ancestral lands in the 19th century, Native American women invented fry bread from government-issued commodities: flour, salt, yeast and water. Today, Native Americans have reclaimed this survival food as a tasty symbol of resilience. Cooks improvise on the basic formula using ingredients based on preference and geography: Styles, sizes and shapes differ by region, tribe and family. Fry bread is comfort food, and variations are shaped by memory and connection, leading to playful jests about the "right" kind. This particular recipe has Afro-Indigenous origins with its use of sugar and cornmeal, which add sweetness and density. But raw sugar replaces white sugar, and coconut oil steps in for lard. When used for frying, the oil's aroma announces the arrival of something special.

- In a large pot, bring 2 cups water to a boil over medium-high. While whisking, add cornmeal to boiling water. Continue whisking slowly until smooth. Reduce heat to medium, add 1 1/2 cups cold water and cook, stirring continuously to prevent lumps, until thick, about 6 minutes. It should be the consistency of oatmeal. Remove from heat and let cool in pot.
- Add yeast, sugar and salt to the cooled cornmeal, along with 1 to 2 tablespoons of water to moisten the mixture. Gradually add flour, stirring with a metal whisk or potato masher to get rid of as many lumps as you can. Sprinkle with water as needed to keep dough moist but thick. Cover with a damp cloth and let rise for 3 hours.
- Once dough has risen, it should be springy and sticky. Heat 1 inch of coconut oil in a cast-iron skillet to about 350 degrees. Test the heat by dropping a small portion of dough into the oil. It should gently sizzle but not splatter. Use two large, oiled spoons to make golf-ball-size portions: Scoop the dough with one spoon and push the dough off into the hot oil with the other. Re-oil the spoons using the oil in the skillet as needed to make new balls of dough. Work in batches, leaving room in the skillet, as the balls will expand in the hot oil.
- Fry until bottoms are cooked to your desired color (light gold, golden or dark brown), about 3 minutes for golden. Using tongs, flip balls over to cook the other side to the same color, 1 to 3 minutes. Gently lift out of the oil, shaking off excess oil, and transfer to paper towel-lined plates to drain. Eat while hot.
CRISP CORNMEAL FRY BREAD

- In a large bowl, combine 2 cups of the flour, cornmeal, water, sugar, baking powder, oil and salt stir until well blended. Let stand at room temperature for 30 minutes add remaining flour to make a firm dough. On a lightly floured surface, knead until smooth and elastic cover and let rest for 15 minutes. Place on a lightly floured surface roll to 1/4 -inch thickness. Cut into 4-inch rounds roll each round into a 7 1/2 -inch circle. Make a 1-inch slit in the center of each circle.Into a Dutch oven or a deep skillet, pour oil to a depth of 1 inch. Heat oil over medium heat to 375°. Place one round at a time in the hot oil and cook, turning once, for 1 minute or until puffed and golden brown. Drain on several layers of paper towels.Serve warm with honey or cinnamon and sugar.
